Beets is our favorite vegetable. Beets rasam and beets chutney being my kiddos favorites. Now this beets paratha too joined that favorite list.
Cooked beets is a regular in my fridge and I love to use them as often as possible. This beets buttermilk is an absolute favorite beverage of mine and this labneh, the best dip you will ever taste.

I was a little skeptical whether my little one would like it. To my surprise, he loved the mildly spiced paratha. His favorite side for this is plain curd. My elder one enjoys it with a spicy side too.
Beetroot adds awesome color to the dish, bright and vibrant. The vibrant color with earthiness and mild sweetness, is a brilliant combination.

Yes you can. Make the dough the previous night, if you are planning to make the parathas in the morning. Refrigerate it. Do not keep the dough for more than 2 days, they might change color.
Yes you can make the parathas ahead and store. If packing for next day, you can make it the previous night. Cover the parathas with a cotton cloth and leave it in air-tight container on the kitchen counter. If keeping for more than a day, refrigerate it. While serving reheat on a warm tava or in microwave for just 10 seconds.
Yes you can also use shredded beets. Avoid the chili and add some pepper powder along with cumin seeds.

Pizza cups with burger buns is such a fun recipe to make with family and friends. I make this often for my kids after school snack or as a breakfast on weekend mornings. A perfect breakfast or brunch on a lazy morning. You can make this a fun activity too, by making kids do the assembly and have fun with their choice of toppings.
This bun-izza can be made in bulk so serves well for a crowd. It gets ready in 10 minutes. I have used minimal toppings with capsicums, olives, jalapenos and 3 different cheese. You can either load with veggies like onions, corn, broccoli, mushrooms etc. or go simple with loads of cheese.

Enjoy these pizza buns hot straight out of the oven. These pizza cups stay good when refrigerated for 2 days. Since they have cheese i don't recommend them to be kept on the kitchen counter.
If serving pizza cups from the refrigerator, reheat them in the microwave for 20 seconds and serve it hot.

Fruit smoothies are my family favorite, easy to make and better than the bottled drinks available ready in the market.
Mango and musk melon both are summer fruits and we do get lots of fresh seasonal fruits here in UAE. Melons are my little ones favorite fruit. He loves rock melon and watermelon. This Watermelon salad, used to be his favorite, he will pick out the round watermelons scooped with melon baller and gobble it up, leaving us with the rest. When he was 2 years old, he used point the at the yellow pumpkins cut and kept in the supermarket, thinking they are his favorite rock melons.

After melons his favorite fruit, till date is mangoes. When he was 1 year old, we visited Tirupati as part of traditional ritual, he ran behind every hawker selling cut mangoes in Tirumala. My in-laws are mango maniacs. My father-in-law knows every variety of mango and which fruit seller will have them during their season. If we were in Chennai, during mango season, he would shower us with the best mangoes.
Today's Melon & mango smoothie was made 5 years before when we were enjoying our vacation in Chennai, during the summers. The season for both melons and mangoes.
Since my little one loves both the fruits, I made a smoothie with them. A simple recipe, with milk. Just blend chunks of both the fruits, check and add sugar if needed.
If you want more of mango flavor, use little extra mango chunks if not equal amounts of both the fruits gives a good balance of flavors. If you love the taste of these 2 fruits together, then try this Mango-musk melon chia pudding

Green leaves, I don't know what they did to kids and even some adults, the moment they find one in their plate, they pick it up like a dead fly and throw it out. I admit they might have a strange taste when eaten raw, but as a tempering to a dish, they are good. But god only knows why the lil people react strange!!
I too have 2 of them who give the same reaction . Elder one gives a decent one, don't ask about the younger fella!!! 🙄 So I normally powder the curry leaves and grind the coriander so they don't identify it. My elder one loves green chutney, the same leaves which irks him in its original form. Weird, right! When the leaves are ground with other spices it masks their original taste.
This quick one pot meal , is how I hide and seek the greens into their diet. This flavorsome pulao with coriander and mint, sautéed with mild spices makes a delicious meal with a raita. They love the aroma of their pulao, especially my elder one when he opens his lunch box and the aroma glides to his nose , he just enjoys it!!
That is why i m sure, even your lil one who hates these leaves, will definitely enjoy this quick and easy pulao. Since I made this for my kids, it will be mildly spiced, if you are making it for adults adjust the spice accordingly.


Serve this simple and easy coriander & mint pulao with a simple raita or pack it with some crisps for the lunch box.

Growing up we have eaten sweet potatoes, just as a snack. My aunt would boil it for us and we all cousins would enjoy it for our Sunday afternoon snack. Yup, life was simple, there was no outside food, going to restaurants were once in a year affair.
Cutlets and chats were foods that i came to know when i went to college. I make a super delicious sweet potato fry, a favorite at home. I once, made a delicious chocolate cake with Sweet potatoes, the most delicious way to enjoy sweet potatoes.
But dessert is not everyone's favorite. Sweet potato cutlet, a delicious snack with perfect balance of spices and makes a great combo with your evening tea.
It is also very easy to make, they are vegan and is shallow-fried. With air-fryers available now, they can be made with much less oil.

✔They are vegan , make a great snack . Stuff them between burger buns with some cucumbers, tomatoes and green chutney/sauce for a complete meal. Checkout the Sweet potato tikki burger recipe here
✔Delicious combo with your evening chai. They need 30-45 minutes to make.
✔They make a great party snack. Can be made ahead and frozen.

Enjoy these sweet potato cutlets warm with your evening chai or coffee. Or make them a complete meal as a wrap with a flatbread.
