Halloumi Sandwich with onions and Red pepper

My Love for halloumi continues. Today's recipe is an inspiration from a sandwich i had 2 months before, in the airport terminal while leaving to chennai. I dont remember the shop. It was lunch time, kids wanted some smoothie, i wanted something solid to eat. 
Since i was already haunted by halloumi, i just ordered the halloumi & olives sandwich that was on the menu. The filling was so good, it paired so well with the crusty loaf of bread. Even my lil one enjoyed the bread so well. 
So, when deciding the sandwich menu, i wanted to try that same loaf at home too. Luckily i had all the ingredients handy today, and i made this for our breakfast. 
I toasted the sandwich crisp on both sides and packed for my husband's breakfast. He called back to say it was one of the best sandwiches till date. Didn't need any sauce at all. For my breakfast, i just assembled the sandwich and had it as such, so needed some sauce along. Toast or no Toast, this is one filling breakfast that keeps you going for long. Try making this with a good seeded,hearty loaf, you would enjoy the flavors more.

Ingredients
8 slices of bread ( i used samoon bread)
100 grams of halloumi cheese
2  red bell peppers
2 medium onions
1 large tomato 
10-12 black olives, pitted
2 teaspoon freshly ground black pepper
2 teaspoon lemon juice

Method

  • Wash and chop the bell pepper into thin strips, Heat a pan, add a teaspoon of oil and saute the pepper for 2-3 minutes in a simmer flame. Add 2 generous pinches of pepper powder to it, Remove from heat.
  • Slice the halloumi cheese into thick slices and toast on them on the same pan. Add a teaspoon of oil. Flip and cook both sides. Remove it on a serving plate. Add a teaspoon of lemon juice on the cheese slices.
To Assemble the sandwich
  • Wash and chop tomatoes, remove the seeds and the pulpy center. Cut onions into thin roundels. Cut open the samoon bread, place 4 slices of halloumi cheese, top it with red bell peppers, onions, tomatoes and chopped black olives
  • Sprinkle pepper powder, add a teaspoon of lemon juice. Close the sandwich. Warm it slightly on a pan or toast it crisp. Serve it along some sauce.

    The sandwich sounds filling , i like the combo used for the sandwich . Some sandwiches have an excellent flavor and just don't need accompaniments , this is one of them . Super !

    Seeing halloumi in the title I thought you shared an old post. 🙂 I never tried halloumi and it must be a tasty cheese if you are posting a second sandwich using it. Must try!
