The Swirl Smoothie

Some days, I don't want to overthink recipes. Just open the fridge, pick what's fresh, and blend something quick for the boys.

That's exactly how this apricot strawberry swirl smoothie came together.

I had these gorgeous apricots that were perfectly ripe, and a batch of strawberries that needed to be used soon. Instead of blending them into one, why not keep them separate and make it a little fun?

The result? A simple, refreshing smoothie with a pretty swirl that instantly makes it feel special.

And honestly, that little swirl made all the difference, the kids loved it even more. This smoothie works beautifully as a refreshing midday cooler, a quick after-school drink or a light summer breakfast.

Ingredients for the Fun Swirl Smoothie

  • Apricots and Strawberries. I prefer fresh fruits for this smoothie. if making with frozen fruits, i would suggest resting them for 10 minutes to thaw and blend. For easy pourable consistency to get the swirls.
  • Milk. I have used full fat milk. If making vegan, i would suggest using oat milk.
  • Dates , I have used dates for the apricot smoothie. Gives that beautiful amber hue to the smoothie.
  • Almonds, again used in the apricot smoothie. Adds a nice creaminess to the smoothie. If allergic, you can completely omit this.
  • Sugar, optional, use if needed for strawberry puree.

Breakfast Inspirations

At home, my boys love hearty breakfasts, and as toddlers, they enjoyed colorful smoothies. Banana & fig smoothie, mango musk melon smoothie were some recipes which were on a repeat.

These crunchy apam balik peanut pancakes and apple pancakes too were regularly made in the kitchen.

Younger fella loves yogurt smoothies. I still try to make it interesting for him with Gooseberry buttermilk and beets buttermilk.

Pancakes are now a rare treat, and the boys cherish dad's sandwiches. These capsicum cheese sandwiches are my husband's specialty and my favorite is Banana honey walnut sandwich.

Our friends too, enjoy our sandwiches, so I make vegetable cheese toast and bun pizza for our get-togethers. Both the recipes are made in the oven, easy to make for a crowd.

How to Make Apricot Strawberry Swirl Smoothie

  1. Prepare the fruits. Wash and prep apricots and strawberries .
  2. Blend the apricot layer. Blend apricots with milk and dates until creamy.
  3. Blend the strawberry layer. Blend strawberries with milk until smooth. Keep aside.
  4. Create the swirl. I served in two 300 ml glass.
  5. First, pour apricot smoothie until it reaches ¼th of the serving glass. Next, add 2 tablespoon of strawberry smoothie. Then pour another ¼ cup of apricot smoothie. Finally, add another 2-3 tablespoon of strawberry smoothie.
  6. Serve immediately. Take a long straw, swirl the smoothie, to get the beautiful marble pattern. Serve immediately. Best enjoyed fresh and chilled.

Variations you try

  • Add a banana for added creaminess and natural sweetness to the smoothie. If adding banana you can skip the dates.
  • Use plant-based milk for a vegan version. I have tried with oat milk and found no difference in taste.
  • To make it more fun and irresistible, turn it into popsicles for kids. You can add some strawberry bits or 2-3 blueberries for that texture.

Ingredients

Apricot smoothie

  • 3 fresh apricots pitted, chopped into chunks
  • 1 cup milk
  • 3 dates, any soft variety pitted
  • 5 almonds

For the Strawberry swirl

  • 1 cup fresh strawberries

Instructions

Let's make strawberry puree

  • If using frozen berries, leave it on the counter for 15 minutes, so it will be easy to blend them.
  • If using fresh, you can blend them directly.

Let's make Apricot Smoothie

  • Take cut apricots, dates, almonds along with milk and blend smooth.

Let's make Swirl Smoothie

  • Now to serve, take two 300ml glasses, Pour apricot smoothie till ¼th of the glass, top with 2-3 tablespoon of strawberry smoothie on it, top it with another ¼ cup of apricot smoothie, followed by 2 tablespoon of strawberry smoothie.
  • Take a long straw and swirl the smoothie to get beautiful patterns on top. Serve immediately.

I m not a tea person, usually! First thing i need in the morning is my coffee!! oh yes, that is my petrol that gives me the kick start i need for a busy morning. In the evening, i have my orange flavored green tea. I feel like zen while sipping that warm cup.
A month back, i received a mail from Assam 1860, asking whether i can give my opinion after tasting their finest tea.  I told them i m in UAE and if they are ready to send the package here, then i m all in. They did send me a package containing few packages of Tea bags and a pack of loose tea.

I made a cup of Sulaimaniya Tea the same day and loved the taste. But then i wanted to experiment with flavors, since i love my orange-green tea, i thought of making the same with this black tea. I m happy i did, loved that refreshing taste, planning to experiment some more flavors, so watch this space for more Chai recipes. Thanks to Assam1860 team for giving me the experience of finest tea with amazing earthiness and flavor.
Apart from the flavor one more thing i enjoyed is their tea bag itself, they are not the normal paper packed bags, but cute nylon bags, which i feel is lot less messier!!
Before going to the recipe, let us know about the brand Assam1860.
Assam 1860 is a black tea made only from leaves plucked in the picturesque Thowra Estate, a chai bagan set up in 1860. The leaves are plucked, processed and packed in the estate itself, ensuring quality and freshness that is unparalleled. 

Assam 1860 is a newly launched black tea brand from James Warren Tea Estates.They source their single origin and un-blended tea from fairly-owned tea estates of James warren in the south bank of Assam, the climate and the soil in this region give the tea bushes an inherent quality that cannot be replicated. 

Do you know what is Chai Bhagan Time??Tea gardens in Assam do not follow the Indian Standard Time (IST ), which is the time observed throughout India and Sri Lanka. The local time in Assam's tea gardens, known as 'Tea Garden Time' or Bagan time, is an hour ahead of the IST.  The system was introduced during British days keeping in mind the early sunrise in this part of the country.
By and large, the system has been successful in increasing the productivity of tea garden workers as they save on daylight by finishing the work during daytime. Working time for tea labourers in the gardens is generally between 9 a.m. (IST 8 a.m.) to 5 p.m. (IST 4 p.m.) It may vary slightly from garden to garden. Though this time setup  was dropped for some time in the middle, but from a source i read in the web, last year the Chief Minister of Assam Mr. Tarun Gogoi, announced it will be followed from now on, but i m not sure whether it is implemented yet.

Ingredients

1  Assam1860 Tea bag
¾ cup warm/hot water (i prefer hot tea)
2 tablespoon of freshly squeezed orange juice
1 or 2 squeezes of honey

Method

  • Keep your tea glass ready with the tea bag by your side. Add warm/hot water to it, Let it sit for 2 minutes for the flavor to mingle, add orange juice and honey to this, stir.
  • Drop a small wedge of orange, Sit back, Sip and relax!!!

My first experience of a product review was very interesting. Right from receiving the package all the way from India till my taste-testing and the experiments with tea was one joyful experience . I m still using the tea bafs, yet to use the loose tea, planning to make a strong madala chai with it sometime soon.

Porridge

Porridge, Conjee or kanji is an essential part of Asian Cooking. The English porridge usually refers to the oatmeal porridge, which is usually sweet. Whereas our Conjee or kanji refers to the savory porridge.

Infants commonly start weaning with porridge. I remember feeding my babies this rice flakes and carrot porridge. Easy to digest and also a great way to experiment with taste for their age.

Even adults when sick, prefer a simple porridge like this mixed millets kanji or ragi porridge.

Most of these porridges sound like recent inventions. However, our grandparents and great-grandparents had something even more nutritious and hearty. It was also very easy and simple to make, the humble leftover rice porridge.

What is Neer Aagaram | Leftover Rice Porridge?

Neer means 'water' in tamil and aagaram means food. So Neer aagaram literally translates to Water food. It is called by many names like thanni soru, pazhaya soru, pazhaya kanji etc.

This simple recipe involves fermenting cooked rice overnight in water. The next morning, mash the rice into the water by hand, then add buttermilk and salt. Serve with desired accompaniments. In simple terms, leftover rice porridge.

Fermented foods have been an important part of the human diet from the time immemorial. When i asked amma, she said they eat it just with salt and buttermilk. But the rice is usually soaked in starch, that is removed from the cooked rice. I too remember my aunt making it with strained starch with a small amount of curd.

This neer aagaram can also be made with millets. Like this varagu arisi neeraagaram and bajra neeraagaram.

Why Fermented Rice?

Fermented rice has been a staple in the Indian diet for centuries. It is a widely enjoyed breakfast food. It is called by Panta Bhat in Assam , Geel Bhat in Bihar, Chaddannam in Telegu. With slight variations in the way it is prepared and served.

But the base of all these names remains the same Fermented rice. It contains a high amount of probiotics. These probiotics are associated with a wide range of health benefits, including improved digestion and immunity.

Studies have shown that the availability of micronutrients like B complex, vitamin K, calcium, iron, magnesium, potassium, and selenium increases drastically in rice, after the the process of fermentation.

Not only this simple rice kanji, even idly, dosa, uthappam too are part of this fermented food family.

The Health Benefits of Pazhaya Kanji

According to Dr. Madhumita Barooah, an academic researcher "About 100 gm of cooked rice has only 3.4 mg of iron. For the same quantity of rice fermented for 12 hours, the iron content went up to 73.91 mg. Likewise, sodium, which was 475 mg, decreased to 303 mg. Potassium increased to 839 mg. Calcium increased 21 mg per 100 gm of cooked rice to 850 mg after 12 hours of fermentation.

All this benefits just from leaving the rice to ferment overnight. While my mom has had it just with salt and buttermilk. As time evolved, we got creative and serve this humble rice gruel with lot of options.

How I served this Nutritious Porridge

A simple meal can be elevated and made into a spread with the condiments. I served this humble rice porridge with a variety of condiment for the flavors and texture.

The Ingredients for this Humble Breakfast

  • Rice : The main ingredient for this nutritious breakfast is cooked rice.
  • Liquid : For this kanji have used plain water to soak the rice and greek yogurt to mix it with.
  • Spices : I have added salt, hing, and green chili. Ginger and fresh coriander stalks are also included to make this porridge.
Ingredients to make pazham kanji
  • Garnish : I have added finely chopped carrots and cucumber to this porridge. You can also add shallots, fried curd chili, raw mango etc.
  • Add-ons : i have served this porridge with a side of coconut chutney, fried lotus stems and fresh veggies.

Step by Step Instructions to make Pazhaya Kanji

  • Soak leftover rice in water and leave it overnight. If the climate supports on the kitchen counter. If not, leave it as long as possible on the kitchen counter and then you can refrigerate it later.

  • Next day morning, take the rice. Mash it roughly with your hands.
  • Take the greek yogurt with water, chili, ginger and coriander stalks. Add salt and hing Blend it smooth.
  • Add this spiced buttermilk to mashed rice. Add chopped cucumber and carrots to this and serve.

Some FAQ's

Can I use full fat/low fat curd or buttermilk for this Porridge

Yes you can. I have used Greek yogurt just to increase the protein factor of the meal.

Can I make it Vegan?

Personally i have not tried this. But you can use peanut curd or tofu buttermilk to make this recipe vegan.

Can I leave the soaked rice in the refrigerator?

Yes you can, if the temperature in your place is not suitable for the rice to rest on the counter. I live in hot temperatures. So I try to leave the rice as long as possible on the counter and then refrigerate it. Next day morning, take the rice out and leave it on the counter for an hour.

Can i make this Fermented rice porridge with other grains?

Yes you can. I have made this porridge with millets. I think you can also try it with quinoa.

Ingredients

  • 120 grams cooked rice
  • 150 ml water for soaking rice
  • 250 ml water for blending the yogurt
  • 160 grams greek yogurt
  • ½ green chili
  • 10 grams fresh ginger
  • 10 grams coriander stalks
  • ½ teaspoon cumin seeds
  • ½ teaspoon salt or to taste
  • ¼ teaspoon hing or asafoetida

Garnishes

  • ½ carrot chopped fine
  • ½ cucumber chopped fine

Instructions

  • Soak cooked rice in water overnight. If the climate is good, leave it on the kitchen counter. If its too hot, and there is chance of it going bad, then leave it on the counter as long as possible then refrigerate it overnight.
  • Next day morning, if in the refrigerator, take it out and leave it on the counter for an hour.
  • To a blender add greek yogurt, chili, ginger, salt, hing , coriander stalks, cumin seeds and water. Blend it smooth
  • Take the soaked rice and mash it roughly with your hands. Add the blended yogurt to this. Mix well.
  • Add chopped cucumber and carrot. Add coriander leaves.
  • Serve immediately. i served with some crispy fried lotus stem, fresh veggies and coconut thuvayal.

Notes

  • I have used greek yogurt for the protein factor, you can use normal yogurt too.
  • When i spoke to mother about this recipe. She mentioned that they used to soak the rice in  strained rice starch and little curd. You can try that too. 
  • They used to have it plain with just salt and thin buttermilk. Sometimes maybe onions and pickle. 
  • Since i don't use onion and garlic at home, i have skipped onions. You can also use finely chopped shallots. 
  • Add some crispy fried curd chili too, it will add more flavor to the simple meal

Mastani, the name brings a kick with it, isn't? Mango mastani, yummilicious drink of mangoes topped with ice-cream and served with nuts garnished, i have watched this mastani in many blogs and have literally drooled over it! I chose the theme : summer coolers, thinking of Mastani!
Let us know a little bit about the drink before learning how to make it. Mastani is a famous drink from Pune in India, land of Peshwa's and the Maratha's. A place that still preserves its cultural heritage and history with its mighty forts and food of-course.
While searching for the root of mastani, i came across some articles and videos on the Web, thanks to my curiosity, i still love to learn about food and its origin. 
One of them says, it is named after the legendary Peshwa ruler Bajirao's Love, gorgeous Mastani and the drink too is such a beauty so, it is named after her. 
Other story says, when it is served, the first thought that hits your mind is how 'mast' it is, meaning how awesome it is, hence the name mastani. 
True to its name, it is one of the easiest, most deliciously looking and tasting drink ever. And with mango season in full glory, you should definitely try making this.  
If you are interested to read about the article here it is Story Behind Mastani. Here is the video how they make it. I love the way they crush the fruit straight in the glass and top it with fresh milk, wish someday i can visit pune and taste this awesome drink. For now enjoy making it at home! 
Ingredients (serves 2 tall glasses or  4 small glasses)

3 well ripened mangoes
1 cup chilled milk
3-4 tablespoon sugar (optional)
Mango ice-cream as needed (2 small scoops/person)
Few chopped nuts for garnish
(i have used almonds and pistachios)


Method

  • Wash and chop the mangoes, remove the pulp. Take the pulp in a blender, add chilled milk, sugar and blend smooth.
  • Pour the smoothie in tall glasses till ¾th of the glass, top it with mango ice-cream, garnish generously with nuts and serve immediately.

The toughest theme in our Blogging Marathon, is the bookmarks theme! Duh! As a foodie, anything that catches your eyes and thrills your senses, you bookmark it, pin it, yum it! This happens almost every day, every hour! Thanks to FB intelligent feeds and google intelligent algorithms, they identify our pattern so well, our feeds are filled with 1 minute food videos, which is  also getting saved and FB reminds me, every now and then, you have so many unopened saves!!
To choose 3 posts from that huge bookmark ocean is such a pain, my mind was like a kid in a candy store, but with a strict mommy by my side!
Finally i chose 1 for today's post, i haven't decided what i m going to make tomorrow and the day after, let us cross the bridge when it comes.  
So, going to today's recipe, the word kuluki is the reason i m dragged to this recipe, yeah, like that word kuluki, meaning shaken, like how a bartender shakes the drink!
It was interesting to read the story how the sharbath became so popular in God's Own country - Kerala.  Few tourists, taught a street vendor shaji - fondly called shajika how to make this sharbath and he sold it for just 5 rs and that simple drink became a rage. Do check this page and read about the sharbath that shook the world
It is a simple lemonade recipe, some recipes i came across in the net,  use basil seeds,and some don't. I don't claim mine to be an authentic kuluki sharbath. I love the basil seeds in the lemonade, so i have added them. Also the chili and ginger adds a nice zing to the drink , if you don't prefer the slight tinge of spice, omit them. It is a fantastic drink to enjoy on a summer day.
Ingredients
juice of one large lemon (approximately 2-3 tablespoon of lemon juice)
2 cups of ice cold water
2-3 tablespoon of sugar/honey/agave
1 teaspoon sabja seeds/basil seeds
½ teaspoon freshly shredded ginger, optional
½ a green chili, finely chopped, optional
a dash of salt and pepper
Ice cubes and lemon rinds for serving
Method
  • Soak sabja seeds/basil seeds in 2-3 tablespoon water for 10 minutes. It will absorb the liquid and swell up beautifully.
  • In a large pitcher, add lemon juice, flowered basil seeds, 1.5 cups of cold water, add shredded ginger, chopped chili, sugar, salt and pepper and shake to mix well. i used my immersion blender jar with lid for spill-proof shake.
  • Taste the lemonade, adjust water according to your taste. The chili and ginger adds a nice a flavor, but if you don't prefer avoid them.
  • To serve, fill tall glasses with lemonade, add a lemon wedge, few ice cube and serve it chill.

Melons & Mangoes

Fruit smoothies are my family favorite, easy to make and better than the bottled drinks available ready in the market.

Mango and musk melon both are summer fruits and we do get lots of fresh seasonal fruits here in UAE. Melons are my little ones favorite fruit. He loves rock melon and watermelon. This Watermelon salad, used to be his favorite, he will pick out the round watermelons scooped with melon baller and gobble it up, leaving us with the rest. When he was 2 years old, he used point the at the yellow pumpkins cut and kept in the supermarket, thinking they are his favorite rock melons.

After melons his favorite fruit, till date is mangoes. When he was 1 year old, we visited Tirupati as part of traditional ritual, he ran behind every hawker selling cut mangoes in Tirumala. My in-laws are mango maniacs. My father-in-law knows every variety of mango and which fruit seller will have them during their season. If we were in Chennai, during mango season, he would shower us with the best mangoes.

The Recipe

Today's Melon & mango smoothie was made 5 years before when we were enjoying our vacation in Chennai, during the summers. The season for both melons and mangoes.

Since my little one loves both the fruits, I made a smoothie with them. A simple recipe, with milk. Just blend chunks of both the fruits, check and add sugar if needed.

If you want more of mango flavor, use little extra mango chunks if not equal amounts of both the fruits gives a good balance of flavors. If you love the taste of these 2 fruits together, then try this Mango-musk melon chia pudding

The Ingredients

  • Mango, I have used Banganapalle variety of mango for making this smoothie. But any juicy variety of mango can be used.
  • Musk melon, I have used the yellow melon called as cantaloupe.
  • Sugar, if needed. I have not used in this smoothie
  • Milk, I have used regular cow's milk, full fat. If vegan, replace it with plant-based milk.

  • 1 Fresh juicy Mango i used Bangapalle vareity
  • ½ a Musk melon/cantaloupe flesh scooped out
  • ½ cup milk

Instructions

  • Cut the mango, remove the flesh part alone. Don't forget to lick clean the seed.
  • Remove the seeds of the melon, cut the fleshalone.
  • Makes rough cubes of the fruits and take it in ablender. Blend smooth.
  • Add milk and blend again.  Serve immediately.

Serve this vibrant and delicious mango & melon smoothie immediately. This filling smoothie can be had for breakfast or as a snack.

Agua de flor de Jamaica, also called agua de Jamaica or rosa de Jamaica, is popular in Mexico, Central America, and parts of South America and the Caribbean. The roselle hibiscus used to make the tea likely originated in Africa. In Senegal, It is know as bissap and is also the "National drink of Senegal". In Ghana it is known as "sobolo", and "zobo" in Nigeria.

🍹The Food : Hibiscus Tea

Agua de jamaica means hibiscus water, one of several common agua- frescas, an inexpensive beverage, made from fresh juices or extracts. If you love strawberries, then check this Strawberry agua fresca, pretty pink drink.

I love iced teas. Living in a hot country, iced teas are something we love most part of the year. My favorite is this Ginger and lemon iced tea and Watermelon Iced tea in the season.

I fell in love with the color of ague de jamaica, and wanted to try it. It is a simple, beverage to make. Additional flavorings like cinnamon, ginger can be added to make the tea flavorsome. The drink is a bit tart. Lemon adds a nice zest to it. If you love tangy and zesty drinks, this is definitely for you.

Dried hibiscus flowers

📋 The ingredients

  • Dried hibiscus flowers, we get in all spice shops here. I got my stash from global village.
  • Spices, i have used cinnamon and ginger in the tea.
  • Sugar, to sweeten the tea. I have never tried with any sweetener.
  • Water to make the concentrate.
  • Lemon & mint , while serving the iced tea.

💭How to make the Hibiscus Tea

Please check recipe card below for exact measurements of each ingredient used and also for the detailed instructions.

  • Boil water with cinnamon, sugar and ginger. Add the dried flowers to the boiling water.
  • Switch off the heat. Let the tea steep for 20 minutes.
  • Strain the water and chuck the flowers.
  • To make the tea, Take the concentrate in a pitcher, top it with ice cold water, lemon juice, stir well. Serve immediately with ice cubes.
  • The concentrate can also be refrigerated to make tea anytime needed.

Ingredients

  • cup dried hibiscus flowers roselle flowers
  • ½ inch piece of cinnamon stick
  • 2 tso freshly grated ginger
  • 2 cups water, 1 cup for making tea and other chilled
  • 3 tablespoon sugar or to taste
  • juice of ½ a lemon
  • ice cubes and mint leaves for serving

Instructions

  • Take 1 cup of water in a saucepan, add cinnamon stick, ginger and sugar to it. Let it come to a boil.
  • Take it off the stove, add dried hibiscus flowers to it. Keep it covered. Let it steep for 15-20minutes
  • After the said time, strain the tea to a pitcher, add another cup of ice-cold water and lemon juice. Stir well.
  • Pour it in glasses, top it with ice and serve immediately.
  • Alternatively you can store the concentrate before adding cold water as such in the fridge, and mix it just before serving. 
  • We absolutely love the tangy, zesty taste of the hibiscus tea, a beverage that truly captures all our senses.

This gorgeous looking hibiscus tea was loved by all at home. I made a large quantities of the concentrate and gifted it to my food loving friends too. Yes, they make a wonderful edible gift.

Carrot & ginger lassi, a yogurt smoothie, made with fresh yogurt, carrots and zesty ginger. An instant energy booster and a refreshing drink to quench your thirst during summers.

Dubai summers run from april till september, you can feel the heat until late in the evening. But we can't complain, we just have 2 climates, summer and little winter, though we complain about the heat, that doesn't stop us for enjoying the weather during those times.

Carrot lassi

Summer months are best to enjoy chilled drinks, it also hydrates our system and also a quick energy booster. I try to have lots of lassi/yogurt smoothies during these months. Yogurt cools your body and adding flavors to it keeps it interesting.

My younger one is a big fan of lassi, yogurt blended with water and salt, he can drink a gallon. I try to make add some natural flavors to his drink so that way he doesn't get bored.

Lassi can be made either sweet or savory. Cucumber and mint lassi is pretty famous and most often made in many house-hold. Mango Lassi, an exotic smoothie made with luscious mangoes, yogurt and milk. Turmeric lassi made with fresh turmeric root and yogurt, gives a herbal twist to the simple yogurt smoothie.

Lassi is a great snack to enjoy, it is healthy filled with the goodness of pro-biotics. Adding fresh veggies or fruits make it more hearty and filling.

Carrot yogurt smoothie

The ingredients

  • Carrots, i have par-cooked the carrots in the microwave and then blended with yogurt. If you are fine with the taste of raw carrots in your smoothies, go ahead and use them raw.
  • Yogurt, i have used full fat yogurt, you can also use low-fat yogurt.
  • Ginger, do not miss ginger in this recipe, it adds a nice kick of flavor.

Ingredients

  • 1 small ccarrot cut into roundels
  • 1 tso grated ginger
  • ½ a green chilie optional
  • few curry leaves
  • ¾ cup Fresh full fat yogurt chilled
  • ½ cup water
  • salt to taste

Instructions

  • Take the cut carrot roundels. in a microwave safe mug, add ½ cup water and microwave cook at high for 3 minutes. Let it sit the microwave for another 2 minutes. Take it out. Let the cooked carrots cool for 10 minutes.
  • Drain the carrots, reserve that water, add it soup or rasam or to cook dal. You can also chill that water in the refrigerator and use it in the smoothie.
  • Take the cooled carrots in a blender jar, add grated ginger, chili, curry leaves and yogurt. Blend until the carrots are smooth.
  • Add water and salt, blend again until frothy. Pour it in glasses and serve.

🍹 The Food

All my life, i have tasted only one simple lemonade, sold on the road side carts, they are called lemon soda. The first lemonade i made at home is this Shikanji, a classic Indian spiced lemonade. Then as my taste horizons expanded, i tried interesting flavors. Like this cucumber - mint cooler or this Limonana, a classic middle-eastern slushy like lemonade.

We tasted this striking roohafza lemonade, at a friend's birthday party. My fussy lil one loved the striking red color of the drink. It had a mild rose flavor and the lemon added a wonderful zest. The fun part of the drink was the basil seeds. One of the best party drinks especially for kids.

🧃 What is Roohafza

Roohafza is a popular squash, in the Indian subcontinent. The squash was originally made as a summer coolant. It is a mix of herbs to keep the body cool and prevent water loss during hot summer season.

Roohafza lemonade, Indian style rose sharbat, a very popular during Iftar parties. The lemonade is pretty easy to make, just mix it with proper proportion of water and serve it some interesting garnishes.

💬 How to consume Basil Seeds

Basil seeds, known locally as sabja seeds, falooda seeds or tukmaria seeds.
The tiny tear shaped seeds are often confused with chia seeds. The sweet basil seeds can be used in a variety of drinks and be used as a garnish on ice creams and desserts. An easy recipe to try this basil seeds is this Classic Kulukki Sharbath.

Basil seeds or sabja seeds are usually consumed after soaking in water for 15-20 minutes. These naturally gelatinous seeds swell in water, become soft and translucent to touch.

Sabja seeds are a natural coolant to the body. It is extensively used during summer months. I prefer to add a teaspoon of these seeds to my water bottle with a dash of lemon and mint to keep myself hydrated during hot months.

Rose sharbat

📋 The Ingredients

  • Roohafza syrup, we will be needing less amount of syrup. It is a concentrated squash. So use accordingly.
  • Sugar, to sweeten the drink. Though the drink has some sugar, when we top it with water, you might be needing some sweetener.
  • Sabja seeds, basil seeds. Though it is optional they add texture and make the drink look more pleasing and fun.
  • Water or soda to dilute the drink. I have used water in the recipe, you can also use soda.
  • Garnishes, mint and lemon juice. They add a zest to the drink, do not miss them.
Rose lemonade

💭 How to make Rose Sharbat

  • First soak the sabja/basil seeds in water to swell.
  • In a pitcher add roohafaza, swelled basil seeds, sugar. Top it with enough water.
  • Add mint leaves and lemon juice. Mix well. Serve chilled.

Roohafza Lemonade | Party Drink | Summer Drink

Ingredients

  • 2 tablespoon subja seeds/basil seeds/tukmaria seeds
  • 3 tablespoon roohafza syrup
  • 2.5 cups water ice-cold water
  • 4 tablespoon sugar or to taste
  • handful of mint leaves
  • juice of 1 or 2 lemons depending on taste
  • lemon wedges, mint leaves for garnish

Instructions

  • In a bowl take the subja/subza/basil seeds add ¼ cup of water and let it sit for 10 minutes for it to bloom well.
  • In a pitcher, add roohafza syrup, chilled water, bloomed subza seeds, sugar and lemon juice. Mix well to combine.
  • The subza/basil seeds will be clumped together so this mixing will help it to separate and also for the sugar to dissolve
  • Add mint leaves to the sherbet, serve immediately garnished with lemon wedges or refrigerate it until served

What is a Mocktail

A non-alcoholic drink consisting of a mixture of fruit juices or other soft drinks. This Grape mocktail is a delicious mixture of Fresh red grapes, oranges and lime juice.I have made this cocktail numerous times. Sometimes i mix equal amounts of red and black grapes too.

Some recipes happen as you make, this mocktail is one such recipe. I had a big bowl of fresh grapes, usually i clean and wash the grapes and leave it on the dining table for us to snack. Usually my lil one, likes seedless grapes, but all of a sudden he doesn't want to touch them and my elder one runs a mile when i offer him a fruit.  So this grapes bowl is sitting simply in the refrigerator for the past one week. 

Last weekend, we had a small meet up with our friends for lunch. I normally make some lassi/panagam to serve as a welcome drink, and since it is hot these days, i decided to make some fresh juice. I took the grapes out, juiced them first, then saw the oranges, squeezed them into the grapes, then added a squeeze of lime. All mixed and strained, it tasted just awesome.

That too zero sugar and a gorgeous color. My lil one just loved the drink. Today while i was clicking the pics, he came and reserved the small bottle for himself. This mocktail can be made 3-4 hours ahead to save the kitchen time. Try this for your next party and let me know how you liked it!! 🙂

  • Take the grapes in a blender. Add 1.5 cups of cold water to it and blend it smooth
  • It won't be a smooth juice, to this add orange juice and lime juice. I just squeezed the orange with my hand into the grape juice. Do not bother about the seeds, you will be straining the juice, anyway. After adding the other two juices, mix it well with a ladle.
  • Strain the juice through a strainer. Add another ½ cup of water to the strained pulp and squeeze the juice well. Refrigerate the juice for 30 minutes and serve it chilled

Serve this zesty cocktail in your next party and enjoy the praise. This grape cocktail can be made ahead and refrigerated. From my personal experience they stay good for 2 days in the refrigerator.
