Sprouted Moong Dal Rice

Packing Lunch Box is a Daily chore. So, i try to keep it a bit simple and healthy too!!! This Sprouted Moong Dal rice can be made in a jiffy. Try Pressure cooking the sprouts the previous night and refrigerate it. This makes the early morning rush a bit easy!!!


Ingredients
1 cup sprouted Moong Dal
2 cups of Cooked Rice
2 green chillies
1 Large Onion, thinly sliced
1 teaspoon Ginger-garlic paste
½ teaspoon Red Chilli powder
½ teaspoon Coriander powder
Salt to taste
2 sprigs of curry leaves
1 teaspoon mustard seeds
1 or 2 teaspoon of oil

Method

Pressure Cook the sprouts until soft. Heat oil in a Kadai. Splutter mustard seeds. Add onions and ginger-garlic paste and saute till onions are  translucent. Add green chillies, curry leaves. Sauté for a minute or two. 
Now add the cooked moong dal, add red chilli powder, coriander powder, salt, Mix well. Cover and cook in a simmer flame for 5 minutes. Put off the flame and Mix it with cooked Rice. Goes well as lunch box menu.
