Ingredients
100gramsraw almonds
40 gramspumpkin seeds
30grams pistachios
30gramsdesiccated coconut
175gramsdate paste15-18 nos soft seedless dates can also be used.
3tablespoonalmond butter
4noscardamom podsseeds only
2nosclove
Instructions
In a microwave safe bowl, measure and take the nuts. Microwave them high for 3- 4 minutes. Stop and stir with a spatula after every minute to avoid burning.
Roasting of nuts can also be done on the stove-top. After roasting, let the nuts cool down completely. Take cardamom seeds only along with clove in a mortar pestle and make a powder.
Once the nuts have cooled down completely, take them together in the food processor. you can also use mixer jar.
Pulse the nuts 2-3 times just to crush them. Now to this add date paste, coconut, almond butter, cardamom and clove powder.
Run the food processor once or twice just to combine all the ingredients together.
Transfer the pulsed ingredients on to a flat plate. Start making balls out of the mixture. Just take a fistful of the dry fruit mix and press them in your palms and shape them into balls.
Store these delicious protein rich dry fruit laddu in an air-tight container. I prefer to refrigerate the laddus as they contain coconut.
I got around 2 dozen(24) balls out of the above measurement. Each weighing approximately 18 grams.
