    Pistachio Truffles

    An Easy to make quick dessert, snack, energy bars or whatever you want to call them. These truffles are packed with loads of Nutrients from Dried fruits that can keep you or your little one energized after a tired day. These cute truffles make a good Neivedhiyam/Offering on a Pooja Day and especially during Navrathri, where you have lot of guests coming for the Tamboolam.



    Adapted from Anja’s Food for thought
    Ingredients
    1/4 cup Seedless dates
    2 tbsp pistachio kernels
    2 tbsp desiccated coconut
    1/2 tablespoon coconut oil
    2-3 pods of Cardamom


    Coating
    desiccated coconut

    Method

    • Combine all ingredients in a food processor. Blend until ingredients stick together. 
    • Add more coconut oil if the batter doesn’t hold together. 
    • Form balls of the size of a cherry or walnut. Roll each truffle over desiccated Coconut
    • Store in airtight container at room temperature.
