Nutty Poori/Roti

Another Variation of my Kid's Favourite Poori. Today is the last day of our Blogging Marathon, it has been a great month, with lotz of tasty recipes from all of us. Thanks to Srivalli, for Kick Starting this Blogging Marathon. Had a good discipline to attend to my blog daily, though i missed 4-5 days due to ill health!!!! Hope to continue this discipline!!!!  A Post, A Day, Keeps your Blog Healthy & Happy!!!!!

Ingredients
1/2 cup Wheat flour
2 tbsp Almond Meal
2 tbsp Flaxseed Meal
Salt to taste
Oil and Water for making dough
Oil for frying the Poori


Method
Mix Wheat Flour, Almond Meal and Flaxseed Meal, Salt  together, add water and a teaspoon of oil and Make a Soft Chapathi Dough. Divide the dough in to Balls and Roll them out as Flat disc or Cut out Desired Shapes using a Cookie Cutter and Deep fry the Poori. You can also Cook them on a Hot Tava/Griddle as Chapathi. Since it has Flaxseed and Almond Meal along with the Goodness of Wheat Flour, this is a Nutritious Treat to Kids and also to Adults.

Herbal Poori/Roti

This Chill Weather, everybody is Coughing @ home. My Mom used to make us a Kashayam/Concoction made of Tulsi, Coriander, Ginger  and lil bit of sugar. I cannot make my Kid to drink that!!! thats all, the whole house would come down!!! So, thought of mixing up these ingredients in to his Favourite Poori!!!

Ingredients
1/2 Cup of Flour
Handful of Mint leaves
Handful of Coriander
a Small piece of Ginger
4-5 leaves of Tulsi (Indian Basil)
Salt to taste
Water & Oil to make the dough


Method
Grind Mint leaves, Coriander, ginger and Tulsi to a fine paste and add it to  Wheat flour and Make  a Soft Dough using Water and Oil. Let the dough sit for 10 minutes. Divide the dough to small balls and roll them out  as discs. You can either deep fry them poori, or Cook them on a Hot Tava/Griddle as Chapathi/Roti. I would suggest Poori's for Kids and We can have them Chapathi's/Roti's!!!! Though he came home and Complained about the Green Color of his Fav Brown Poori, he finished his Dabba!!!!!

Eggless Biscuit Joconde Imprime/Entremet - The Daring Bakers Challenge January 2011

The Daring Bakers Challenge for January 2011 was Joconde Imprime/Entremet, a decorative design baked into a Light Sponge Cake and Filled with Interesting Fillings!!!! This Challenge was given to us by Astheroshe from Accro!!!!
It was indeed a daring Challenge!!!! I as a Vegetarian, wanted it to be Eggless and this being my First Daring Bakers Challenge, wanted to make atleast 70% Success!!!! First and Foremost thing which i needed most was a Good Mould!!!! I didnt have one!!!! I tried to get one!!!But in Vain!!! So i made my own Mould, using the Muffin Liner Box!!!!I cut out the Bottom of that Box and used it as  a Mould!!! It was a bit wobbly, but managed it a bit!!!!
Now comes the Eggless Experiments, i tried a Egg-less Sponge Cake Recipe and Used it for the Joconde!!! I thoroughly enjoyed baking this Awesome Dessert!!!! The Final Look of the Joconde, though could have been even more better, the Taste was Awesome!!!! I got very good comments from my husband who tasted it this Afternoon after lunch!!! Overall, it is an amazing Experience and i would definitely try to bake it sometime again and make it 100%!!!!

Ingredients
Recipe Source : Tarla Dalal & Kailas Kitchen
For the Pattern
1-1/4 Cup All Purpose Flour
2 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tin Condensed Milk
1/4 Cup Melted Butter
1/2 - 3/4 Cup Warm Water

Sieve the Dry Ingredients together. To This add Melted Butter, Condensed Milk and Stir Gently. Now, the batter would be Rolling thick!!! To this Add Warm Water, to make it to Dripping Consistency. Be careful, it should not be Runny!!!

For the Sponge Cake

1/2 Cup All Purpose Flour
1/2 Cup Almond Meal
1/2 Cup Cocoa
3/4 Cup Powdered Sugar
1-1/4 tsp Baking powder
1/2 Tsp Baking Soda
1 cup Thick Curd
1/2 Cup Cooking
1/4 Cup Warm Water

In a Bowl Mix Curd and Sugar, until Sugar Dissolves. To this Add Baking Powder and Bakinbg Soda. Mix Well. Let it Sit for 2-3 minutes. The Curd will Start Rising & Increasing in Volume
MeanWhile, Sieve together all the three flours thrice and Set aside.  Add Oil to the Curd Mix and Stir Gently, Fold in the Flour Mix gently to this Curd-Oil Mix!!! Gently, Gently, Gently!!!! To this add water and Mix a bit more to make it bit more loose in consistency!!!!

Preparing The Joconde
Preheat the Oven to 200C. Keep the Mould Ready!!!!! In a Parchment Paper, using the Pattern Batter, draw a pattern of your choice and freeze the Parchment paper for few minutes. I did for 5 Minutes. Take it out and Spread the Joconde Batter on the Parchment Paper to fill the entire Design!!! Bake in a Baking Tray for 12 minutes. Take it out, Let it Cool!!!!

Cut it out as Strips and Fit the Strips into the Mould . For the Filling, i have used Ready made Strawberry Filling and Whipped Cream and Garnished with Some almonds!!!!

Oats Cornmeal Coconut Squares

A Very Lengthy title!!!! I don't  want to Miss out the main players in this Recipe!!!! Easy, Breezy Recipe to make!!!!
Ingredients
1/2 cup cornmeal
1/4 cup Oats
1/2 cup Dessicated Coconut
1/2 tin Condensed Milk
4 pods of Cardamom, Crushed
2 tbsp Almond flakes


Method

  • Dry Roast Cornmeal and Oats separately. Grind it together in a mixer. 
  • Take this grounded mixture to the pan again, add Dessicated coconut and give a good mix, Lower the flame and add Condensed milk, cardamom, Almond Flakes and Mix Well. 
  • When the mixture comes together as a Soft ball, take it off the stove and transfer it to a greased Plate and Press it down hard. I did this on wax-paper laid round cake pan. Let the mixture cool a bit, mark squares using a Sharp Knife.

  • You can even roll them out as Ladoos, once you take it off the stove, let the mixture cool a bit, shape them as ladoos and coat them with some Dessicated Coconut!!!! Squares or Sphere it tastes Fabulous!!!!!

Finger Printing with my Kid

We bought a book on Finger Printing in a Book Fair, that is some 2 months back. All these day, it was sleeping in my Book shelf. Suddenly thought about it and took it out. Me and My Kid, got our fingers dirty and tried out some prints from that. It was Fun. Lot of Fun!!!!!

The Book Title "Ed Embereley's Finger Print Drawing Book". It is so damn good. Very detailed instructions, Good Fun for Kids. Starts with simple prints and goes on to create to Vehicles, Animals. People!!!!Gives you a great start in Finger printing.

Semiya Upma/Vermicelli Upma

A Simple and Quickie Breakfast Menu.As mentioned in my earlier post, I always keep frozen veggies handy, to make my work easy.  I have used only Capsicum, Peas and Corn in this Recipe, since that 's what i had @ home. You can add Potatoes, Cauliflower, Carrots, etc.  To make the job even more easier, i store roasted vermicelli in my pantry. When i get my monthly provisions, i do all Roasting, grinding thingies a day, this makes job a lot easier in the Kitchen!!!! 


Ingredients
2 cups Roasted Vermicelli, Loosely Packed
3-4 Green chillies
1 Large Onion, Chopped
1/4 cup Peas
1/4 cup Corn
1 Large Capsicum, Thinly sliced
Salt to taste
1/2 tsp Coriander Powder
2 Sprigs Curry Leaves
Hing, turmeric each a pinch
Fresh Coriander leaves, Ginger Juliennes for Garnishing


Method
Heat oil in a Kadai, Splutter Mustard Seeds, Add Green Chillies and Curry Leaves. Add Onions and Saute till translucent. Add Rest of the Veggies and Saute well. Add 2-3 cups of Water and add Salt. Let the Water boil, Simmer the flame and add the roasted Vermicelli and Mix well. Let it cook, in Simmer flame, till the water dries up, you see thne vermicelli cooking up Soft and not sticking to the pan. Put the flame off, add the garnish and Keep it close for 5-10 Minutes. Serve Hot with a Chutney of your choice, We had it with Tomato Sauce!!!!

Komola Kheer/Orange Kheer

Juicy Oranges in Creamy Milk Pudding ummmmaaahhhhh!!!! Saw this Kheer @ Divine Taste, immediately bookmarked it!!!!! Made this for the Weekend, it was amazing!!!!! Oranges soaked well in Creamy Milk!!!! it was divine!!!! I followed Anu's Recipe Word by Word!!! Please follow the link for the recipe!!!!

Ingredients
2 Litres Full Cream Milk
4 Large Juicy Oranges
8-10 tbsp Sugar
1 tsp Cardamom Powder
Few strands of Saffron (i didnt use this!!!)
Pistachiao for Garnishing!!! ( i have used almond flakes)

Method
In a Heavy Bottom Pan, Boil Milk, till it reduces to half its content. Take care not to Burn the Milk. I added 2 spoons to it (Lataji's Idea, While making Khoa for Gulab Jamuns). Add Sugar, Cardamom Powder and Saffron to it now. Mix Well. Turn it off when the milk turns that Creamy Yellow!!!! Let it Cool.
Meanwhile, Peel the Oranges, remove that White layer, Skin and the seeds. Add it to the Cooled Down Milk!!!! Refrigerate and Enjoy it Chill!!!!!!! It was heavenly to taste, those juicy oranges, soaked up in the Milk!!!! Divine!!!!! Thanks to Anushruti for Sharing this yummylicious Kheer!!!!

Eggless Cinnamon Walnut Muffins

Cinnamon Walnut Muffins, saw these Puffy, little, cutie beauties on Sandhya's Kitchen. Bookmarked them immediately and tried them Eggless for yesterday's Breakfast!!! Came out great!!! Please Follow the Link for the Original Recipe.

Ingredients
1 Cup All Purpose Flour
3/4 Cup Sugar
1-1/2 tsp Baking Powder
1 tsp Cinnamon Powder
1/2 Cup Coarsely Chopped Walnuts
125ml Milk
4 tbsp Oil
1 tsp Vanilla Extract
2 tsp FlaxSeed Powder mixed with 6 tbsp of Hot Water (Replacing One Large Egg)


Method
Preheat the Oven to 200C, Grease a Muffin Tray . Sieve together Flour, Baking Powder, and Cinnamon Powder. Add Sugar to this.  Mix the Wet ingredients together in a bowl(Flaxseed powder mixed water, oil, Milk. Add the Wet ingredients into Dry ingredients and Mix gently. Stir in the Chopped nuts and Vanilla Extract. Spoon the mixture in to the muffin tray till 3/4. Bake for 20 minutes or until the Skewer inserted in the middle comes out clean. 
Baking Time differs from Oven to Oven, So, do the Toothpick Test to Check Whether the Muffins/Cake is done.  I made it yesterday morning for Breakfast, had it with our Morning Coffee!!!! Warm Muffins Over a Hot Cup of Coffee on a Winter Morning, mmm!!! Delightful!!!!

Brown Rice/Arisi Upma

Arisi/Rice Upma is an easily available alternative for Dinner Menu.  Amma used to make it whenever she is fasting. Simple and Easy to make Recipe.

Ingredients
To Grind
1/2 cup Brown Rice
2 tbsp Toor Dal
2 tbsp Moong Dal
2 tbsp Chana/Gram Dal
1 tsp Peppercorn
1 tsp Cumin seeds


Tempering
2 tsp Oil
4-5 Red Chillies
1 tsp Mustard Seeds
2 Sprigs Curry Leaves
Hing, Turmeric a Pinch
2 tbsp Freshly Grated Coconut


Method
Take the Ingredients given under 'To Grind' in a Mixer and Grind to a Coarse Powder.
In a Deep Kadai, heat oil, Splutter Mustard Seeds, add Curry leaves, hing, turmeric and Red Chillies, Now add 2 cups of Water to this, Let the Water boil, add Grated Coconut and salt, mix well. Now reduce the Flame, add the Coarsely grounded Rice-Dal Mixture to this water and Mix well. Take care not to have any lumps!!! Let it Cook for10-12 minutes. 
Once the Rice-Dal mixture is Well Cooked, Put off the flame and Keep it covered for another 5-10 minutes. Garnish with Ginger Juliennes and Enjoy!!!

Aloo Roti/Potato Roti

These Days My son wants to have Roti's for his School Lunch Box. But i m a bit tensed, that it might not be that soft for him to have during lunch.  That might make him avoid roti's altogether. So, i tried making the roti dough using only mashed potatoes, no water at all. That way the roti's came very soft, remained soft till Lunch and the taste was also good.
Ingredients
1/2 cup Wheat Flour
1 Small Potato,
Salt to taste.
Oil/Ghee for making the Dough 


Method
Peel the Potato, cube and Cook until soft. Take the Wheat flour in a wide bowl, add the boiled potato and start making the dough. Add some ghee while making, you will get a Super-Soft dough. 
Divide the Dough to 3 or 4 Balls. Roll them out and Cook on a Hot Tava/Griddle on both side adding some ghee/oil.  Makes a Good Lunch Box Recipe, especially for Kids!!!!

Green Peas (Brown) Rice

A Delicious and Quick to Make Lunch Box Menu. If you are like me stocking up on Frozen Veggies, then, this takes just a blink of your eye to make!!! Comes as a great help on Late Mornings, considering the weather :)!!!!

Ingredients
1 cup Cooked Brown Rice
1/2 Cup Green Peas (i used Frozen Peas)
1 Medium Onion, Chopped
1 Medium Tomato, Chopped
2 green Chillies, Slitted
1/2 tsp Freshly pound Coriander Powder
Curry leaves 2 sprigs
Coriander leaves, Ginger Juliennes for Garnishing


Method
Heat oil in a Pan, splutter mustard seeds, add Onion, curry leaves and Green Chillies and Saute till onion turns translucent. Add Tomatoes, and Saute until the tomatoes are cooked and oil separates. Add Green Peas, Mix well. Let it cook for 3-4 minutes. Add the freshly pound Coriander powder and mix well. Mix it with the Cooked Brown Rice and Garnish with Ginger juliennes and Fresh Coriander leaves. Makes a Good Lunch Box Recipe.

Eggless Strawberry Chocolate Almond Bread

I was Organizing my Photo Folder, came across some pictures which havent been used yet!!!! This recipe i tried from Mrignayani's Blog!!! She has posted the recipe in October, i tried the same day i saw her post!!!! Spring Onions & Paneer Paratha

Spring Onions & Paneer Parathas, a Flavorful Dinner Menu. Had a bunch of Spring Onions lying in my fridge for almost a week!!! Thought of making some good use of it!!!! Enjoyed this with Mango Pickle and Plain Yoghurt.

Ingredients
3 cups Wheat Flour
1 cup Chopped Spring Onions
1/2 Cup Crumbled Paneer
2 tsp Red Chilli Powder
Salt to taste
1 tbsp of oil 
Method
In Large Bowl take all the Ingredients and add enough water and make soft Chapathi Dough. Divide the dough and Roll them out as Disc, a bit thick than the normal Chapathi. Heat a Tava/Griddle, Cook the parathas on both sides. Smear some Ghee/Butter on top and Serve Hot with Pickle or any Raita.

Bulgur/Burghol Upma

A Quick Breakfast/Dinner Menu. Whenever i feel so damn tired to make something for Breakfast/Dinner, i cook this Bulgur/Burghol Upma. Its very easy and simple to make and takes less time to Prepare. It doesnt require any Side Dish as such, goes very well Sauce or a Simple Low-fat Yoghurt mixed with Black Salt and Chilli Powder.


Ingredients
1 cup Bulgur/Burghol
1 Large Onion, chopped
3-4 Green Chillies/ Red Chillies
2 sprigs of Curry leaves
hing, turmeric each a pinch
Salt to taste
1/2 tsp Mustard seeds
2 tsp Cooking oil
Coriander leaves and Ginger Juliennes for Garnishing
Method
Boil 2 cups of Water and Blanch Bulgur/Burghol for 5 minutes. Heat Oil in a Kadai/Deep Pan, Splutter Mustard seeds, add chillies, curry leaves, hing and turmeric. After a minute, add Blanched Burghol, add Salt and Mix well. Cover and  Cook in a Low flame for 5-10 minutes. Put off the Flame. Garnish with Coriander leaves and Ginger juliennes. We enjoyed with  Low-fat yoghurt Mixed Whisked with Black Salt and Red Chilli powder.  Tasted Delicious and a Filling Meal!!!!!
