    Strawberry & Mango cream cheese toast -Toast for Dinner

    The king of fruits is in the market and how can i cook without it? My father-in-law arrived here for a month long vacation with 6 plump javadu variety mangoes. The whole suitcase was filled with the sweet aroma of mangoes, later my house too.
    My lil one is a mango fanatic, he relishes fresh mangoes everyday. I make aamras as after-school snack for him, Β the leftover cubes on the seed makes as a side for curd rice. yeah, mangoes for curd rice, is a daily affair at home.
    With so many mangoes at home, i thought of using it this week’s theme – Dinner for toast, i have combined these yummilicious fruits with cream cheese for a finger-licking meal.Β 

    Fresh fruits along with cream cheese tasted divine over a crispy toast. We felt it like a dessert toast. The combination of fruits is your choice, i used strawberries, mangoes and dragon-fruit, you can also use bananas along with this.Β 
    A light dressing of honey and chili would take the toast to another level, do try it on yours and let me know how you liked it.Β 

    Ingredients
    6 slices of Multigrain bread
    1 mango, I used rajapuri variety
    4-5 nos strawberries
    Β½ a dragon fruit, pulp chopped into cubes
    Β½ cup cream cheese
    2-3 tablespoon butter Β for toasting the bread

    Method

    • Wash the mango cut the sides and scoop the flesh out and chop them into cubes.
    • Wash the strawberries and remove the stem and chop them lengthwise into 3 or 4 slices each.
    • Apply butter on both sides of bread and toast it brown and crisp.
    • Immediately apply 1 or 2 teaspoon of cream cheese on the toasted bread arrange on 3 fruits and serve immediately.

      That's a great idea for a nice breakfast or a small bite inbetween meals. I have never had dragon fruit, not quite sure I have seen it in the market in the UK, but they look interesting. I wonder what they taste like.

      The only fruit I have put on toast is banana for some reason, this needs to change! I can almost smell the ripe mango over here πŸ™‚

      I make a lot of smoothie bowls with mango and strawberries and all other fruits. But it looks nice on toast too. Will try this for my kid soon!
