Cauliflower Fritters Sandwich

Made some Cauliflower fritters for Friday lunch. Had some leftover after Lunch. Didn't want to waste them, so made sandwich for evening snack.  It was a Superhit!!! Sending this Kids Delight - Dressing up Leftovers, hosted by Harini, event by Srivalli

Ingredients
4 slices of Brown Bread/Wholemeal Bread/White Bread
2 Slices of Cheese
2 tbsp Green Chutney
1/2 Cup Cauliflower Fritters (about 5-6 fritters, cut into half)


Method

  • Toast the bread slices in a Pan
  • Apply Green chutney on one side of slice and place a cheese slice
  • Place 3-4 halves of the fritter on top of the cheese slice and close with another bread slice.
  • Toast until Crisp. Serve Warm with Sauce.

Tomato Pulav - Blog Hop Wednesdays

It is Week 7 of Blog Hop Wednesdays. This Week i m paired with Saraswathi of Saras's Kitchen. She has a Lovely Blog!!!! I wanted to try her Pasta vadai too, but couldnt make it for the Hop, But would definitely make it some other day!!! This Tomato Pulav recipe, got my mind, coz i had a similar recipe given by my Co-sister. My FIL was all praises for her after trying this Pulav at her place, so i called her up and got the recipe, But still didnt try it out. When i was browsing thru  Saras Kitchen, i remembered that and bookmarked this immediately for the Blog Hop!!!!!

Ingredients

1/2 Cup Brown Basmati Rice
1 cup tomato juice (Juice of 1 Large Tomato)
1 Cup Thin Coconut Milk ( i used Store-bought Powder)
1 Green Chillie, slited lengthwise
1/2 tsp ginger-garlic paste
1 tsp Red chilli powder
1/2 tsp Kitchen King Masala
1 Medium Size Onion, thinly Sliced
1 Pod of Cardamom
2 Cloves
1 bay leaf
Salt to taste

Method
  • Soak the rice in water for 20 minutes.
  • Heat oil in a pan, add bay leaf, cloves, cardamom and saute.
  • Add onions and green chilli, ginger-garlic paste and saute till onion turns translucent
  • Add tomato juice, coconut milk and the masala powders and mix well.
  • Let the Mixture boil well, add the drained rice.
  • Cover and cook, until done.
  • Serve hot with Crips or Some raita. We enjoyed with Plain yogurt and chips.

Vegetable Cheese Puffs for Blog Hop Wednesdays

I feel like i m doing a Blog Marathon this week, coz every single day i do a post, thanks for all the events and me being a lazy!!!! Its Blog Hop Wednesdays!!! yeah, yeah i m late again, doing Wednesday's post on thursday!!!! See the Green side,  i dont want to miss the event!!! This Week i m paired with Madhusmita of Redspice. I loved her Cheese Puff Pastry, I have made small changes with the stuffing inside and it turned out yummm!!!! Please follow the link for the Original recipe

Ingredients
10 nos Puff Pastry Sheets (10 palm-sized squares)
1 Cup Mixed Vegetables (Carrot, Potato, Beans, Corn and Peas)
1 Large Onion, thinly sliced
3 Green chillies, finely Chopped
1/2 tsp Everest Kitchen King Masala
1/2 tsp ginger-garlic paste
salt to taste
5-tbsp shredded Mozarella Cheese

Method
  • Take the Mixed Vegetables in a Microwave Safe Bowl, Add enough water for the veggies to cover, MW high for 10 minutes. This will make sure that the veggies are cooked well. Drain the excess water.  Reserve the drained water and use it for making roti's or add it to Soup!!!!
  • In a non-stick pan, heat oil and add slited green chillies,ginger-garlic paste and saute till the rawness evaporates. Add Chopped onions and saute till they turn pink
  • Add The mixed veggies and the masala powder and cook in a low flame.Add salt and Sprinkle water to prevent burning of the masala's. 
  • Cover and cook for 5-10 minutes and put off the flame. Let this mixture cool well.
  • While the filling is getting ready, prepare the Puff pastry sheets. Take them out of the refrigerator and thaw.
  • Take one Square of Puff pastry, Place a spoonful of Filling in the middle, sprinkle cheese on top of the filling and bring the ends of the Pastry together and form a triangle and seal the edges by pressing them lightly. Brush the top with little oil.
  • Bake them in  a Preheated Oven @ 200C for 20-22 minutes.
  • Serve Warm with Chutney of your Choice. We enjoyed it with Some Coriander chutney and tomato Ketchup!! 
Notes
Baking Time varies from Oven to Oven, so Bake accordingly

Apple Halwa Tarts for Sweet Punch October 2011

Its Sweet Punch time!!! This time we baked Jam Tarts from Rias Collection. I have tried Apple halwa filling, instead of the Jam Filling. After Navarathri, we are leftover with so many Apples from the Thambulam bags, i keep making something with them. I have halved the original recipe.  Warm Tart with Apple Halwa tasted heavenly. Hope you guys enjoy this!!!!

Ingredients for the Tarts
1/2 Cup All purpose Flour
1/2 stick Cold butter
1/4 tsp Baking Powder
Salt a pinch
Few drops of Water
A small piece of dough was leftover, made these designs using them

Method
  • Sift together Flour, Salt and Baking Powder in a bowl.  
  • Cut the Butter into small pieces and rub into the flour. the flour will resemble bread crumbs.  
  • Sprinkle few drops of water and make the dough.
  • Roll out the dough in between Wax paper and Cut it into small rounds using a cookie cutter.

  • Spread the Cut dough onto the tart-tin. Spoon in the filling and Bake in a Pre-heated Oven @ 180C for 18-20 minutes.
  • When done, take it out of the Oven and let it cool on the Wire Rack.  
Apple Halwa Ingredients
5 Medium Apples, Soft ones, Cored and Grated
1 cup Sugar
5-6 Pods of Cardamom Crushed
3-4 Cloves
Roasted almond flakes for garnishing.

Method
  • In a Non-Stick Pan, take the sugar with half cup of water and let the sugar melt. 
  • Add the Shredded apple to the Sugar  and Combine Well. 
  • Add the Crushed Cardamom and Cloves to this.Let the Mixture Cook Well. 
  • When Mixture thickens well and leaves the sides of the pan, Take it of the Stove and Garnish it with some roasted almond flakes.
Notes

  • The filling can even be a Savory one. So, Go on Experiment!!!! 
  • Baking time differs from Oven to Oven, So Bake accordingly

Cardamom Flavored Apple Pannacotta

Navrathri was Wonderful, Loads of fun, Lot of Friends, and Loadzzz of Sundal and Sweets!!!! We had many friends visiting during Navrathri. After the Pooja, it looks so dull and boring, with only me being around. One of the pooja days, i made this Apple Pannacotta, turned out good. An Easy way to sneak in some Fruits into your Kiddo's Diet, if he/she is an Fuzzzzzzzzy Eater like mine!!!!!!!

Ingredients
2 cups of Whipped Cream
1/4 cup China Grass/Agar-Agar
4 tbsp Sugar
1 Large Apple, thinly sliced
2-3 pods of Cardamom, crushed
Chopped Nuts for Garnishing, i have used some Almonds and Pistachios
Method
  • Soak China Grass/Agar-Agar in half cup of water for 10 minutes. 
  • Heat it in a pan, dissolve it, Strain it and keep aside. But, make sure it doesnt stay aside for long, it jells fast!!!!! 
  • In a saucepan, add cream and sugar, and heat it over medium heat.
  • Let the cream simmer for few minutes, Add Sliced apples, Crushed Cardamom and the melted agar-agar,Combine Well. 
  • Remove from the flame and let them cool for some time.
  • Pour them Small Individual Bowls, Garnish with Nuts and Refrigerate them for 6 hours At-least and Serve.

Walnut Halwa - Old Recipe Revisited

This Recipe is one of the oldest recipes in my blog. When i posted it for the first time, i didn't take any picture of it, i just posted only the recipe. Made this again after a very long time for my DH Birthday. We had a Halwa-Cutting Ceremony, instead of the traditional cake-cutting!!! :) 
I was planning to post it by last week But, Navrathri Celebrations and the Pooja, i really couldn't find time to sit and do a post.  Lets move on to the recipe of Walnut Halwa,  an Healthy Combination of Vegetable and Nuts.

Ingredients
2 Cups Walnut - (Soak in warm water and remove the skin) 
2 cups  Grated carrot 
1 Cup Milk 
11/2 Cup Sugar
1/2 Cup Ghee
5-8 pods Cardamom Crushed
Nuts For Garnishing


Method

  • Grind Walnuts and Carrot adding little milk. 
  • Heat a heavy bottomed pan add walnut-carrot paste, the remaining milk, sugar and ghee. Keep the flame low and Stir occasionally. 
  • When ghee start leaving the sides add cardamom and mix well. Take it off the flame and garnish with nuts.
  • I used two small Silicon Heart-Shape Moulds for shaping the halwa.  Before pouring them to the mould, i scattered some roasted almond flakes in the mould and spread the halwa on top.
