Eggless Apple Banana Choco Muffins

Eggless Apple Banana Choco Chips Muffins -Uff!!! that's a Longgggg Name! Chuck the name, the taste of these muffins, were great. This is a Adaptation of Priya's Eggless Banana Choco Bread, I have just tweaked it a bit. I think i made some justice to the Original Recipe.

Ingredients
1/2 cup All Purpose Flour
1/2 cup Wheat Flour
1/4 cup Thick yoghurt
1 Ripe Banana, mashed
1 Small Apple, finely shredded
1/4 cup Oil
1 tbsp Flaxseed meal
3 tbsp Hot water
1/2 tsp Baking powder
2 fisful of Choco Chips

Method
Preheat the oven @ 350F/180C for 10 minutes. Grease the muffin tin. Sieve AP flour, Wheat flour and baking powder together in a bowl. Take yoghurt,sugar and oil in a large bowl and whisk until soft.  Mix flaxseed meal in hot water into a thick paste. Mix mashed bananas and Flaxseed paste to the yoghurt mixture and beat well for few minutes. Now add the flour mixture to the yoghurt mixture slowly, add thegrated apple and  choco chips ,mix well. 

Spoon this mixture to the muffin cans and bake for 25-30 minutes. Enjoy with your Evening tea or Great for Morning Breakfast too.

Karuvepilai Saadam/Curry-Leaves Rice

Curry leaves, a common ingredient found in every south-indian kitchen. Even before science, our ancestors have been using curry leaves and turmeric in their regular cooking. The term "Unave Marunthu (Food is medicine) is so true when it comes to Indian Cooking, our practices so beautifully balances the taste and health. 
I have a small curry leaf plant in my balcony, which has just started flowering. We used to have a big, almost like a tree curry leaves back home in our old rented house in Chennai. The thought of running to your backyard/balcony to pluck fresh herbs for your cooking, is such a bliss, not many are blessed with that feeling.  I m happy to have a small green patch in my apartment here. 
Curry leaves are excellent source of anti-oxidants, they help in reducing bad cholesterol, balancing insulin levels and much more.  To top all this, it has got this mesmerizing aroma,that brings amazing flavor to the dish, it is added.
This simple rice with curry leaves along with tamarind and chilies, is an amazing way to pair this humble ingredient with rice for a flavorsome rice that is spicy,tangy and zesty.

Ingredients
2 cups of  cooked rice, i used sona masuri
Salt to taste

To Roast & grind
2 fistful of curry leaves
3-4 no. Red Chillies
1 tbsp chana dal
2 tsp coriander seeds
a small marble-sized Tamarind
Salt to taste
Tempering
1 tsp oil
1/2 tsp Mustard seeds
1 or 2 red chilies, broken
2 tbsp broken broken cashewnuts
1 tsp urad dal
hing a pinch
turmeric a pinch

Method

  • Heat a kadai/tadka pan, dry roast chana dal, coriander seeds and red chilies. Take it off the stove. In the same pan, add the curry leaves and dry roast until crisp. Let the roasted ingredients cool for 5 minutes.
  • Take them in a small mixer, add tamarind, pulse and grind it to a fine powder. No need to add water, Keep aside.
  • In the same pan used to dry roast the ingredients, add oil given under tempering, when it is hot, add and splutter mustard seeds, add red chilies, hing, urad dal and cashewnuts, once the dal and nuts turns golden brown, add the ground curry leaves powder to it and saute for a minute.
  • Take it off the stove, add cooked rice to this, mix well. Adjust salt and serve warm with any raita or crisp of your choice.

Veggie Rawa Idly

Weekend Mornings are Lazy Mornings. We need something Filling, tasty, healthy and @ the same time Quick breakfast Idea to KickStart the day. Here's one such Quickie Breakfast Recipe!!!! Steaming Hot Hot Rawa Idlies with a Spicy Chutney!!

Ingredients
2 cups of Rawa/Sooji/Semolina
2 cups of Sour Yoghurt,Whisked
1 tsp of Eno Fruit Salt
Salt to taste

For Seasoning
2 tsp oil
1 tsp Mustard Seeds
1 cup Mixed Veggies (i used frozen)
2 Green Chillies, finely Chopped
1 tsp Ginger juliennes
2 sprigs Curry leaves
hing a pinch

Method
Heat 1 tsp of oil in a pan and Roast the Semolina, until it gives out a nice aroma, Watch the flame. Mix the Roasted Semolina with the Yoghurt and Salt. If the batter is too thick you can add little more yoghurt or Water.  I normally use Thick Buttermilk instead of Yoghurt. 
Heat oil in a pan and Splutter mustard seeds, add Green chillies, hing and ginger and saute for a minute. Then add Mixed veggies and saute for 3-4 minutes. Add this to the Rawa-Yoghurt Batter, Mix well. Now add the fruit salt to the batter and mix well. Let it sit for 5 minutes. 
Grease the Idly plates and Pour the batter into the moulds and steam cook for 10 minutes in a slow flame.
When done, Take it out of the steamer, Give it a minuute to cool and then unmould. Enjoy with any Spicy Chutney!!!! We Enjoyed it with some Mint Coconut Chutney.


Sago Fritters

Had some Leftover Aloo Curry and Shredded carrots Made for Lunch. My hubby wanted something Interesting for the Dinner. But, i didnt want to waste what i made for lunch. Nithya's 4th Sense Cooking Sago Bonda Got my eyes, which she has made from Leftover Dosa batter and sago. Planned to try it with some change. Made this Sago Fritters and it was yummy!!!!

Ingredients
1 cup Sago
1/4 Cup Leftover Aloo Masala
2 tbsp Shredded carrots
2 tbsp Gram Flour/Besan
1 tbsp Corn Flour
1 tsp Red chilli powder
1 tsp Coriander powder
Amchur powder a pinch
Salt to taste
Oil for Frying

Method
Soak Sago in enough water for 3 hours. Drain the excess water. Mix all the above ingredients to a sticky dough. Heat oil in a kadai, when the oil is hot, Pinch small balls and drop it in the oil and deep fry them. Makes a Good Evening Snack!!!

Jeera/Cumin Rice

Need a Quickie Lunch Menu, try this Cumin/Jeera Rice. Very Easy to Make and a Wonderful taste

Ingredients
2 cups Cooked Rice
2 tbsp Cumin seeds/Jeera
2 nos green Chillies Slited Lengthwise
1 Large Onion
2 cloves Garlic, finely chopped
Salt to taste
Hing a pinch
Giunger Juliennes for Garnishing

Method
Heat oil in  apan, splutter Cumin Seeds, add hing ,turmeric, Chillies and garlic and sauté, then add onions and saute till translucent. Take it off the flame add cooked rice, mix well adjust the salt and garnish with Ginger Juliennes. Serve Hot with Applams/Chips.

Mambazha Morekuzambhu/Ripe Mangoes in Spicy Yoghurt Sauce

Mangoes, Mangoes Everywhere!!! My hubby is a Mango Maniac. My FIL, BIL and everybody in his family go crazy this summer and they used to mangoes like anything. Every week when i call my FIL and MIL they used to say aboutt varieties that have arrived and gone till date. So sad we dont get all those varieties here in Dubai. So, hatever was availabe he has got about 5-10 mangoes and all are lying in my rice pot!!! So, Every morning i open the rice pot, this nice aroma of ripening mangoes spread all over my kitchen. Thought of making something Delicious with mangoes. So made this morekuzambhu for the weekend. It was yummy and not to say about my hubby's brightened face!!!!
This can be made with Okra/Brinjal/Ashgourd, But with King of the Fruits, its a real Delicacy!!!

Ingredients
2 Cups Chopped ripe Mangoes
2 tbsp Fresh grated Coconut
2 tsp tuvar dal
2 tsp cumin seeds/jeera
3-4 nos Green Chillies/Red Chillies
1 inch piece Ginger
2 springs Curry leaves
2 cups of Whisked Yoghurt

Seasoning
1 tsp Mustard seeds
1/2 tsp turmeric powder
Oil for seasoning

Method
Soak Tuvar dal, cumin seeds/jeera in little water for 30 minutes. Then Drain the excess water and grind it with fresh coconut, ginger and curry leaves to a smooth paste.
Heat oil in pan, splutter mustard seeds, add the chopped mangoes and turmeric and saute for a minute or two.  Add the grinded paste and cook in a slow flame for 15 minutes or till the masala and mangoes cooks well. As it cooks, you can feel the nice aroma of the masala cooking.

Once the mangoes are cooked, slim down the gas flame to real low and add the whisked yoghurt.The Curry shouldnt boil!!! Keep the flame real low!!!!. Let it get cooked in a really slow flame for 10 minutes. Then take it off the flame and garnish it with fresh coriander.

Shall i call it the Hot n cold Salad!!!!

My Weight hit a plateau last week. I was a bit surprised i have just started to lose, how come so soon a plateau!!!! My dietician advised to check my Thryoid levels, tested and it was under good control. Then she put me under no-carb diet* for  2 days!!!! No Chapthis, No Rice, was allowed to have Lentils, Lot of Veggies and Fruits. 
I made this salad for my Lunch, Why the name hot n cold, i have added some raw mangoes, which is a bit of heat and Cucumber which is the other extreme of that!!! Leave the Name, Trust me,  the salad was divine!!!

Ingredients
2 sides of one Raw Mango(KiliMooku/thothapuri Mango)
1 cucumber
5-6 nos baby carrots
2 leaves of lettuce
Salt to taste
Hot Sauce for dressing

Method
Wash and Chop the Given ingredients, Mix salt and Sauce and Toss well. Enjoy!!!!
Tried the same salad for Dinner with a handful of Boiled Chickpeas, without raw mango!!!! It was very much filling, you can include this salad as part of your Lunch to reduce rice intake!!! You wont feel eating less!!!!

And about my weight i have started losing again, though its a bit slow, but still happy that something is happening!!! :)

Tomato Chutney

My Hubby dear needs 2/3 condiments with Idly/dosa, so this tomato chutney is a definite one, coz it is very easy to make and taste great.

Ingredients
4 large Tomatoes, roughly chopped
2 Onions, roughly chopped
3-4 nos green chillies
1 or 2 cloves garlic
ginger a small piece
curry leaves 2 springs
Salt to taste

Method
Grind  all the above ingredients well with little water. Heat Oil, splutter mustard seeds, add hing and add the grinded mixture. Add salt and let it cook in a low flame for 15 minutes. Once rawness escapes put it off the flame.

A great combo for South-Indian Breakfast Menu

Peas Corn Kuzhipaniyaram

Had some guest for the weekend. Instead trying the same old idly dosai, mad e some Kuzhipaniyaram with some interesting filing and tomato Chutney. Tasted so good and was so soft and spongy. Its a definite hit with the Kids and also for the Calorie Conscious Big Kids as this takes lil oil to cook.

Ingredients
1-1/2 cups Parboiled Rice
1/4 cup Urad dal
1 tsp Methi seeds/Venthayam
2 medium-sized onion, finely chopped
1/4 cup peas (i used frozen)
1/4 cup corn (i used frozen)
2 nos green chillies, slited lengthwise
Eno Fruit salt a pinch
1 tsp mustard seeds
hing a pinch
oil for seasoning
Salt to taste

Method
Soak Rice separately and urad dal and methi  together for 6 hrs and Grind them to a fine batter,add salt and mix well. Heat oil in a wok, splutter mustard seeds, add hing and green chillies, add onions and saute till translucent. Then add Peas and Corn and saute for a minute or two. Add this to the batter and add fruit salt and Mix well.
Now Heat the Kuzhipaniyarm Pan/Pancake Puff Pan and pour a spoonful of batter in the pan. Cook both sides and Serve hot with Chutney.

Rasamalai - Indian Cooking Challenge for April

Rasamalai, name itself brings lotz of Ras to our mouth (saliva!!!!). Enjoyed making this Delicious Desert!! I have made with smaller measurements, works out well for a small family!!!! Thanks Srivalli and Lavi for this Wonderful Recipe!!!

Ingredients
Milk - 1 litre + 3 cups
Half a juice of Lemon or as per need
Sugar- 6 tbsp (3 + 3)
Saffron - 3-4 strands
Pista-10 finely chopped
Maida flour- 1 tsp
Cardamon as per need

Method
Boil 1 litre of milk and let it cool. Refrigerate the milk for 12 hours. The next day or after 12 hours, remove the thick layer of skin formed over the milk. Now boil the milk, when the milk boils, add lemon juice. wait for a minute or two. the paneer will start floating,Now with a muslin or a cotton cloth, filter the paneer and then tie it well and let it hang on for one hour, till the whey water drops out.
After an hour, transfer the paneer to a wide vessel and  Knead the paneer well till you feel it dont have much moisture content in it.  add a spoon of maida flour to the paneer and make it as small small ball's remember the balls will become double in size after putting it and boiling it in sugar syrup. so make a medium size paneer ball's
In a wide-bottomed pan, add 1.5 cups of water and 3 tbsp of sugar. let it boil. Now when it boils, add the paneer ball's one by one on to it. Cover and cook in a slow flame for 15 minutes. When done, squeeze the paneer balls gently to remove the excess sugar syrup.
When you are starting to prepare sugar syrup. start making milk syrup/rasa side by side. Boil 3 cups of Milk and reduce it to half. add saffron and crushed cardoman to it and mix well. put the paneer ball's into the rasa/milk syrup. cool it down and refregirate it.Serve with chopped pistachios on top.

Sprouted Moongdal Kurma

Had some Fresh Sprouts handy, made this kurma for Dinner, tasted great with Chapthis.

Ingredients
2 cups Moongdal Sprouts
2 medium size onions, finely chopped
2 medium size tomatoes, finely chopped
1 tsp ginger-garlic paste
1 tsp Red Chilli powder
1/2 tsp coriander powder
1/2 tsp Garam masala
1/4 cup Milk
Coriander for garnishing

For making paste
2 tsbp freshly grated coconut
1 tsp cumin seeds
2nos green chillies
a fistul of fresh Coriander

Combine all the above ingredients in a mixie and make a fine paste with lil water.

Method
Pressure Cook Sprouts until soft.. Heat oil in a pan, splutter mustard seeds, add onions and ginger-garlic paste, saute till translucent. Add the tomatoes and add lil water and let them cook.When the tomatoes are cooked, add red chilli powder, coriander powder and garam masala. Let it cook for a while, sprinkle some water to avoid burning of masalas. Now add the cooked sprouts, grinded coconut mixture and a cup of water, adjust the salt. Let it cook in a slow flame for 15-20 minutes. Once the rawness of all the masala's escapes, add milk and mix well. Take it off the flame. Garnish with coriander and Serve Hot with Roti's/Chapathi's.

Chapathi Rolls Stuffed with Chana Paneer Masala

Have you ever felt like doing nothing???? yeah nothing, jus kill the time doing nothing. i was feeling that for the past 1 week. I have hell a lot of work pending, but i dont feel like doing one. Dead Lazy!!! Atleast today i started with some work!!! Chalo something is better than nothing.
This Chapthi Rolls i actually made for the last month - Global kadai Event, now u understand how lazy i m!!!

Ingredients
Wheat flour/Atta - 4 cups
Salt to taste
Water for making the dough.

Chana Masala
Chana - 2 cups
Medium-Sized Onions - 2nos, chopped
Crumbled Paneer - 1/2 cup
Green Chillies - 3 nos
Freshly grated Coconut - 2 tbsp
Ginger - as needed
Corinarder - a fistful

Method
Mix Atta/Wheat flour,water and salt and make soft dough. Let it rest for 30 minutes. Make small balls out of it and roll it out as chapathi's and Cook on tava.

Soak Chana overnight. Grind Chana, Green Chillies, Ginger, Coconut and coriander to coarse mixture. Dont Add water.  Heat oil in a kadai, add cumin seeds, add onions and saute till translucent. Add the Chana Mixture and salt. Cook in a slow flame. Keep Stirring , as the chana might get stuck to the bottom of kadai, sprinkle lil water now and then. Let it cook in a slow flame for 15-20 minutes. Add paneer, mix well . When it is done(rawness escapes), take it off the flame.

Now for making the rolls, Take a chapthi, Place 2 tbsp of chana masala, Roll and Serve.

Crunchy Berry Shake

After an exhaustive shopping and lot of walking, i was so famished!!!! But oh oh!!! i have to roll out chapathis for my lunch!!! :( i really didnt have the strength to enter the kitchen and Cook something!!! so decided to make a shake for myself to boost my energy levels.  Came across this Crunchy shake @ my Friends place, you can try this with any of the berries. I had Blueberries @ home,so tried with that. mmm yummy!!!!

Ingredients
1/4 cup Blueberries
1 cup Skimmed Milk, Chilled
1/2 cup Skimmed yoghurt, Chilled
1 tbsp Oats
Honey to taste

Method
Take all the above given ingredients in a blender and blend until smooth.Serve Chilled.

Confident Parents Remarkable Kids

Its been long, since i posted parenting articles. I came across this article from April Month's Emirates Parent Plus Magazine. Nice one, i liked it, tell me your views on this!!!

Parenting is definitely a tough job. It’s not just about fending for our kids, it’s a tougher ball game altogether. The responsibilities that come along with parenthood are endless. There’s feeding, washing and reading the same book about bunnies over and over to a child. Plus, making enough money to provide food, shelter and coveted designer jeans; changing diapers (or finding someone else who will): and juggling between all this you have your 9 to 6 job to keep up.

How as parents we balance all these acts and imbibe good values in our kids is what is perfect parenting is all about. One of the most important factor in this so called ‘perfect parenting ‘is – raising confident kids to face all the adversities in life. There are many territories kids have to venture unchartered. Kids learn from your actions and hence you need to be their bellwethers and lead on.

CONFIDENT MOMS AND DADS = CONFIDENT CHILDREN and this, above all else, is the very foundation which will determine the future success or failure of your children. As parents you have an enormous impact on your child’s emotional development. Kids respond to encouragement, praise and clear expectations. They thrive in an atmosphere where faith and family are strong. It takes confidence to be a Kid. Whether going to a new school or stepping up to bat for the first time, kids face a lot of uncharted territories, Naturally, parents want to instill a can-do attitude in their kids so that they can bravely take on new challenges and, over time, believe in themselves. While each Child is a little different, parents can follow some general guidelines to build kids confidence.
Faith vs. FearIf fear is at the forefront of our minds while raising our children, it will dictate our choices, and we will raise fearful children. The world can be a scary place, but if we believe that God is in control pout children will see us leading with the sense that God is bigger than any problem we face, and they will know security.

Trust vs. Control As our children try sports, music, art and other activities they discover their interests and abilities. We want out children to reach their full potential, but we must resist the temptation to form our children into our image. We cannot take a soccer player and make her a dancer just because she is petite, nor can we take a drummer and put him on the defensive jus because he is large.
We can be firm on issues of right and wrong, but we must be open and flexible when it comes to our children’s gifts. Nature has wired your child in a uniquely individual way. It’s not fair to impart our hope and dreams into their vocational choices.

Love vs. Perfection When we tell our kids what they mean to us, when we correct them privately instead of publicly, when we make time for them and expect great things from them, we pass on a legacy of confidence to them.
We confuse and stress our children when we expect them to make us look good; when we expect them to fulfill the dreams we never achieved; or when we expect them never to question us. The Temptation is to parent in a way sop others might think well of us. Yet the world doesn’t decide our worth or our children’s worth for that matter. When our children come to understand worth based on love, their imperfections will have less power over them. Faith, trust and love not fear, control or perfection adds fuel to a child’s esteem.

Over Parenting is based on a belief that in order for a child to be happy and secure, he must be protected from any experience he may find unpleasant or challenging, in an over-parenting family, the child comes first and most activities revolve around him. He is allowed to whatever he wants and have whatever he wants because telling him ‘no; would be unpleasant for him, he is also viewed by his parents as needing their constant vigilance and protection because the world is a scary place. The over-protected child is a protected and spoiled child, he lacks real confidence and is unable to take risks or make decision, He avoids new situations, and He hides behind his parents when a difficult challenge arises, because he has been taught by his parents that they are the only ones who can make decisions. Over-parented children may be any age but this over-parenting often becomes apparent in the middle grades of primary school when challenges start to increase.

Kicking the Over-parenting habit Your ability to break the habit of over-parenting is directly linked to your level of self-confidence. Parents who are able to allow their children to make decisions for themselves, to use their free time in unstructured play or daydreaming or to go about in the world without them, are really expressing a level of trust and confidence in the world and a belief that things will turn out all right. When a parent exhibits this level of confidence, the child will learn to be confident too. Breaking from a pattern of over-parenting may be difficult, especially if your social network and your child’s school staff endorse over-parenting, you may find yourself standing alone, or trying to fend off that peer pressure. However, if your child is to the point where he relies on you to think, plan and do for him, it is time for you to take action. When your child is faced with a challenge, give him ideas, tops or techniques to cope rather than allowing him to escape from the challenge. Help him develop a hang-tough attitude.

What are the better ways to boost my child’ self-esteem
1. Praise your child for doing a good deed or doing well at school.

2. Catch him or her doing something right, when you see him or her picking up a piece of paper, tells the child that you think they are being helpful. Thanks your child for the kindness.

3. Encourage your children by really paying attention when they show you their artwork, school papers, and other creative works, if you just give them a quick compliment and only look for a second your child can sense that you are not being sincere.

4. Applaud your children’s effort to improve. Perhaps little one jus brought her grade from a B or C up to astounding A. How should you react? We parents should not only get excited, but also perhaps give the child an unexpected reward, this is positive reinforcement.

5. Listen to your child when he or she speaks to you. Ask your children questions. As parent, we will encourage our children to develop their verbal skills. Make them know that their ideas and views are important. This also keeps the line of communication open between parent and child, which are very important when the child gets older. Children are much more willing to come and talk to a parent about their problems if they know that the parent will really listen.

Talk with your child and remember to listen too. Be interested in his friends, and successes and failures. Try to be sensitive about your child’s fears or worries, even if they seem small or silly to you. The world can seem very frightening to a small child. Show your child you take him seriously and give lots of encouragement, especially after a nasty shock or something has gone wrong. Help your child to talk through negative feelings, too.

 Self-esteem is an important quality to instill in our children, but so is humility. Before praising your child without any regard for the effect that it has on him or her, think. Really think if it is warranted. Is it age appropriate to let a ten-year old win over and over? Perhaps this does more damage. Shouldn’t your child be learning a few life’s hard facts?
