Carrot-Coconut Ladoos

Carrot ladoos were in my to do list for a long time. so, when valli announced dessert using veggies theme, I decided to make it this time.  They are very easy to make, great in taste and color. I have used equal amount of carrot and coconut, but you can increase the carrots to another ½ cup.  Addition of raisins adds an  oomph to the color factor. Brown puffy raisins in orange balls looks damn cute. So do not miss that!!! This makes a great after-school treat to kids and  a colorful party dessert too.

Ingredients(makes 24 ladoos)

1 Cup shredded carrots
1 Cup desscated coconut
¼ Cup of silvered almonds
¼ Cup of raisins
½ tin Condensed Milk(400g tin)
4 teaspoon ghee

Method

  • In a Non-stick pan, add ghee, add silvered almonds and raisins and saute for  2 minutes or until the raisins puff up.
  • Add shredded carrots and saute for around 8-10 minutes until the carrots wilt and changes color to a pale  orange.
  • Now add desiccated coconut and saute for 2 minutes or until a nice aroma emanates.
  • Next add condensed milk and mix well. The mixture will immediately come together as a ball. 
  • Keep stirring for another 1 or 2 minutes until the mixture turns a bit dry.
  • Take it off the stove.  Let it become warm enough to touch. Make lemon-size balls out of it. Store it in an air-tight container in the  fridge.
