Strawberry salsa and Labneh Cheese Toast - Toast for Dinner

There are certain recipes or dishes, that gets you an instant wow, this strawberry salsa and cheese toast is one in that list. As i clicked the dish with my iphone, i left the sandwich on the dining table, my hubby came and took a bite and he went, ooohh wow! 
The flavors were so married to each other in harmony, it creates a whishhh boom in your mouth, i m totally lost of words to describe the taste, like Remy of ratatouille, it is lightiningy! 🙂
Sorry for the bad photos, i had a long day, didn't have the patience to take my camera out, set the scene and click, so i just did it with my iphone. Hoping to click again tomorrow. Till then enjoy the toast.  
Ingredients
4 Multigrain bread slices
½ cup labneh/curd cheese, i used store-bought, incase u want a spiced labneh
10 nos strawberries
1 medium onion, finely chopped
½ a lebanese cucumber
1 green chili, finely chopped
1 tablespoon pickled jalapeno peppers, sliced (optional(
handful of freshly chopped coriander
2-3 leaves of fresh mint, finely chopped
two pinches of pepper powder
Salt to taste
Method
  • Wash, hull and chop the strawberries into cubes. Add chopped cucumber, onion, green chili, jalapeno peppers.
  • Toss well to mix. To this now add chopped coriander, chopped mint, pepper and salt. Toss to mix. Let this salsa sit for 15 minutes in the refrigerator for the flavors to mingle well.
  • Just before serving, butter the bread slices on one side and toast it brown and crisp. Just toast one side of the bread.
  • On the other side, spread a generous spoon of labneh, and load 2-3 teaspoon of strawberry salsa and top and serve immediately. Enjoy the waltz of flavors in your mouth, peace out! 🙂
