Instructions
For the Salsa
Chop all the veggies into bite-sized pieces. Mix them together in a bowl, add lemon juice, pepper, and salt. Toss well to combine.
For Assembling the Burger
Cut the burger buns into halves in the center. Apply Cream cheese on both the sides. Place 2-3 teaspoon full of salsa on to the bottom side of the bun.
Top it with 4-5 baby spinach leaves, place a slice of cheddar and close the burger.
Let's Toast
Oven method: Place the assembled sandwich on a baking tray. Bake at 180°C (350°F) for 6-8 minutes until the cheese melts and the bun gets lightly golden.
This is the best method if you are packing the sandwich.
Pan method: Place the sandwich in a dry skillet or grill pan on medium heat. Press down gently with a spatula.
Toast for 2–3 minutes per side until golden and the cheese is melty.
Microwave method: Warm on high for 45–60 seconds. The cheese turns slightly gooey and the bread softens, not crispy, but satisfying in its own way when you are in a real rush.
Serve warm. The sandwich is flavourful enough on its own and usually does not need a condiment.
How to store & reheat
Assembled sandwich (untoasted): Wrap tightly in cling film or place in an airtight container. Refrigerate for up to 8 hours. Toast just before eating.
Toasted sandwich: Best eaten immediately. If you need to pack it, wrap in foil after toasting , it stays warm and the bread does not go stiff.
The salsa on its own: Store leftover salsa in an airtight jar in the fridge for up to 2 days. It also works as a topping for crackers, a side with dal-rice.
