Watermelon & Feta Salad with Mint

Week 2 of Cooking carnival 2016, begins from today. My menu for this week is Salads.  yeah, i can hear many murmur, boring!!!  Nope, salads can be made very interesting, full of flavors and spices.  For the past 1 year, me and husband try to include lot of salads in our daily meal. Mostly our dinner was either a bowl of filling soup or salad with balanced ingredients.
I dont use fancy sauces to spice up my salad, our humble lemon, mint, parsley, pepper, ginger can be jazzed up together for a yummy and colorful bowl. So, this 6 days, i will try to jazz up this place with some colorful salads, that fills the eyes and also your taste-buds. 

Today, i present you a very simple, Watermelon salad, dressed with feta and mint. This beauty, on plate will make your guests go ga-ga about you and your party, catching all the attention. 

Simple flavors, but when all combined together, they give you such a happy feeling in your mouth that totally drenches the whole inner sense.  Good food, great philosophy! 

Ingredients

2 kg Watermelon, i bought 1 quarter of a big watermelon
2 tablespoon feta cheese, crumbled
handful of mint leaves, finely chopped
1 teaspoon freshly ground pepper
1 small onion, thinly sliced

Method

  • Use a melon-baller and scoop the water melon. i got around 5 cups of melon balls. I have used about 14 melon balls for this salad.
  • Arrange the melon balls neatly on a serving plate. Arrange the onion slices around the melon balls. 
  • Sprinkle a teaspoon of crumbled feta cheese on top. Garnish with mint leaves and pepper powder and serve immediately.

    Even I don't use fancy sauces for my salads. Mine too are very basic, chili powder, salt, lime plus one or two common spices from Indian masala dabba. Watermelon and feta must have tasted awesome! I have seen this combination in many salads.

    I am jealous..we never get such amazing watermelons which can be scooped in such pretty balls..here they are full of seeds...but I totally love this salad..so pretty..would not feel like eating..just admire:))

    I made this last month with fresh watermelon - with a melon baller, it was really cool to scoop out these balls ! these look perfect , Priya !
