Eggless Yeasted Coffee Cake - DB Challenge March 2011

Jamie of Life's Feast and Ria of Ria's Collection, invited us to bake this Yeasted Coffee Cake for this Month's Daring Baker's Challenge. The Actual  Recipe, involved Meringue Filling along with Nuts. Since, i dont use Eggs, i was busy hunting all SuperMarkets for a Vegan version of Meringue Powder, I couldn't get one. I remembered Gayathri's Pasta Frolla and Crostata, where she has used Paneer and Condensed Milk Blended Mixture as a Filling. I tried that as an Substitute for Meringue. Voila!!!! The Cake has come out great!!!! 
Ingredients
2 Cups of All Purpose Flour
1 and 1/4 tsp of Active Dry Yeast
1/4 tsp Salt (Oops!!! i missed this)
2-3 tbsp of Sugar
1/4 Cup Butter
2 tbsp of Water
6 tbsp of Milk
1 heaped tbsp of Flaxseed Meal, blended with 1/4 Cup Warm Water - Replacement for 1 Egg


Filling
3 tbsp of Cashewnuts, chopped
3 tbsp of Walnuts, chopped
2 tbsp of Dark Choco Chips
2 tbsp Powdered Sugar


Instead of Meringue
1/4 Cup Crumbled Paneer (Indian Cottage Cheese, I have used Store bought)
1/2 can Condensed Milk
3-4 pods of Cardamom
Method
Soak Flaxseed Meal in Warm Water.In a Sauce Pan Warm Butter, Milk and Water together, Do Not Boil. Take 3/4 Cup of Flour, Sugar, Salt and yeast in a big bowl. Add the Butter-Milk-Water Liquid to Flour-yeast mixture and Beat with an electric mixer, until well blended, in a medium speed for 2 minutes. Add the Flaxseed-Water Mixture to this and Blend Again. Add the remaining flour to this mixture, using a wooden spatula, stir well, to make a sticky dough. Turn the dough onto a floured surface and knead well for 8-10 minutes. Grease your hands with little oil while kneading. It helps!!!!
Straight out of the Oven!!!!!!
Place the dough in a bowl, greased with little oil, cover with a cling film and let it sit for an hour, where it doubles up in Volume!!!!Meanwhile, Prepare the Filling, Just mix up the ingredients given under "Filling". For the Meringue Substitute, take ingredients in a blender and Blend well to a smooth mixture. After an hour, take the dough out of bowl, punch down the dough. I have divided the dough into two and baked 2 separate cakes. If you want you can make it as one big wreath!!!!

Roll the dough into a rectangle(20 x 10inch)on a floured surface. Spread the Paneer-Condensed Milk Mix First, then spread the Nuts-Choco Filling. Roll into a Log, and bring the edges together to make a doughnut shape. Using a sharp knife/scissors make incisions/small cut on top of the Cake. Brush the top of the cake with some milk.
Dusted With Sugar and Waiting in the Fridge for my Hubby!!!!
Preheat the Oven to 180C and bake them for 25-30 minutes, till the top turns golden brown. Mine was done @ 28 minutes. The baking time, varies from oven to oven, so keep a watch on the wreath after 25 minutes.When tapped, the wreath gives a good hollow sound, that should confirm, it has baked well!!!!Take it out of the Oven, let it cool on the Wire rack. Dust it with some icing Sugar, Slice and Serve with Coffee/Tea!!!! My Kid really enjoyed the surprise Nutty Filling, when he took a bite of the cake!!!!You can vary the filling and make a savory cake too!!!
It was a joyful feeling to see the top change into Golden brown and when sliced, Nuts-Choco filling oozing through the layers of beautifully baked yeasted cake!!!! It is amazing!!!! Since i try to bake Eggless Version of the Daring Bakers Challenge, every month's challenge is an adventure, which i very eagerly expect!!!!

February  was raining Awards @ Enveetu Kitchen!!!! I should apologize first for not able to acknowledge and post them as soon I received them. First it was me not feeling well, then it was my Kiddo, later got busy with Blogging Marathon,it was something or the other!!!!!

Dry Fruits Paayasam/Kheer

My Kiddo is enjoying his Academic Break. I m trying make him some thing tasty, healthy and introduce him to some new food group and taste. He loves the Dry Fruit Milkshake available @ most of the Restaurants. so i tried to bring out the same taste, by adding some more healthy ingredients. Thankfully, he liked it very much. Thought of posting it for Last month's Kids Delight - Restaurant Recreations, but couldn't make it!!! But Never too late, to post something healthy, delicious and make our kids happy too!!!!

Ingredients
1 litre Full Fat Milk
25 nos Dates, Pitted
1/4 Cup Warm milk for Soaking dates
1/4 Cup Almonds
1/4 Cup Walnuts
3/4 Cup Sugar
3 tbsp Chopped almonds
3 tbsp Chopped Pista
few strands of saffron, crushed


Method

  • Soak the dates in Warm Milk for 1 hour. Soak whole almonds and walnuts in warm water for 30 minutes. Drain and Skin the almonds. Grind The Dates, Skinned almonds and walnuts in a Mixer to a fine paste. 

  • Boil Milk, in a heavy bottom pan. Reduce the flame and add the ground paste, Sugar, Saffron , one by one and mix well. Let it Cook in  a Simmer flame for 10-15 minutes. Switch of the flame, add the chopped almonds and Pista. Serve Chill.

Basundhi - With Love to My Dear Paati!!!!!

Basundhi, most favourite Sweet of  my Dear Grand-Mom. It was her First Anniversary on 8th March, 2011. I made her favourite Sweet as an Offering to her. She was 92 years old. Though it is an year, since she left us, we still couldn't digest the fact, she is not there. I didnt want to keep her Photograph on wall, to keep me reminding that she is no more!!!! 
When i came back here, i brought her saree, which she wore for my brother's engagement. And my brother took her Glasses to keep it as an Memoir/Blessing from her.  She used to wear Nighty @ home, but wore saree for the function. She Loves her grand-son so much!!! Wanted to see his wife, Saw there engagement and passed away after 15 days, even without giving us a sign, that she has received her call. We Humans, always want more of what we have. I Feel, i could have had more time with her. But, whom am i to decide that!!!!!! Hope She is listening to us, Love you Paati!!! We really miss u a lot!!!! 
Ingredients
2 Litres Full Fat Milk
1 Cup Sugar
3-4 tbsp Almond Meal
1/4 Cup Chopped Almonds
1/4 Cup Chopped Pista
2 tsp Cardamom powder(I forgot to add this)
3 pinches of Saffron, Soaked in 2 tbsp of Warm Milk

Method
In a Heavy-bottom Pan, Boil Milk. Simmer the flame, when it begins to boil. Add 2 spoons to  boiling milk to avoid burning of milk. Stir the Milk and Scrape the Pan-Side and return it to the boiling milk. When the Milk reduces to 3/4 of its quantity, add saffron Soaked Milk to this and Sugar. Keep Stirring often and scrape the sides and stir the malai in to the milk.
When Milk reduces to half its quantity, add the almond meal and Chopped nuts and Stir Well. Wait for the milk to Turn Creamy nad Change Colour to a Golden yellow. Switch off the Stove. Serve Chill. Some Like my Hubby might like it warm too!!!! Go ahead and enjoy this Healthy, Creamy n Yummy Dessert!!!

Dhaniya Podi Saadam/Coriander Seeds Rice - Day 7 Blogging Marathon

The Last Day of Blogging Marathon. Planned to make a Spicy Rice Mix for Lunch. Though my hubby asked for something like a One Pot Meal, i want to stick to my idea of Quick Rice Recipes. This Recipe is again from Mallika Badhrinath's Rice Delights Cook-Book.
Ingredients
1 Cup Rice, Cooked
2 tbsp Coriander Seeds/Dhaniya 
4-5 nos Red Chillies
2 tsp Black gram dal/Urad Dal
2-3 cloves of garlic
Tamarind, size of a marble/Goli Gundu
Salt to taste
Curry leaves a few


Seasoning
1 -2 tsp Sesame Oil/Ghee
1/2 tsp Mustard seeds
hing a little
curry leaves a few
2 tsp Chopped almonds


Method
Heat a little oil and fry red chillies. Coriander seeds and urad dal/Black gram dal till brown in colour.  Add curry leaves at the end and fry for one or two minutes, in low flame.When it cools down powder everything together with garlic, tamarind and salt.  
Heat oil in a Pan, Splutter mustard seeds, little hing. Fry curry leaves and chopped almonds. Now add Rice and Fry for a second or two.  Put off the flame, add the grounded powder and Mix well. Adjust the salt. Serve with Potato Curry or any crisp of your choice. The aroma of freshly pound Coriander seeds with tamarind tasted great. Makes a Spicy, Flavourful Lunch Box Recipe!!

Yellu Podi Saadam/Sesame Rice - Day 6 Blogging Marathon

It has been a hectic day. My Son isn't well from yesterday night. Though everything was ready in the morning, i couldnt find time to sit and do the post. Atlast found some time to finish it before the day ends. Sesame Rice is another flavourful rice, very quick to make.

Ingredients
1 cup Rice,Cooked
2 tbsp White Sesame Seeds
3 -4 nos Red Chillies
1 tsp Urad Dal/Black Gram Dal
3-4nos Cashews
Salt to taste


Seasoning
2 tbsp Gingely Oil/Ghee
1/2 tsp Mustard Seeds
1/4 tsp broken urad dal/Black Gram dal

Hing a pinch
Curry leaves a few

Method
Heat a pna ad dry roast the seeds in a low flame till light brown in colour.  Heat half a tsp of oil and fry red chillies with black gram dal and Cashews.  Cool the ingredients and Powder them.  Heat rest of the Oil/Ghee Separately and splutter mustard seeds and fry curry leaves and hing. Add Broken urad dal and fry them until brown.  Add Cooked Rice with Salt and the grounded powder. Mix Well. Garnish with any Roasted Nuts or just coriander leaves.

Chutney Dal/Roasted Gram Spiced Rice - Day 5 Blogging Marathon

Wishing all you Lovely Ladies, a Very Happy Women's Day. Roasted Gram/Chutney Dal Rice, it just came as i was cooking. I kept adding ingredients that came on to my mind, the result was a Tasty, Spicy Mixed Rice. Served this to my hubby for Dinner, he was super satisfied to have a bowl of this after a Tiring Day.


Ingredients
1 Cup Rice, Cooked ( i have used Basmati Rice)
2 tbsp Roasted Gram/Chutney Dal
1 tbsp Peanuts, Skinned
4-5 nos Red Chillies
2 cloves of Garlic, thinly sliced
2 tbsp Dessicated Coconut
4-5 Curry leaves
1 tsp Oil
Salt to taste


Seasoning
1 tsp Oil
1/2 tsp Mustard Seeds
hing a pinch
4-5 Curry leaves 
2 tbsp Chopped Almonds
Method
Heat a tsp of oil in a Pan, add Roasted Gram and Red Chillies. Warm it up a little. Add Peanuts and Garlic and Keep Roasting. Once the Peanuts change color a bit, add Dessicated Coconut and Curry leaves. Roast it  for few more seconds. Put off the flame. Let it cool. Grind this to a fine powder.
Heat oil in the same pan, Splutter mustard seeds, add hing and curry leaves.
Add Almonds and fry them. Once the almonds are roasted, add Rice and Sauté for a minute, add the Grounded Dal Powder, Salt and Mix well with Rice. If the Rice Mix is Dry, add some more Oil/Ghee. Serve with Chips. Makes a Good Lunch Box Recipe. The Dal Mix can be Powdered prior and stored  in an Air-tight container.

Purple Cabbage Rice - Blogging Marathon Day 4

I have always used Cabbage to make Kootu or plain curry with Grated Coconut and green chillies. Never tried them as Rice Mix.  Once Saw Nithya's Purple Cabbage Rice and Fell in love with that Color. Came across a Cabbage Rice (Normal Green Cabbage)recipe in Mallika Badrinath's CookBook, made it using Purple Cabbage for today's Lunch!!! Tasted so Good and though I didnt get the color like Nithya, it was fine.  Surprise your fellow's with this Delicious, Colorful Rice, if they don't find this Nutritious Veggie Interesting!!!!


Ingredients
1 cup Rice, Cooked
1 cup Purple Cabbage, Shredded/Finely Chopped (Green Cabbage can also be used)
2 Medium Onions
3 tbsp Oil
Salt to taste

Grind Together
1/4 Cup freshly grated Coconut
2 tbsp Roasted Gram dal
8 - 10nos  Green Chillies
1/2 inch Ginger
1 bunch Coriander leaves

For Seasoning
1/2 tsp Mustard
1/2 tsp cumin Seeds
2 nos Red Chillies
1 tsp Gram dal (Optional)
4-5 nos Cashews (optional)
Method
Grind the Masala to a fine paste using minimum water.  Heat Oil, add the seasoning ingredients one by one.  Add finely chopped onions and fry till crisp. Add Shredded/Finely Chopped Cabbage and fry till cooked.  Add the grounded masala and fry till nice aroma arises.  Add Rice and Salt and fry in a high flame for few minutes.  Garnish with Coriander leaves.

Tomato-Garlic Rice - Day 3 Blogging Marathon

Another Quick to make Rice Recipe is Tomato Rice. There are 'n' number of ways to make this simple, yet tasty rice. I love this with a dash of Garlic and crunchy nuts.

Ingredients
1 Cup Rice, Cooked
2 Large Tomatoes, Cut into 1 inch Cubes
3 Green Chillies, finely Chopped (can be increased, according to taste)
5-6 garlic flakes, thinly sliced
1 tbsp Freshly grated Coconut
Salt to taste
2 - 3 tsp Oil/ghee
1/2 tsp Mustard Seeds
1/4 tsp turmeric powder
Hing a pinch
Roasted Cashews, Fresh Coriander Leaves for Garnishing
Method
Heat Oil/Ghee in a Kadai, Splutter Mustard Seeds, add hing. Add Garlic and Chillies. Once the garlic turns brown, add Tomatoes and turmeric powder, add little water and Cook until Soft. Keep the Flame low while cooking tomatoes. Once they are done, Add Coconut and Put off the flame. Add Rice, Mix well. Adjust the Salt. Garnish with Roasted Cashews and Fresh Coriander. Serve Hot with Raita or Some Crisps!!!
You can replace cashews with roasted Almonds or Peanuts. If you want the rice to be more spicy, try adding 1 or 2 Red Chillies while seasoning or add some Pepper Powder while serving.

Verkadalai Saadam/Peanut Rice - Day 2 Blogging Marathon

The Second Day of Blogging Marathon, Love the rush to do the post before the day ends.  I Recently got my hands on Ms. Mallika Badrinath's Rice Delights.  What an amazing collection of Rice Dishes. I m Picking up Dishes, which is easy to make it during the Morning Rush!!! These ingredients can be Roasted and Powdered earlier and mixed up easily for your Lunch Box!!!!
Ingredients
2 cups Rice, Cooked
1 and 1/4 Cup Roasted Peanuts
1 tsp Sesame seeds
8 to10 Red Chillies
1/4 Cup Grated Dry Coconut
1/2 tsp turmeric powder
Salt to taste
2 tbsp Oil

For Seasoning
1/2 tsp Mustard seeds
3/4 tsp Gram Dal
Curry leaves a few
Method
Remove the outer skin of the roasted peanuts and pound it coarsely.  Heat a tsp of oil and fry red chillies and dry coconut till light brown.  Powder Separately.  Dry Roast sesame seeds till light brown and powder separately. Heat oil and fry the seasoning till golden brown.  Add turmeric powder and pour rice with salt and other powdered ingredients.  Mix well and Serve.

Pepper (Brown) Rice

Ingredients
1 Cup Brown Rice, Cooked
1 - 2 tsp Ghee/Gingely Oil
1/2 tsp Mustard
1/4 gram dal
1 pod Garlic, thinly sliced
1 tsp Grounded Black Pepper
few Curry leaves
Salt to taste
Toasted Almonds, Coriander Leaves for Garnishing
Method
Heat a Kadai, first dry roast the curry leaves. Add a tsp of Ghee/Oil, Splutter Mustard seeds, add Gram Dal, let it brown. Add Thinly sliced Garlic, fry them. When the garlic turns brown, Add Pepper Powder, Fry it for few seconds, Add Cooked Brown Rice, Crushed Curry leaves and Mix Well. If the Rice mix is Still dry, add another tsp of Ghee/Oil. Add Salt and Combine well. Garnish with Toasted Almonds and Coriander Leaves. Serve Hot with Pappad. We actually had it as such. Brings great relieve to Sore Throat!!!!!! 
I have made this using Brown Rice, you can make it White Rice also!!!!! For Health Reason's and to keep my guilt feeling off!!!! i will be using mostly Brown Rice for all my Rice Recipes!!!!!
