    Apple cake, an eggless cake made with whole wheat flour , shredded apples and condensed milk. A delicious cake with fall flavors.

    Eggless Apple Cake

    Eggless apple cake, loaded with shredded apples and mildly flavored with cinnamon. This is a perfect cake to enjoy the abundance of apples in the season.

    My husband recently went crazy while shopping and brought 4-5kgs of fresh apples. These iranian apples were so aromatic, that you can smell them a mile ahead. He wanted me to bake Apple pies. I have promised to bake these hand pies, and spiced vanilla tarts. So, before we start with the pies, i thought lets us enjoy some warm apple cake for the weekend.

    The Ingredients

    • Whole wheat flour, for personal reasons i bake only with whole wheat flour. You can use All purpose flour instead of whole wheat flour.
    • Condensed Milk, sweetened condensed milk is also a replacement for eggs, since it is sweet we also skip the sugar in this recipe. Here is a chocolate cake without condensed milk
    • Fat, i have used butter in this recipe, which can be replaced with oil.
    • Baking powder and baking soda along with vanilla cinnamon are ingredients most common to baking.
    • Make sure all the above ingredients are at room temperature.

    Step by Step Instructions for Eggless Apple Cake

    Take wheat flour, baking powder, baking soda, cinnamon powder into sifter and sift them into a bowl. If you are beginner to baking, i highly recomend sifting the dry ingredients. Particularly with whole wheat cakes, it ensures creating a light and airy flour mix which helps in a lighter sponge.

    Ingredients for apple cake

    Wash, peel, and grate 3 medium sized apples into a plate. I have used soft iranian apples. Add thsi grated apple to flour mix and mix together. This helps the apple to spread all over the baked cake, instead of sinking in the bottom.

    In another bowl, whisk together condensed milk, butter, vanilla extract and water.

    To this wet ingredients add the dry ingredients in batches and mix. Take care while mixing together, be gentle.

    Pour the prepared batter on to a greased cake tin, i have used two 5 inch cake pans. Bake the cakes in a preheated oven at 160C for 45-50 minutes.

    Once baked, remove the cakes out of the oven, let it sit for 10 minutes, then slowly unmould the cake on to the wire rack. let it cool completely on the wire rack. Slice and enjoy.

    Important points to note

    • Sifting/whisking the dry ingredients together helps to get a homogenous flour mix and creates a lightness in the dense flour mix. If you are a beginner to baking, i recommend using a flour sifter to do this. A whisk also works well
    • Do not beat the batter vigorously. Use gentle cut and fold method to mix.
    • If you are beginner to baking , i recommend lining your pan with parchment paper after greasing it. This helps to keep the cake intact without sticking to the pan.
    • Baking time varies from oven to oven. I baked this in my microwave convection oven, if I bake the same in my gas oven it will take only 30 minutes. So baking according to your oven.
    • Resting time is very important to remove the cake intact from the pan. So have patience.
    • Allow the cake to cool well before slicing it, to get a proper slice.

    Ingredients

    • 2 cups whole wheat flour i use normal chapathi aata pillsbury/aashirwadh/al baker
    • 1 teaspoon baking powder
    • 1 teaspoon baking soda
    • 3 nos fresh apples grated
    • 1 tablespoon cinnamon powder
    • 1 tin condensed milk 400 grams tin
    • 100 grams unsalted butter, ½ cup butter can be substituted with oil
    • 1 teaspoon vanilla extract
    • ½ cup water
    • 4 tablespoon chopped almonds as toppings optional

    Instructions

    • Preheat the oven to 160C. Grease the baking pans. i have used , 5 inch pans. You can also use one 8 inch pan. If you are beginner to baking, i recommend lining your cake tin with parchment after greasing.

    • In another wide bowl, take condensed milk, butter and water. Whisk well together.
    • To this wet ingredients add the dry ingredients in 3 batches and using a spatula /whisk mix to a batter. Take care while mixing, do not mix vigorously. Be gentle.
    • Divide the prepared batter into the cake pans. I sprinkled some chopped almonds on top.
    • Bake the cake in the preheated oven from 40-45 minutues or until a skewer inserted in the middle of the cake comes out clean.
    • Remove the cake out of the oven, let it sit on the counter for 10 minutes. this resting time is important to remove the cake intact from the pan.
    • After 10 minutes, release the sides of the cake from the pan, using a blunt knife and unmould the cake on to a wire rack. Let it cool completely on the rack. Slice and serve
    • The cake stays good on the counter for a day. I usually cling-wrap and leave it on the counter. if storing more than a day, i usually put it in an air-tight container and refrigerate. If serving from the fridge, warm the slice for 10-20 seconds and enjoy.
