Oat Pea Dosa/Crepe

When was in India, I got this Oats Recipe Book along with Big Jar of Quaker Oats, It has some good recipes with oats. I tried this Oat-Pea dosa from that book, tasted good and easy to make.

Ingredients (Makes 4-5 Dosas)
1 cup Oats
1/4 cup urad dal powder
1 1/2 cups water (approx)
1/2 tsp salt,
oil for shallow frying

Filling
1tbsp oil
2 cups boiled peas
1/2 tsp mustard seeds
1/2 tsp salt
1/2 tsp red chilli powder

Method

For the Filling, heat oil in a pan, put mustard seeds, when it crackles, add peas, salt and chilli powder. Stir fry for 2-3 minutes. Keep it aside
Grind oats to fine powder. Combine oats powder and dal powder and salt. Put enough water to make a battr of thin pouring consistency.
Heat a pan, put some oil and wipe it off. Remove the pan from fire, take a laddle full of batter and spread from inside to outside. Return to fire, when the edges turn brown, put a few drops of oil on the sides and on the dosa. Put some filling, fold over and Serve.
Though the recipe suggests to serve with any Chutney, I didnt feel like having any chutney/side dish with the dosa, as the filling itself was enough.

Note: Dont keep the batter for too long, as it becomes thicker and thicker.

Coriander Podi Dosa/Crepe

Coriander Podi dosa, tasted this dosa in a South-Indian Eat-out here in Dubai. Loved the taste, wanted to try this at home. This Dosa doesn’t need any Side-dish, if you wish to have serve with Sambar/Chutney/Podi.

Ingredients

3 Cups Dosa Batter
3 tbsp Idli Milagai Podi/Gun Powder
2 tbsp Gingely oil (optional)


To Grind
a Handful of Coriander leaves
1 Green Chillie
a small piece of tamarind
Salt to taste

Method

  • Grind the Ingredients given under ‘To Grind’ to a fine paste.
  • Heat a non-stick tava, Pour a laddle of batter in the center and spread it using the back of the laddle into a thin circle.
  • Dot the sides with little gingely oil.
  • Cook in a Medium Flame, until the sides turn brown and top-side is cooked.
  •  Spread a Spoonful of green chutney on the top and sprinkle Gun Powder/Idly Milagai Podi on top and let it cook for a minute. 
  • Fold and take it from the tava and Serve Hot.

Instant Cornmeal Dosa/Crepe

When u have kids around, u got to know the instant version of anything!!!! Dinner Time yesterday evening, My Lil Angel came running to the kitchen, “Amma, amma, enna venum?”, it means i should ask him “enna venum”. I asked him “enna venum di chellam?”, “mmmm, white dosai :)” came the reply. Aha idly/dosa batter got over!!! i said to him “amma will make poori for you, flower poori, aeroplane poori, star poori!!!” with my eyes wide open!!!!! The Reply “illai, white dosai”. All my acting gone waste!!! Ok, i said wait go watch Tom and Jerry i will make Dosai for you. Thats the Story behind my Instant Dosa!!!

Ingredients
1/2 cup Cornmeal
1 tablespoon All Purpose flour
2 tablespoon Wheat flour
Eno Fruit Salt a pinch
1 cup Buttermilk
Salt to taste
Method
Mix all the above said ingredients with buttermilk to pouring consistency.Heat the tava, pour half a laddle of the batter, spread a little, dont make it tooo thin!!!. Drizzle some ghee/oil on the sides,Cook both sides on a Low flame. Keep the flame low, or else u get black Dosas!!!! πŸ™‚  If you enough time you can even add some shredded carrot to the batter.

Serve HOT with any Chutney, Mine vanished with some Thokku!!! Happy Tummy!!!! Happy Mummy!!!

Besan Ka Cheela/Gram Flour Crepe

It is November already, time flies real fast. I m loving this speed. i m just waiting for my little one to grow up and join school!!! πŸ˜‰ Don’t think otherwise, i love him a lot, more than myself. But between this Motherly, Wifely duty, I feel the real ME is lost somewhere. 
I do Love being a Loving Wife and a Mother, but i feel i m not getting time or space to do what i want to and love to do.It is been long since, i sat and read the morning newspaper!!!! I love to watch NDTV, but now it is Cartoon Network, Disney Junior all the time, Even when the kids are not there, the TV too, automatically plays only those channels!!!! No time for personal grooming, i sometimes feel i look like my kiddo’s Nanny!!!! ufff!!!!
Weekends, i started to feel why it is coming, with everybody at home, i go crazy. The moment i wake up, i m in the kitchen, making 3 different breakfast for 4 people.  Thought of it makes me dizzy!!!! To make those morning less complicated and to keep me sane, I go for these Instant Idly/Dosa recipes. With my elder one being a Dosa King, he is a happy kid with dosa for all 3 times of the day. I keep it simple with a Chutney and some Leftover sambhar.  You can even pair it with some spicy Mango pickle.

Ingredients (Makes 4 Cheela’s)
1/2 Cup Besan/Gram Flour/Kadalai Maavu
1 cup water
1 Medium-sized onion
1no green chili
1/ 4 tsp salt (or to taste)
hing a pinch
a sprig of curry leaves
handful of coriander leaves
Method 
  • Chop onion and chili finely, wash curry leaves and coriander leaves and chop them finely.
  • In a bowl, add besan, chopped onion, chili, curry leaves, coriander leaves. Add Water little by little and make a batter of pouring consistency.
  • Add salt and hing and mix well. you might need more than 3/4th and less than 1 full of cup of Water. So add water slowly to achieve the desired consistency.
  • Heat Tawa, pour a laddle of batter in the center and spread a little. Do not make it thin. Dot the edges with little gingely oil/ghee. 
  • Cook  for few seconds, till the top looks dry, flip and cook the other side for another minute. Remove to a serving plate.  Repeat the same with rest of the batter

Pesarattu/Green Gram Dosa/Mung Bean Crepe

Thinking of a Breakfast on a Weekday Morning is a real Work, that too with somebody like my little devil!!!!! 
Amma (Me) : Naras shall i make Poori?
Naras : No, 
Amma (Me) : What do you want?
Naras : mmm!!!!,  Dosa with Sambhar!!!!!! 
So, i got to think about Dosa Varieties to keep myself happy with Dosa’s!!!!!Coz, he is happy with the same type of Dosa everyday, only demand is SAMBHAR!!!!!! Without Sambhar, No Dosa!!!!! πŸ™ 
 I often make this Green Gram Dosa and Lentil Adai along with the regular Dosa. Though i make it often, now only got time to post it!!!! A Delicious, Healthy and Protein-Power Packed Breakfast Recipe, that gives all the freshness and energy we need on a busy Morning!!!!!! 

Ingredients
1 Cup Green Gram/Mung Bean
1 tbsp Raw Rice
4-5 Green Chilies, chopped
1 tbsp of Ginger
1 medium-size onion,chopped roughly
Salt to taste

Method

  • Soak Green Gram and Rice together for 3-4 hours. I normally soak them at night and grind in the morning. This way, the green gram will also develop some small sprouts , though not full, it is healthy.
  • Drain the excess water, Grind the dal and rice together with rest of the ingredients to a smooth batter, with half cup of water, in a mixer. Transfer the contents to another vessel.
  • I prefer to grind the onions along with the batter, since my kiddo prefers a smooth dosa. You can add chopped onions to the ground batter, before pouring the dosa.
  • Heat a Non-stick Pan, Add 2 drops of oil and wipe out well with a tissue. Take a laddle of batter, pour in the center of the pan and make a circle using the back of the laddle.
  • Add little oil along the sides, Once the sides start to brown, turn the other side and cook for a minute.
  • Again my kiddo prefers a soft dosa, so i dont leave it to become crisp. So Cook according to your preference.
  • Serve Hot with your favorite Chutney or Podi or Sambhar.

Godhumai Dosa/Instant Wheat Crepe and Kothamalli Thogayal/Coriander Chutney – Blog Hop Wednesday

This Week for Blog Hop Wednesday i m paired with Hyma of Hyma’s Flavours. I decided to make her Wheat Dosa and a Coriander Thogayal recipe. Both turned out to be a perfect Combo. The Wheat Dosa, i m making for the first time, it was a Super-hit. Both the Recipes are Easy and Quick to make.


Godhumai Dosai/Instant Wheat Crepe
Ingredients
3 Cups Wheat flour

1 Cup Rice Flour
1 Cup Whisked Curd, preferably sour
3-4 nos Green Chillie, finely chopped
1 tsp Cumin Seeds
2 Medium Onions, finely chopped
1 Medium Carrot, Shredded
Salt to taste
Water, as needed


Method
  • In a Wide Bowl, Mix both the flours, add Curd and Water and Bring it to Dosa Batter Consistency/Pouring Consistency.
  • Add Chopped green chillies, onions and shredded carrot to the batter and mix well. Adjust the Salt.
  • Heat a Non-Stick Tawa/Pan, Pour a laddle of batter in circular motion. Don’t spread the batter using the back of the laddle!!!!!
  • Keep it to a medium circle, smear the edges with little oil. Wait for a minute, Flip and Cook both sides.
  • Serve Hot with your favorite Chutney
Kothamalli Thogayal/Coriander Chutney
Ingredients
1 Bunch of Coriander leaves
2 tbsp Urad dal
3-4 Red Chillies
Tamarind, a small gooseberry size
Salt to taste
hing a pinch



Method

  • Cut the roots of the Coriader leaves bunch, keep the stalks, Rinse thoroughly and Chop Roughly.
  • Heat a Pan and Roast urad dal, chillies and tamarind with little oil. Switch off the pan, add Coriander leaves and let it be in the pan.
  • When the roasted ingredient are cool enough, Grind them along with salt and coriander leaves.
  • Do not add much water while grinding.Let the chutney be little coarse.
  • Transfer it to a bowl, heat a tsp of gingely oil, splutter mustard seeds, add hing and pour over the chutney.

Instant Maida Dosa/Instant Plain Flour Crepe – Virtual Bridal Shower

Blogging has become more than a hobby these days. Many of my fellow bloggers would definitely agree with my thought. It has opened us a new world of  virtual friendship.  An year of Blogging Marathon, has brought so many friends and we have become a part and parcel of each other’s  happiness and sorrow. Its an Happy Moment in the Blogging Marathon Family, Aarthi of Yummy Tummy is getting Married later this month, so some of us decided to Surprise her by throwing a Virtual Bridal Shower. Each of us picked up a recipe from her blog, cooked, clicked, relished and now posting her a virtual treat to enjoy!!!!

 Ingredients

1 Cup Maida/Plain Flour/All Purpose Flour
1/4 Cup Rice Flour
1 Medium size Onion, finely chopped
2-3 green Chilies, finely chopped
2 sprigs of Curry leaves
1 tsp Cumin Seeds/Jeera
Salt to taste
Water as needed, (approximately 2 cups)
Oil for drizzling the crepes/dosa’s

Method
  • In a mixing bowl add every ingredients, except Water and oil.Mix them well.
  • Add water little by little to make a thin batter. The batter should be of pouring consistency and not too runny.
  • Heat a non stick tawa in a medium flame, Pour a ladleful of batter, spread it thinly. You need spread fast, since the dosa sets fast.
  • Drizzle some oil and cook untill the bottom crisp up. Flip over and cook till it turn light golden. Be little patient, it takes little time for the Dosa/Crepe to get Crisp.
  • Serve Hot with Sambar/Chutney.

Tomato-Garlic Rice – Day 3 Blogging Marathon

Another Quick to make Rice Recipe is Tomato Rice. There are ‘n’ number of ways to make this simple, yet tasty rice. I love this with a dash of Garlic and crunchy nuts.

Ingredients
1 Cup Rice, Cooked
2 Large Tomatoes, Cut into 1 inch Cubes
3 Green Chillies, finely Chopped (can be increased, according to taste)
5-6 garlic flakes, thinly sliced
1 tbsp Freshly grated Coconut
Salt to taste
2 – 3 tsp Oil/ghee
1/2 tsp Mustard Seeds
1/4 tsp turmeric powder
Hing a pinch
Roasted Cashews, Fresh Coriander Leaves for Garnishing

Method

Heat Oil/Ghee in a Kadai, Splutter Mustard Seeds, add hing. Add Garlic and Chillies. Once the garlic turns brown, add Tomatoes and turmeric powder, add little water and Cook until Soft. Keep the Flame low while cooking tomatoes. Once they are done, Add Coconut and Put off the flame. Add Rice, Mix well. Adjust the Salt. Garnish with Roasted Cashews and Fresh Coriander. Serve Hot with Raita or Some Crisps!!!
You can replace cashews with roasted Almonds or Peanuts. If you want the rice to be more spicy, try adding 1 or 2 Red Chillies while seasoning or add some Pepper Powder while serving.

Oats and Peanut Butter Cake – Day 2, Blogging Marathon #4

This recipe is inspired from Madhuram’s. I have halved the recipe and omitted cocoa.And Also, used oats flour instead of whole oats. So, for the original recipe please follow the link. 

Ingredients
1/2 Cup All Purpose flour
1/3 Cup Oats flour 
4 tbsp Sugar
1/2 tbsp Baking Powder
1 tbsp Peanut Butter
1/2 Cup Milk
1 tbsp Choco chips


Method

Sieve together All Purpose Flour, Oats flour, and baking powder.  In a Saucepan, melt peanut butter with milk, stirring constantly. Take it off the heat and let it cool completely. Now incorporate the dry and wet ingredients together. Take care, not to over-mix. i used two small silicon palm-sized, heart-shaped moulds to get two flat cakes. Grease the mould and pour the batter to half its level. Arrange the Choco- chips on top. 
Bake in a pre-heated Oven @ 180C for 20-25 minutes. Baking Time differs from oven to oven. so, please do the Tooth-pick test to check the done-ness of the cake.

Yellu Podi Saadam/Sesame Rice – Day 6 Blogging Marathon

It has been a hectic day. My Son isn’t well from yesterday night. Though everything was ready in the morning, i couldnt find time to sit and do the post. Atlast found some time to finish it before the day ends. Sesame Rice is another flavourful rice, very quick to make.

Ingredients
1 cup Rice,Cooked
2 tbsp White Sesame Seeds
3 -4 nos Red Chillies
1 tsp Urad Dal/Black Gram Dal
3-4nos Cashews
Salt to taste


Seasoning
2 tbsp Gingely Oil/Ghee
1/2 tsp Mustard Seeds
1/4 tsp broken urad dal/Black Gram dal

Hing a pinch
Curry leaves a few

Method

Heat a pna ad dry roast the seeds in a low flame till light brown in colour.  Heat half a tsp of oil and fry red chillies with black gram dal and Cashews.  Cool the ingredients and Powder them.  Heat rest of the Oil/Ghee Separately and splutter mustard seeds and fry curry leaves and hing. Add Broken urad dal and fry them until brown.  Add Cooked Rice with Salt and the grounded powder. Mix Well. Garnish with any Roasted Nuts or just coriander leaves.
