Cucumber & Carrots Chia Savory Breakfast Pudding - Chia Savory Pudding

Chia is my recent favorite for breakfast, though i have tried it as dessert with coconut milk and fruit options many times. But i do not prefer sweet things for my breakfast, i need spicy, tangy deliciousness for breakfast! So, i experimented with chia and buttermilk. Oh my the first time i tried it with turmeric mint chutney it was out of the world. From that time, i have chia pudding once a week. It is a simple no-fuss breakie. Just soak it up overnight, add the chopped veggies, add some chutney and you are done.
The chutney makes it more interesting, change your chutney and you will have a different flavor everytime. I have even had it with some chana masala, paneer masala, anything spicy works like magic.
Ingredients
3 tbsp chia seeds
1 cup buttermilk (use 1/2 cup curd and 1/2 cup water whisked well together)
1/2 a carrot, thinly sliced into roundels
1/2 a cucumber, thinly sliced into roundels
2 tbsp mint chutney
salt to taste (optional, i never add)
Method
  • Soak chia seeds in buttermilk overnight or atleast 3-4 hours minimum.  I usually soak 4 hours minimum. I soak it around 7 in the morning and have it for breakfst around 10:30 or 11 am.
  • Once the chia is ready, there is nothing more to do. Add mint chutney to the bowl, mix it well, add chopped cucumber and carrots to it. Mix well and enjoy.

  5. I have never used chia in savoury breakfast dishes. This one with salad and chutney looks so delicious and must have tasted amazing. A healthy protein packed start to the day.

  8. wow such an amazing recipe and I am lover of such spicy tangy breakfast too priya :) how wonderfully you have arranged those veggies on top and dollops of those flavorful mint chutney on the white buttermilk is just lip smacking... I loved the presentation a lot !! It is healthy and a colorful breakfast to indulge in morning :) I just need a bowl of such colors added to make my morning brighter :)

  13. Priya, I am yet to try anything with chia. I have a huge bag of it and I have not yet touched it. I am big fan of savory breakfast and this would definitely be something I would love. I am definitely making it this week for my breakfast and I will let you know how I liked it.

  14. Oh ! I am soooo gonna make this ! I am also a spicy tangy breakfast person, have never liked sweet oats or any of that stuff . I am hoping my kids might like this too !
