What is this No Bake Dessert?

This quick and easy dessert is an inspiration from Shahi tukda. Shahi tukda, a rich bread pudding. Ghee-fried bread slices soaked in a rose and cardamom-scented sugar syrup, topped with rabri, sweetened milk and garnished with nuts.

Cream cheese floats, a mini no bake cheesecake. A simple dessert with crunchy toasted bread, layered with banana and cream cheese. Drizzled with honey, garnished with crunchy nuts and berries.

This cheese cake on a plate was made in no time. It is a great after school snack and a brilliant dessert for a crowd.

FAQ's : Ask Away!!

Can I make this cream cheese float ahead of time?

Yes! You can prepare the cream cheese mixture in advance and chill it. Assemble just before the party to maintain the freshness. Assembled dessert wrapped in cling film or in air-tight flat boxes, holds good in the refrigerator for 2-3 hours.

What fruits can I use instead of banana?

Strawberries, blueberries, mango, kiwi, or some soft cooked apples with cinnamon apples work well. Use any seasonal fruit for color and freshness. Add a bit of pomegranate arils on top for that festive look.

Can I make this dessert healthier?

Absolutely. You can also use greek yogurt or full fat labneh like this no bake oreo cheese cake.

Is this dessert kid-friendly?

Yes! Kids love this brilliant cream cheese bites. You can make it nut-free and use crunchy pumpkin seeds or sunflower seeds as topping. Add a side of this tempting hot chocolate float, to make it irresistible.

Can I make it Vegan?

I haven't personally tried it vegan. But why not, use vegan alternatives for cream cheese. You can try it with Almond or cashew cheese or even a silken tofu based spread should work.

  • Remove the crust from the bread slices. Toast them crisp on both sides on a pan with butter.
  • Whisk together cream cheese and sugar in a separate bowl.
How to make quick banana cream cheese boats
  • Cut the toasted bread into 2 lengthwise. Place it on a plate, squeeze some honey, spoon some cream cheese on top.
  • Place a lengthwise cut banana on top. Top it with more cream cheese. Garnish it with fresh blueberries, crunchy nuts and a drizzle of honey and serve.

Ingredients

  • 2 no bread slices i used brown bread
  • 1 banana peeled and cut lengthwise into 4 pieces.
  • ½ cup cream cheese i used Philadelphia
  • ¼ cup powdered sugar
  • 2 tablespoon almonds chopped
  • 2 tablespoon pistachios chopped
  • 2 tablespoon fresh blueberries/strawberries for garnish
  • 1 tablespoon honey optional
  • 1 tablespoon butter for toasting the bread

Instructions

  • Remove the crust from the bread slices, toast them crisp on both sides on a tava using little butter
  • Take cream cheese in a bowl, add sugar to it and whisk well , until it turns creamy.
  • Cut the the bread slice into two lengthwise. Now place the bread on a serving plate. If using honey squeeze a little on the bread. Arrange 2 teaspoon of cream cheese on top of it.
  • Place a banana slice, again top with cream cheese. Now sprinkle some nuts and top it with blueberries or strawberries. Serve immediately.
  • If serving later, cover it loosely and refrigerate it. I served a slice from the fridge around 8, around 5 hours after arranging it, and it was fresh, the cream was holding well.

Notes

  • Originally i planned for pomegranate arils for garnish , couldn't get one before clicking the picture. Do try those bright ruby red pearls for that festival finish.
  • The size given here, will take 2 or 3 bites to finish. So, if serving for kids, you can cut the toasted bread into quarters and serve.

Beets : The Color & Earthiness

Beets is our favorite vegetable. Beets rasam and beets chutney being my kiddos favorites. Now this beets paratha too joined that favorite list.

Cooked beets is a regular in my fridge and I love to use them as often as possible. This beets buttermilk is an absolute favorite beverage of mine and this labneh, the best dip you will ever taste.

Beetroot roti

I was a little skeptical whether my little one would like it. To my surprise, he loved the mildly spiced paratha. His favorite side for this is plain curd. My elder one enjoys it with a spicy side too. 

Beetroot adds awesome color to the dish, bright and vibrant. The vibrant color with earthiness and mild sweetness, is a brilliant combination.

What to Serve with Flatbreads?

At home boys usually enjoy their parathas with curd and pickle. The days i make flatbreads like multigrain roti or cheese paratha they like a mild spicy curry with it.

This delish Mathura ke dubkiwale aloo is their favorite. A delish potato curry in gravy, you will be licking your finger, for every bite.

My personal choice is this Hyderabadi bhagar baigan/Brinjal gravy or this simple Nadan thakkali curry/Kerala style tomato curry. The brinjal gravy is a visually appealing and a tempting curry.

Step by Step Instructions to make Beetroot Paratha

Please check recipe card below for exact measurements of each ingredient used and also for the detailed instructions.

  • Make a coarse paste of cooked beets, chili and cumin in a food processor or a chopper.
  • Add this coarse paste to wheat flour and add enough water to make a soft pliable roti dough.
  • Let the kneaded dough, rest of 10 minutes. Divide the dough into 6-8 portions. Roll them into a flat disc using a roller pin.
  • Cook the roti on a hot tava on both sides, serve it warm with a curry of your choice.
  • Serve this delicious and colorful beets paratha with a curry of your choice. I personally prefer a mildly spicy curry.

I have some doubts!!!

Can i pack this for school lunch?

Yes absolutely. These colorful parathas, packs well in lunch boxes. I pack them in VAYA lunch boxes. They keep food warm for longer time.

Can I make the Dough ahead?

Yes you can. Make the dough the previous night, if you are planning to make the parathas in the morning. Refrigerate it. Do not keep the dough for more than 2 days, they might change color.

Can i make the parathas ahead?

Yes you can make the parathas ahead and store. If packing for next day, you can make it the previous night. Cover the parathas with a cotton cloth and leave it in air-tight container on the kitchen counter. If keeping for more than a day, refrigerate it. While serving reheat on a warm tava or in microwave for just 10 seconds.

Can I use shredded beets?

Yes you can also use shredded beets. Avoid the chili and add some pepper powder along with cumin seeds.

Expert Tips for a Beets Party!

  • If you are making this paratha for school dabba, i have covered how to proceed in the FAQ section
  • This colorful beets paratha can be a great addition to your party table. If making it for a kids party, make a small paratha, the size of tea coaster.
  • You can serve this with a variety of accompaniments not just gravy. I would serve them with a bowl of spiced labneh, hummus etc.
  • You can also serve a side of aloo tikki and make a cute sandwich with the parathas.
  • You can make a wrap with these colorful parathas, with some paneer subzi and few greens and some vegan mayo.
  • Add some colorful drinks to the table and make it extravagant. If color is pink , you can try this beets lassi.

Equipment

  • Tava for cooking the roti/paratha
  • Roller pin for rolling the roti/paratha

Ingredients

For the dough

  • cups Whole Wheat flour
  • 1 tablespoon oil
  • ½ cup warm water
  • salt to taste

Grind to coarse paste

  • 80 grams beets peeled and cooked until soft
  • ½ a green chili
  • ½ teaspoon cumin seeds/jeera
  • 2 tablespoon water for easy grinding
  • 5 teaspoon oil or ghee for making the paratha

Instructions

  • In a food processor or a chopped, take cooked beets, add green chili and cumin seeds to it and blitz away. I prefer almost smooth mix.
  • If you are doing in a food processor then you can add wheat flour to the processor and continue kneading the dough.
  • If not, remove the ground beets to a bowl, add flour and salt to it and mix. To this slowly add ¼ cup of water first and knead and add extra water when you need.
  • When the dough is almost done, add oil to it and knead to a smooth dough and let it rest for 10 minutes.
  • Once rested, divide the dough to 6-8 portions, depending on the size you roll. Dust each dough ball with flour, roll out into thin discs.
  • cook the rolled out roti on a hot tava on both sides until done. I usually smear ghee once the roti is cooked
  • Keep the roti covered in a kitchen cloth until served. I packed these colorful roti's for my kids breakfast box along with Potato and capsicum masala.

Crispy Falafel

What is Falafel?

Falafel is made from fava beans or chickpeas, or a combination. When made with chickpeas, falafel is high in protein, complex carbohydrates, and fiber.

These crispy deep fried snack is eaten throughout the Middle East and a common street food. The Coptic's of Egypt claim to have first made the dish as a replacement for meat during Lent. The fritters are now found around the world as a replacement for meat and as a form of street food.

During Ramadan, you will find these crispy falafel balls in almost all the cafeterias for iftar, the meal that breaks the daily fast after sunset.

For us South-Indians, this authentic falafel is almost like our Paruppu vadai, though the spices added varies a bit. The best falafel recipe uses spices like coriander, cumin and loads of fresh coriander and parsley. Authentic recipe uses onion and garlic too, since i don't cook with them, i haven't used them both and didn't miss them at all.

Middle eastern appetizer

Ingredients

  • The main : Chickpeas, use dried chickpeas. Soak them overnight, drain and use them.
  • Spices : Green chilies, pepper and cumin are the main spices in this appetizer.
  • Greens : Loads of fresh parsley, fresh coriander and few mint leaves are used to make authentic falafel.
  • Leavening : a tad bit of baking soda is added to the falafel batter, it gives a fluffy texture.
  • Fried or Baked : These delish chickpea snack can be baked, air-fried or deep-fried. Authentic falafels are deep fried.

Step-wise Instructions

  • Soak the chickpeas for 8-10 hours minimum. I prefer to soak them overnight.
  • Drain the chickpeas well. Take them in a food processor, add chilies, coriander, cumin, pepper, fresh coriander, parsley , sesame seeds and mint.
How to make Best Falafel
  • Blend them into a coarse mixture. Remove the ground chickpeas mixture to a wide plate. Let it sit for 30 minutes.
  • Just before frying, add baking soda and mix well. Heat oil for deep-frying and shape the chickpea mixture to flat patties or balls and deep fry them to golden brown.
  • Drain on a paper towel. Enjoy them as such or in a sandwich or part of mezze with an assortment of dips.

Falafel Recipe | How to make Crispy Falafel

Falafel, a delicious deep-fried chickpea balls, favorite street food available all through the middle-east. Falafel balls can be eaten alone as a snack or served as part of a meze tray (assortment of appetizers).

Equipment

  • Indian style mixie or food processor
  • Deep pan for frying

Ingredients

  • 2 cups dried chickpeas
  • 4 nos green chilies
  • 2 teaspoon rice flour you can use all purpose flour
  • 1 teaspoon freshly grated ginger
  • 1 teaspoon black peppercorns/milagu
  • 1 teaspoon cumin seeds/jeera
  • 1 teaspoon coriander seeds/dhaniya optional
  • 1 cup fresh coriander leaves
  • ½ cup fresh parsley I didn't use
  • 1 tablespoon white sesame seeds
  • ½ teaspoon baking soda
  • 1 teaspoon salt or to taste
  • oil for deep frying

Instructions

  • Soak the dried chickpeas for at least 8-10 hours. I prefer to soak them overnight.
  • After the said time, drain the chickpeas completely. Take them in to a food processor jar or blender jar. I used my kenwood food processor.
  • Add chilies, fresh coriander leaves, parsley leaves, ginger, sesame seeds and salt to the processor jar.
  • Take whole peppercorns, cumin and coriander, roughly pound them in a mortar-pestle and add it to the food processor jar. This ensures proper grinding of the spices.
  • Grind this to a coarse mix. Stop in between, use a spatula, scrap down the sides and grind.
  • Remove the ground mix to a flat plate. At this stage you can refrigerate the batter for a day.
  • Let the batter rest for an hour. Before deep frying the falafel, add baking soda and rice powder to it. Mix well with hands.
  • Heat oil for deep frying. When the oil is ready, shape the ground mix into flat patties or balls and deep fry them until golden brown.
  • Keep the oil in medium and fry the falafel. Once golden brown, remove the fried balls onto a paper towel.
  • Enjoy these crispy fried chickpea balls warm. Serve it as such or with an assortment of dips.

Pancakes : Desi or Foreign?

Pancakes are a breakfast staple enjoyed worldwide, with diverse variations. Indian pancakes such as dosa, uttapam, and cheela are savory and typically made from rice, lentils, or chickpea flour..

Western pancakes are typically sweet and fluffy. They are served with toppings like syrup and fruit. Indian pancakes are usually fermented or spiced. They are cooked with little to no oil. Western pancakes rely on baking powder or soda for leavening and are cooked with butter.

We also have some instant dosai, which requires no fermentation. Like this instant oat dosai, red pumpkin dosai and carrot dosai. The carrot and pumpkin dosai are grind and pour dosai. Whereas the oats dosai, is a mix of flours made into a batter.

Indian pancakes, often served with chutneys or sambar, are frequently lentil-based, gluten-free, and protein-rich. Western pancakes like this apple ableskivers, are typically enjoyed as comforting, dessert-like breakfasts.

Dosai or pancakes are quick and easy meals, can be made for one or many . If you love pancakes, check this pancake recipe for one.

Some Indian Pancake Inspirations

As a South Indian, I can say with 100% certainty that our kitchens rely on the Idly-dosa batter. On days we don't have the batter handy, we roll up our sleeves and whip up some interesting Cheelas or chillas.

Do you know about Spelt Flour?

Spelt is a type of wheat. To make whole grain spelt flour, the entire spelt grain is processed, including the bran, endosperm and germ. It has a nutty, slightly tangy flavor, a coarse texture and has visible brown flecks mixed in with the white.

This article from bon appetit magazine, suggests how to bake with spelt flour. It says we can use spelt flour as a direct 1:1 substitute for all-purpose flour in cakes, muffins, and cookies. As well as fruit desserts like crumbles and crisps. In breads, however, you'll have to play around, balancing it with all-purpose, to get the right rise and texture.

I have tried quiet a few bakes with spelt flour, my favorite is this Spelt flour bread. I baked a loaf this week too, both my kids enjoy it with just butter.

Apple Pancake with Spelt Flour

Today's apple pancake recipe is a decade old recipe. I have made a few changes to this old recipe. I used organic whole grain spelt flour with more fresh fruit, milk, and enhanced flavors.

These pancakes were a hit with both my kids. My husband was pleasantly surprised when I served this as a dessert. It satisfied his late night sweet tooth with a drizzle of honey.

You have loads of options to make this simple spelt flour pancake exciting for your kids. I added few chocolate chips while it was cooking, served some with a delish apple compote and crushed walnuts.

Apple pancakes with honey

I packed some for my elder one's snack box with a drizzle of honey. He really loved it and has approved it for the lunchbox menu. Nothing makes a momma more happy when kids love homemade, wholegrain food and come back for seconds.

These spelt flour apple pancakes are mildly sweet with fresh apples, flavored with cinnamon and ginger. They make a healthy, portion controlled dessert for your late night cravings. Just serve it with a drizzle of honey and crushed nuts.

Ingredients to Make Eggless Pancakes

  • Main Ingredients : Wholegrain organic Spelt flour, you can also use all purpose or whole wheat flour. Fresh apples, baking powder and milk are used to make this spelt flour apple pancake batter.
  • Flavorings : I have used cinnamon powder and dry ginger powder in the eggless pancake recipe. You can also use vanilla extract instead.

  • Sweetener : I have used sugar in this pancake recipe.
  • Garnishes : We prefer honey and crushed walnuts as garnish. You can also try some fresh fruits, chocolate syrup to make it more exciting.

How to make Spelt flour Apple Pancakes

  • Check and keep all ingredients ready on the counter. Wash and peel an apple. Grate it into a wide bowl.
  • To this bowl, add spelt flour, baking powder, sugar, cinnamon powder and ginger powder. Combine well with a spatula.
How to make apple pancake
  • To this now add milk and mix to get pancake batter. It will be thick, pourable batter.
  • Let this sit for 10 minutes for the flavors to mingle.
How to make eggless pancakes
  • Heat a pancake pan, while it is hot, pour a ladle of batter, add butter. Cover and cook for a minute, flip and cook again for another minute.
  • Remove and serve it warm with a drizzle of honey, crushed walnuts and apple compote (optional).

Ingredients

  • 1 cup wholegrain organic spelt flour all purpose and whole wheat flour can be used
  • 1 tablespoon baking powder
  • 2 tablespoon sugar
  • 1 no apple cored, peeled and shredded i used pink lady apple
  • 1 cup milk
  • 1 teaspoon cinnamon powder
  • ½ teaspoon ginger powder
  • butter for making the pancakes

Garnishes

  • Crushed walnuts
  • chocolate chips
  • honey

Instructions

  • Wash, peel and core apple. In a wide bowl, shred the apple.
  • To this bowl, add spelt flour, baking powder, sugar, cinnamon powder and dry ginger powder.
  • Using a spatula, mix the dry ingredients well. To this now add milk and mix it to a pancake batter
  • The apple pancake batter will be a thick pourable batter. If you feel it is too thick, add ¼ cup of water to this and mix well.
  • Set this aside for 10 minutes for the flavors to mingle well.

Let us make the Pancake

  • Heat a pan. I have used my cast iron pancake pan. Make sure the heat is medium. Too hot pan, will burn and make the pancakes stick to it and too low heat will not cook the pancake properly.
  • To know whether the pan is at correct heat, sprinkle water, it should sizzle and not smoke. If smoke, take it off heat, let it cool down a bit and heat again.
  • When the pan is hot, pour a ladle of batter into each of holes. Add butter on top, cover and cook for a minute in medium flame.
  • I added chocolate chips for a batch of pancakes. You can also add some apple compote or raisins to your pancakes.
  • Remove cover, flip and cook again for a minute in medium flame. Remove and serve it warm with honey and crushed walnuts.

Notes

  • I got around 12 pancakes for the above batter. You can get around 10-15, depending on the size of it. 
  • These pancakes make a great meal for school lunch boxes. I packed with a drizzle of honey and few walnut pieces. 
  • They refrigerate well for 2-3 days, that's how long I tried refrigerating them. While serving from the fridge, i reheated them for 20 seconds and served with honey and walnuts. 
  • The honey on top really oomph ups the flavor of these soft and fluffy pancakes, so i highly recommend not to miss it.

When Naan bread pizza can be called naaniza, and tortilla pizza can be named tortizza why not bun pizza be called bun-izza😁.

Pizza cups with burger buns is such a fun recipe to make with family and friends. I make this often for my kids after school snack or as a breakfast on weekend mornings. A perfect breakfast or brunch on a lazy morning. You can make this a fun activity too, by making kids do the assembly and have fun with their choice of toppings.

This bun-izza can be made in bulk so serves well for a crowd. It gets ready in 10 minutes. I have used minimal toppings with capsicums, olives, jalapenos and 3 different cheese. You can either load with veggies like onions, corn, broccoli, mushrooms etc. or go simple with loads of cheese.

Ingredients for making Pizza with Burger Buns

  • Burger Buns, obviously the base for these quick pizza bun recipe. I have used store-bought burger buns. If you are looking for some homemade buns, check this whole meal burger buns or these avocado pull apart balls .
  • Seasonings, I have used red chili powder, oregano, mixed herbs and freshly pounded pepper powder.
  • Sauce, The base sauce is a simple tomato ketchup. You can check this pizza sauce or this beautiful Neapolitan sauce.
  • Toppings, I have used capsicums, black olives, and brined jalapenos along with 3 different cheese. You can also add onions, corn, steamed broccoli and mushrooms too.
  • Cheese , I have used both cheddar and mozzarella, along with Indian cottage cheese

Step by Step Instructions to Make Bun-izza.

  • Preheat the Oven to 160C. Line a baking tray with parchment.
  • Wash and chop capsicums thinly. Mix in the black olives, chopped jalapenos and crumbled paneer. Mix red chili powder and salt. Set aside until use.
  • Cut open the Burger buns, spread the base sauce, sprinkle mixed herbs and oregano on top.
  • Place 1-2 tablespoon of toppings on each burger buns, sprinkle freshly pounded black pepper powder on top.
How to make bun pizza
  • Top it off with both cheddar and mozzarella cheese.
  • Bake them in the preheated oven for 8-10 minutes. I turned on top rod for last 2 minutes, to get some brown on the cheese.
  • Take it off the oven and enjoy it hot straight from the oven.

  • 8 nos Burger buns
  • 2 nos capsicums, thinly sliced
  • ¼ cup brined and sliced black olives
  • 4-5 nos sliced jalapenos, chopped fine
  • 100 grams paneer , crumbled
  • ¼ teaspoon red chili powder
  • 100 grams mozzarella cheese shredded
  • 100 grams cheddar cheese, shredded
  • oregano
  • mixed herbs
  • pizza sauce/tomato ketchup/schezwan sauce

Instructions

  • Preheat the Oven to 160C. Line a baking tray with parchment.
  • Wash and chop capsicums thin. To that bowl add black olives, jalapenos and crumbled cottage cheese. Add red chili powder to this, toss well.
  • Cut open the burger buns, spread the pizza sauce/ketchup .
  • Sprinkle oregano and mixed herbs on all the buns.
  • Place 1-2 tablespoon of toppings on each of the burger buns. Top it with freshly pounded black pepper powder.
  • Top each burger bun with shredded cheddar and mozzarella on each bun.
  • Bake the pizza bun cups in the preheated oven for 10 minutes. Or until the cheese melts and browns a bit. I turned on the top rod of the oven for the last 2 minutes.
  • Oven temperature and baking time differs from oven to oven. So bake according.
  • Once done, remove the pizza cups from the oven. Let it sit for a minute and enjoy it hot straight out of the oven.

Enjoy these pizza buns hot straight out of the oven. These pizza cups stay good when refrigerated for 2 days. Since they have cheese i don't recommend them to be kept on the kitchen counter.

If serving pizza cups from the refrigerator, reheat them in the microwave for 20 seconds and serve it hot.

Melons & Mangoes

Fruit smoothies are my family favorite, easy to make and better than the bottled drinks available ready in the market.

Mango and musk melon both are summer fruits and we do get lots of fresh seasonal fruits here in UAE. Melons are my little ones favorite fruit. He loves rock melon and watermelon. This Watermelon salad, used to be his favorite, he will pick out the round watermelons scooped with melon baller and gobble it up, leaving us with the rest. When he was 2 years old, he used point the at the yellow pumpkins cut and kept in the supermarket, thinking they are his favorite rock melons.

mango smoothie

After melons his favorite fruit, till date is mangoes. When he was 1 year old, we visited Tirupati as part of traditional ritual, he ran behind every hawker selling cut mangoes in Tirumala. My in-laws are mango maniacs. My father-in-law knows every variety of mango and which fruit seller will have them during their season. If we were in Chennai, during mango season, he would shower us with the best mangoes.

The Recipe

Today's Melon & mango smoothie was made 5 years before when we were enjoying our vacation in Chennai, during the summers. The season for both melons and mangoes.

Since my little one loves both the fruits, I made a smoothie with them. A simple recipe, with milk. Just blend chunks of both the fruits, check and add sugar if needed.

If you want more of mango flavor, use little extra mango chunks if not equal amounts of both the fruits gives a good balance of flavors. If you love the taste of these 2 fruits together, then try this Mango-musk melon chia pudding

The Ingredients

  • Mango, I have used Banganapalle variety of mango for making this smoothie. But any juicy variety of mango can be used.
  • Musk melon, I have used the yellow melon called as cantaloupe.
  • Sugar, if needed. I have not used in this smoothie
  • Milk, I have used regular cow's milk, full fat. If vegan, replace it with plant-based milk.

  • Makes rough cubes of the fruits and take it in ablender. Blend smooth.
  • Add milk and blend again.  Serve immediately.

Serve this vibrant and delicious mango & melon smoothie immediately. This filling smoothie can be had for breakfast or as a snack.

Coriander & mint pulao, quick and and easy one pot meal. A mildly spiced, kid-friendly lunch box recipe.

Coriander & mint pulao

Green leaves, I don't know what they did to kids and even some adults, the moment they find one in their plate, they pick it up like a dead fly and throw it out. I admit they might have a strange taste when eaten raw, but as a tempering to a dish, they are good.  But god only knows why the lil people react strange!!

I too have 2 of them who give the same reaction . Elder one gives a decent one, don't ask about the younger fella!!! 🙄 So I normally powder the curry leaves and grind the coriander so they don't identify it. My elder one loves green chutney, the same leaves which irks him in its original form. Weird, right! When the leaves are ground with other spices it masks their original taste. 

This quick one pot meal , is how I hide and seek the greens into their diet. This flavorsome pulao with coriander and mint, sautéed with mild spices makes a delicious meal with a raita. They love the aroma of their pulao, especially my elder one when he opens his lunch box and the aroma glides to his nose , he just enjoys it!!

That is why i m sure, even your lil one who hates these leaves, will definitely enjoy this quick and easy pulao. Since I made this for my kids, it will be mildly spiced, if you are making it for adults adjust the spice accordingly.

The Ingredients

  • Rice, i have used basmati rice, you can also use sona masuri or any regular rice that can be cooked soft and fluffy.
  • Herbs, i have ketp it simple and used mint and coriander leaves.
  • Spices, i have used garlic, one green chili along wtih red chili and coriander powder.
  • Tempering, i have used whole spices like cardamom, bay leaf and clove. you can also use garam masala powder instead of whole spices.

Ingredients

  • ½ cup basmati rice sona masuri can also be used
  • 4 tablespoon fresh mint leaves
  • 4 tablespoon fresh coriander lwacces
  • 1 no green chili
  • ¼ teaspoon red chili powder
  • ½ teaspoon coriander powder
  • ¼ teaspoon turmeric powder
  • ½ teaspoon salt

Tempering

  • 1 tablespoon oil
  • 1 no clove
  • 1 no bay leaf
  • 1 no small green cardamom
  • ¼ teaspoon cumin seeds

Instructions

  • Wash rice with water, until it runs clear, and soak for 15 minutes in water. Drain & keep aside until use. Do not waste the rice-washed water, if you have plants in your balcony or backyard, you can water them with this water.
  • Take coriander and mint leavs along with chili, garlic in a blender, add 2 tablespoon of water and blend smooth.
  • Heat oil in a wide pan, when it is hot,add clove, bay leaf and cardamon and saute for 30 seconds, then add cumin.After adding cumin, immediately add the blended green paste and saute for aminute.
  • Now add rice to this and 1.5 cups ofwater. I washed the blender with ½ cup of water and added that water too. Add red chili, coriander, turmeri powder and salt to this. Mix well.
  • When it begins to boil, cover and cook for 10-12 minutes or until done. It was done in 13 minutes for me. 
  • Remove the cover, fluff it up with fork, serve warm with raita or some crisps for a scrumptious meal.

We as a family love to watch lot of cooking shows, our favorite channel is Foxlife, though right now with IPL, sports channel is placed above everything, or else we are glued to FoxLife. Masterchef Australia being our favorite show, followed by jamie olivers. My lil one loves watching Jamie's food fight club and the way jamie animates while cooking his food. For me watching these food shows with my boys, is bonding with them and make them understand that food is universal and cooking is fun and even boys can cook and sweat in the kitchen and most importantly enjoy that process. 
 Few days back , they were airing, Family food fight, in FoxLife, a competition where 4 members from a family compete as a team with many other families with various themes every week and ofcourse elimination every week.
One of the episodes, the theme was kids party, loved each and every recipe in that episode, so colorful and vibrant, attracting kids in every way possible. Shows like these make me more enthusiastic to try new recipes for my family. 
One of the recipes showcased in that episode was these oreo balls. A simple 2-ingredient recipe, the original recipe used only dessicated coconut, in this recipe i have added some almond flakes and cinnamon for flavor. 
These oreo balls are great hit amongst kids, this is the second time i m making them at home. I made a huge batch when they were at home during spring break, it never dissappoints. You can add few more flavors to this to make it more interesting, i have some variations too which i will post later some time.

Ingredients
12 nos oreo biscuits, original flavor
¼ cup condensed milk
⅓ cup of dessicated coconut , 2 tablespoon extra for rolling  
¼ cup of almond flakes, 1 tablespoon extra for rolling
¼ teaspoon cinnamon powder


Method

  • Take the oreo biscuits in a food processor, pulse it to coarse powder. To this add condensed milk, dessciated coconut, cinnamon and almond flakes. Pulse again to form a uniform mixture.
  • Transfer this to a bowl or a flat plate. Roll them into small lemon sized balls. I got around 10 balls for the above measurement, it depends on the size you roll them.
  • Roll the balls on a mix of coconut and almond flakes. Store them in an air-tight container.

After navrathri i bet every household that hosted golu guests will be overflowing with fruits! I have almost 2 dozen of apples, oranges and more than two dozen bananas after distributing the pomegranates and pears to my friends. So , friends i m looking for ways to use up the bananas, No, i dont want to  make cakes, though finally i will pushed there, because that will vanish fast than other dishes. So you will be seeing some creative recipes to use up bananas in my space for the next few days. 
Here is one quick sandwich to make for the sudden hunger pangs of for a big  kids party. it is quicker to make to so it satiates the hunger and since it is quicker to make you can do a big batch anytime you want to. It contains all the favorites of kids chocolate, banana and bread. 
 These cute sandwiches are packed to Srivalli's Kid's Delight event, guest hosted by Pavani themed on Mini Dishes.
Ingredients (makes 3 sandwiches and 6 verticals slices)
6 slices of bread (white/brown/multigrain)
100 grams cream cheese
2 tablespoon icing sugar
50 grams lindt dark chocolate
50 grams lindt white chocolate
1 banana
Cream cheese and chocolate sauce for serving
Method
  • Remove the crust of the bread. Melt white and dark chocolate together in the microwave. Mix icing sugar with cream cheese and it light and fluffy. Peel and chop banana into medium roundels.
  • Take a slice of bread, spread chocolate sauce, place four banana roundels on it, take another slice of bread, spread cream cheese mix on to it. Sandwich both the slices together.
  • Repeat the same with all the reamining slices. Cut them into two vertically. Drizzle some chocolate sauce on top and serve immediately. 
  • Kids loved with both chocolate sauce and cream cheese on the side. my lil one loved it with more cream cheese, whereas my elder one loved with the chocolate.  So serve these cute sandwiches with both the condiments on the side and see them fly.

Sweet potato cutlet

Growing up we have eaten sweet potatoes, just as a snack. My aunt would boil it for us and we all cousins would enjoy it for our Sunday afternoon snack. Yup, life was simple, there was no outside food, going to restaurants were once in a year affair.

🍠Sweet potatoes

Cutlets and chats were foods that i came to know when i went to college. I make a super delicious sweet potato fry, a favorite at home. I once, made a delicious chocolate cake with Sweet potatoes, the most delicious way to enjoy sweet potatoes.

But dessert is not everyone's favorite. Sweet potato cutlet, a delicious snack with perfect balance of spices and makes a great combo with your evening tea.

It is also very easy to make, they are vegan and is shallow-fried. With air-fryers available now, they can be made with much less oil.

✔They are vegan , make a great snack . Stuff them between burger buns with some cucumbers, tomatoes and green chutney/sauce for a complete meal. Checkout the Sweet potato tikki burger recipe here

📋 The Ingredients

  • Sweet potatoes, the hero of the recipe. I have boiled them and used in the recipe, you can also grill them for that smoke-y flavor.
  • Spices, i have used red chili and coriander in equal amounts, ground together and pav bhaji masala.
  • Rice flour, instead of corn flour i have used rice flour in the recipe to give that crispy-ness and binding.

Sweet Potato Cutlet | Tikkis |Vegan & GF Snack

Sweet potato cutlet, crispy, shallow-fried snack made with boiled sweet potatoes and simple spices. A great tea time snack.

Ingredients

  • 1 no medium sized sweet potato (about 250-300 grams)
  • ½ teaspoon red chili powder ½
  • ½ teaspoon coriander powder or 1 teaspoon red chili coriander powder (equal amounts of red chilies and coriander ground together)
  • ¼ teaspoon pav bhaji masala
  • handful of coriander leaves, chopped fine
  • ½ -¾ teaspoon salt
  • 1-2 tablespoon rice flour
  • ¼ cup oil for shallow-frying

Instructions

  • Peel the sweet potato, cut it into cubes and cook until soft. I usually microwave cook it, take the chopped cubes in a microwave safe bowl, add water just to the level of the potatoes. Cook using the potato timer or for 8-10 minutes at power high.  Once done, drain the excess water. Let it sit in the colander until it drains completely.
  • Take the cooked potatoes in a wide bowl, mash it well with a potato masher. To this mash now add red chili powder, coriander powder, pav bhaji masala and salt. 
  • Add fresh coriander leaves and rice flour to this and combine together to form a soft dough. Divide the dough into lime sized balls. I got around 10 portions.
  • Flatten each ball in between your palm and shape it into a disc. Repeat the same with all the dough balls. Let this sit in the refrigerator for 10 minutes.
  • Heat a flat tava, add 2-3 tablespoon of oil, once it is hot, place the tikkis on the tava, keep the flame medium. Flip the tikki after 10 minutes, so the shape doesn't get disturbed, if you touch the tikki, immediately after placing on the hot tava, there is a chance the tikki might stick to the bottom and lose shape.
  • Be patient, let the bottom get nicely cooked andgolden brown, then slowly flip to the other side. Try to spoon the oil left inthe tava over the tikki
  • Once the bottom layer gets nicely done, flip again and cook both sides for another minute each and remove the tikki on to a kitchen towel to remove the excess oil. Serve the tikki's warm with some tomato sauce

Enjoy these sweet potato cutlets warm with your evening chai or coffee. Or make them a complete meal as a wrap with a flatbread.
