Quick Cheesy Capsicum Sandwich

After a long break, i m posting today. Been kind of busy with my kid. My laptop was not keeping well, it took an uninformed break, went for little vacation and came back rejuvenated this week!!!! 
I m starting with an Easy to make and a healthy Breakfast/Snack Recipe. In our home, most Sunday (week beginning) breakfast would be bread. Normally i pack it with jam/cheese spread/Nutrela. But this time, i thought of making some interesting spread with cheese and veggies.
The combination of Cheese and capsicums sandwiched between brown bread, a real healthy and filling breakfast that charges you on for a busy day ahead!!!!

8 slices Brown Bread (you can use the bread of your choice white/brown/whole-meal)
2 medium Capsicums , thinly sliced
3 green chilies, finely chopped (you replace this with Chili powder/pepper)
1 onion, finely chopped
1/4 cup Shredded Mozzarella Cheese
1/2 tsp oil
little salt to taste


In a Pan, add oil, While it is hot, add onions and green chilies and saute until onions are translucent. Then add capsicums and mix well, saute for a 2-3 minutes. We dont want the capsicums to turn soft and mushy!!! so, take care!!!!! Add little salt, since we are going to add some cheese, which already has some salt, so just SPRINKLE some on the capsicum!!!!

Switch off the flame, add the cheese and give a quick toss/stir and transfer the contents to another bowl. Mount the tawa on the stove, Start toasting the bread, Spread 2-3 tsp of the filling in one slice, close with it another and toast both sides until crisp. 
If you are packing it for kids, skip the chilies, add chilli powder or go for Pepper.

One of my FB Friends, tried this recipe and suggested that, using a spread makes this sandwich, even more yummy!!!
I tried using Pizza Sauce, It tasted great!!! Try any Spicy Spread, to give it an Extra Zing!!!!!
