Microwave Ragi Laddoos

Had Some Ragi Flour, awaiting my attention in my freezer, tried making these Laddoos!!! The Laddoos tasted amazing!!!! The Taste of Ragi blended well with the Dessicated Coconut  and Cardamom added that extra flavor and made the laddoos taste Divine!!!
To My Surprise, Even my Son, had a full Laddoo!!! So, it is Definitely a hit among Toddlers too!!!! Come on Give it a try and let me know!!!

Ingredients (Makes 5-6 Laddoos)
3 tbsp Ragi Flour
1 tbsp Dessicated Coconut + 2 -3 tsp for coating the laddoos
2-3 tsp Ghee
3 tbsp Powdered Sugar
2 pods Cardamom
2-3 tbsp Milk

Method
In a Microwave Safe Bowl, Add ghee and Ragi flour and Microwave high for 4 minutes, Stir, after every 1 minute. Powder Sugar and Cardamom together. Once the Ragi is done in the MW, take it out, add Sugar and Dessicated Coconut, Mix well, Spread on a Flal plate, let it cool for a minute or two. Add Milk little by little and make balls out of the flour mix. Roll them, with some Dessicated Coconut. Do this immediately, else the laddoos might become a bit dry on the outer and coconut will not coat well on to the laddoos.

Soya Fritters

Made this for my Kid's Snack Box. Tasted great and healthy too. I had just potato @ home, you can add some green peas, shredded carrots to make even more veggie!!!!

Ingredients
1/4 cup Broken Soya Chunks
1 Large Potato
a Handful of Besan/Gram Flour
1/2 tsp Red chilli Powder
1/2 tsp Ginger Garlic Paste
1/4 tsp Garam Masala
Salt to taste
Oil for Frying

Method
Soak the Broken Soya Chunks in Hot Water for 2 minutes, Drain, wash in cold water and Squeeze out the Excess water. I used the small Tea Filter to Drain the broken soya chunks and used a Katori/Bowl to squeeze the excess water. Peel and Boil the Potato.
In a Bowl, Mash the Potato, add The Broken Soya, Besan/Gram flour and all the spice powders and Mix well to make a soft, a bit sticky dough. If needed, Sprinkle some water to make the dough.
Heat oil in a Deep Pan, make small balls of the dough and Deep Fry them in batches. Drain on Kitchen Towel. Enjoy with Tomato Sauce!!!!

Sarkarai-Pongal/Sweet Rice

Sarkarai Pongal/Sweet pongal is one of the star recipes of Tamilnadu festivities.  An important dish made during the Harvest Festival of Tamilnadu. Thai Pongal, thanking the Sun God for his abundance. 
This sweet rice is made using the freshly harvested rice and lentil, adding sweet jaggery and fresh ghee topped with nuts and raisins. Amma usually makes it in Vengala paanai, with turneric leaves neatly wrapped around its neck and  we gather near the stove to shout "Pongalo Pongal" when the rice-lentil froths out of the vessel. It is such a pleasure to celebrate as a family. Back then never knew we would be missing all that celebrations, if known would have enjoyed it a bit more. hmm. Neverthless, away from home, i try to celebrate the festival with the same sprit and soul. Here is how i make this delicious pongal at home. 
Ingredients
1/2 cup Raw Rice
1/4 cup Moong Dal
1/2 cup powdered Jaggery (tightly packed)
2-3 tbsp of Ghee
1 1/2 cup of Milk
1 1/2 cup of  Water
Cashews and Raisins for Garnishing

Method 

  • In a Heavy-bottom Pan, roast rice and dal together. It gives out a nice aroma while roasting. Once done, add milk and water, and simmer the flame. 
  • Let the Rice and dal get cooked well. to a mushy state. 


  • At this stage add the jaggery and mix well. When the jaggery melts and mixes well with rice and dal, add ghee and mix well.

  • Once the mixture starts turning dry, Put off the flame. In another pan, add some ghee and roast cashews and raisins and add it to the Sweet Rice. Serve Hot

  • To make the recipe in the pressure cooker. Just mix rice and dal. Add the nrequired liquid(milk-water mixture) to it and pressure cook for 5-6 whistles. 
  • Let the pressure come down on its own. Melt jaggery in water and strain for impurities. Now take the cooked rice-dal back to stove, add jaggery water to it and proceed as given above.

Ulundu Vada/Uzundu Vadai/Urad Dal Vada

Tamil Month purattasi/புரட்டாசி is associated with Lord Venkateshwara. Normally in my mom's place we used to do 'Maavilaku' on first saturday of purattasi month. But my MIL's place they don't follow any such tradition.
So for my satisfaction and my love for the God, i do a small pooja and make neivedhiyam/offering for the Lord. It is actually very hard to find a saturday for the pooja, because this month you have so many traditional rituals coming together like malaya paksham/pitru paksham, when certain ceremonies are held for our forefathers, Navrathri begins, Brahmostavam begins at Tirupathi. We cannot perform pooja during pithru paksham or during navrathri, or during brahmotsavam at tirupathi. Oh yes, he tests our patience and our resolve towards him to the last bits.  So, it is always better to do the pooja fduring the first saturday of the month.
Urad dal vada is one of the offering along with the Sarkarai Pongal/Sarkarai pongal during this pooja.  
Ingredients (Makes 11-12 vadas)
1/4 cup Urad Dal
1 green chilli
1 tsp black peppercorns
1/2 tsp grated ginger
a sprig of curry leaf
2 tsp of fresh coriander leaves, chopped
Salt to taste
Oil for frying

Method
  • Soak urad dal for 15 minutes. Drain the excess water, add green chili, peppercorns, ginger, curry leaves to the dal and grind it to a smooth batter, without adding water. Excess water makes batter loose, so don't add water, if necessary add only 1 or 2 tbsp. 
  • Let the batter sit for 10 minutes. Heat oil in a pan, wet your hands, take a small ball of the batter, place it on the other palm and flat it using your fingers and make a small hole in the center and slide it down in the oil. 
  • Keep the Flame in Medium and Fry both sides. Drain on a Paper towel. Serve hot. First person to taste this even before the Neivedhiyam was my son, since it was his favorite "DoughNut Vada".

Zucchini Kadalai-Paruppu Kootu/Zucchini Chana Dal

Making Kootu/Dhal with Kadalai-paruppu/Chana Dal has a Divine flavour. Normally i make kootu/Dhal with Moong Dal, since it takes less time to cook, whereas chanadal takes a bit more time and work. Got Zucchini's @ my Local Grocery Stores, so made Kadalai-paruppu/chana dal Kootu. 
Zucchini can be yellow, green or light green, and generally have a similar shape to a ridged cucumber, though a few cultivars are available that produce round or bottle-shaped fruit.In a culinary context, zucchini is treated as a vegetable, which means it is usually cooked and presented as a savory dish or accompaniment. Botanically, however, the zucchini is an immature fruit, being the swollen ovary of the female zucchini flower.

Ingredients
3-4 nos. Zucchini
1 small bowl of peas
1/2 cup Chana Dal
2 nos green Chilli
1 tbsp Freshly grated coconut
1 tsp grated ginger
Salt to taste
Fresh Coriander for Garnishing

To Grind
2 tsp Pepper
1 tsp Cumin
1/2 tsp Corinader seeds
1 tsp Tuvar dal

For Tadka/Seasoning
2 tsp oil
1 tsp Mustard seeds
2 tsbp urad dal
a fistful of curry leaves

Method
Soak Chana Dal Overnight or Atleast 3-4hrs prior cooking, this way it cooks fast. Peel the Zucchinis and cut them as cubes. Grind the Ingredients given under "To Grind" to a fine powder,No Need to Roast, just dry grind. In a pressure pan, Add cut zucchinis and Soaked Chana Dal (after draining the excess water), Slited Green Chillies, Coconut, Ginger, Ground Masala Powder and Salt. Pressure Cook for 3-4 Whistles. 
Once the Pressure is Down, Transfer into another bowl, Heat oil in a tadka pan, splutter mustard seeds, add urad dal, once it turns light brown, add curry leaves and pour the tadka over the dal. Yummy Dal is ready!!!! Serve With Hot Roti's/Rice

Eggless Chocolate Chip and Banana Squares for T&T

Finally i m posting this before the last date. OMG, i have become so dis-organized!!!! Lot of work @ home and lot of pending post @ my blog too. Not finding time, may be from next week i might find some, My Kiddo's School is re-opening!!!! :)


Tried and Tested This Months celebrates Aparna's My Diverse Kitchen, hosted by Srivalli, started by Zlamushka and taken over by Lakshmi. Aparna's My Diverse Kitchen, doesnt need any Intro!!!! Great Blog, lot of tasty, lip-smacking recipes. I tried these Eggless Chocolate chip and Banana Squares, Wow!!! Came out great.The aroma of cardamom was so mesmerizing, those this magic ingredient was optional, i love to add this!!!

Dates Peda (No Sugar)

Got Inspired by Ayeesha's Fig Pedas,i tried these No Sugar Dates Peda. Came out good.

Ingredients
3 tbsp Crumbled Paneer/Cottage Cheese
5 dates
1/4 cup Low-Fat Milk
Cinnamon a pinch

Method
Remove Date Seeds, Soak them in milk for 30minutes. Grind it to a fine paste along with Crumbled Paneer.
Take this Mixture in a Microwave Safe Bowl and Cook @ high for 5 minutes, Stir in-between. Sprinkle cinnamon while stirring the second time.

Take it out, let it cool for a minute or two, gather the dough and make small pedas out of it.
Delicious pedas are ready in a minute. Makes 7-8 Pedas. No Sugar added, the dates take care of the sweetness.
An Healthy Delicious Snack for kids. While serving for kids, drizzle some Choco syrup and serve, like i did!!!! :)
Definitely your kid will enjoy as mine did!!!! :)

Multi-Vegetable Kootu

After a very long break i m back @ A Healthier ME :). Not Necessarily mean, that i wasnt eating healthy, didnt find time to cook myself. Now Back in my Kitchen, Cooking for my Small Family.
Made this multi-vegetable kootu for Lunch. Goodness of Veggie makes it a healthy choice for kids and Low Calories makes its great for all those Diet People!!!!

Ingredients
1 Medium-Sized Carrot
1 Medium-Sized Sweet Potato
1 Capsicum
4-5 Cauliflower Florets
1/4 cup Green Peas
1/2 cup Moong dal
Salt to taste

To Grind
3 Green Chillies
1/2 inch ginger
1/2 tsp Cumin seeds
2 tbsp Freshly grated coconut
a Fistful of Fresh Coriander

Method
Wash all the veggies. Peel Carrot and Sweet Potato. Chop them all  to slightly bigger cubes.
Grind all the given ingredients under "To Grind" to fine paste with little water.
Take all the veggies in to Pressure pan, add the ground paste, add Moong Dal and enough water for the veggies to immerse. Add salt and Mix well. Pressure Cook for 4-5 Whistles.
Once the Pressure is down. Transfer it to another dish, Heat a tsp of oil, Splutter mustard seeds and fry some urad dal and add this tadka to the Kootu.
Makes a Healthy Combo with Hot Chapathis/Rotis. I Served this with Rice and a blob of ghee  for My 4 year old. No Complaints!!!! :)

Eggless Chocolate Brownie Cake

Celebrated our Wedding Anniversary on 1st September. Since it was Janmashtami too, had a lot of work, so i decided to bake a tried recipe.Baked this Eggless Chocolate Brownie from Sailu's Kitchen.

Yes i baked a Brownie Cake and frosted it with Whipping Cream and Hershey's Chocolate Syrup and topped with some Cherries. Tasted so Well.
