Pepper Rice - Warm hug in a bowl

When the weather changes, it brings the usual round of colds and sniffles. My elder one, was feeling a bit under the weather last week and with his busy college routine, he wasn't in the mood for anything heavy.

I was planning to redo my decade old blog post pepper rice which i made with brown rice, his want of something warm, comforting to give a good kick to his sinuses, gave me that extra dose of enthusiam much needed for me to redo this recipe.

This quick and easy pepper rice, is simpel to make, all you need is a bowl of leftover rice, and it gets done in 15 minutes. The freshly ground black pepper, toasted peanuts and almonds, made it warm and comforting , just the thing to lift your dull and dreary cold hit mood.

If you are planning to make it for dinner, just pair it with a hearty subzi like bhindi masala, vegetable kalwan, or sweet potato fry like i did.

Hands down, this is one of the easiest meals you can make in minutes, that not only looks tempting, but tastes like a warm hug in a bowl, especially when you're under the weather.

Ingredients for Easy Pepper Rice

  • Leftover rice, you can also make it with fresh rice. I made this recipe with leftover rice.
  • Black pepper, hero of our recipe
  • Tempering Ingredients, Indian tadka staples, mustard seeds,curry leaves, asafoetida/hing, urad dal and chana dal for the crunch. I have used 2 red chilies too.
Ingredients for Easy Pepper rice recipe
  • Other crunchy elements, almonds and peanuts. Though completely optional, i would definitely recommend if you dont ahve any allergies. Since the rice is made with dry spice powder all these crunchy elements add texture to the rice.
  • Garnish, i have used fresh coriander leaves, you can also add some fresh mint .

How to make South indian Pepper Rice

  • Keep all ingredients ready on the counter. This recipe literally takes 15 minutes.
  • In a small tadka pan, add 1 teaspoon of ghee, add black pepper and fry it until aromatic. The pepper would start to burst a bit. Remove it from the heat.
  • Pound the roasted pepper in a mortar and pestle and keep it aside until use.
  • In a kadai or a wide pan. Add gingely oil, when hot, Add the entire tadka ingredients all together. Mustard seeds, red chilies, curry leaves urad dal, chana dal, peanuts and almonds.
Lets make south indian style milagu rice
  • When the peanuts starts to crisp up and dal start to turn golden brown, add hing and mix well. Reduce the flame to the simmest possible.
  • Add the cooked rice, mix well with the tempering. Now add the freshly pounded black pepper and salt. Mix well.
  • Finally garnish with fresh coriander leaves and add 1 tablespoon ghee mix well. Serve it hot with side of your choice.

Ingredients

  • 300 grams cooked white rice you can use any rice, grains or millets of your choice. make sure it is fluffy
  • 10 grams whole black pepper
  • 1 teaspoon salt
  • 1.5 tablespoon ghee

Tempering Ingredients

  • 1 tablespoon groundnut oil or any oil of your choice
  • 1 teaspoon mustard seeds/kadugu
  • 1 teaspoon urad dal/black gram dal/Uluntham paruppuu
  • 1 teaspoon chana dal/gram dal/Kadalai paruppu
  • 15 grams almonds crushed roughly
  • 20 grams peanuts
  • 2 red chilies
  • ½ teaspoon hing or asafoetida
  • 1 sprig curry leaf

Garnish

  • handful of fresh coriander leaves

Instructions

  • Keep all ingredients ready on the counter. The rice gets ready in 15 minutes.
  • Heat a small tadka pan in simmer flame, take 1 teaspoon ghee, add black pepper and roast until it sizzles and starts to crack.
  • Take the black pepper off the stove. Pound it to a fine powder in a mortar pestle. Keep aside until use.

Let's Make Pepper Rice

  • Heat a wide pan in a medium flame, add groundnut oil. When hot, add all the tadka ingredients at the same time.
  • Let the mustard seeds crackle and the peanuts and dal start to brown. Reduce the flame to simmer add hing to the tempering.
  • Now add the cooked rice and mix it well with tempering. To this add freshly pounded pepper powder and salt. Mix well
  • Add fresh coriander leaves to the rice, along with 1 tablespoon ghee and mix it well.
  • Serve it hot with side of your choice. I served this hot pepper rice with homemade mixture and sweet potato fry.

Can I use freshly cooked rice for making pepper rice?

Yes you can use freshly cooked rice for making this warm and comforting pepper rice. Make sure you cool the rice well before adding it to the tempering. This makes sure the rice holds shape and not get mushy.

Can i use pepper powder without roasting it in ghee?

Yes you can. Add the raw pepper powder directly to the tadka before adding cooked rice, give it a good stir to wake it up a bit . Add rice and mix well.

Can i make this Vegan?

Yes you can skip the ghee and use any neutral cooking oil to make this warm and comforting milagu sadham
