My December Ritual

Both my kids are fan of shortbreads and homemade muffins. My little fella, a teen now, loves a filling snack for his second break in school. That is how, my old muffin posts, were getting new pictures and content.

Usually around Christmas i bake a few cookies and my fool proof Christmas Fruit Cake for my friends and family. This year, the list has grown long. My elder wants Coffee cookies , whereas my husband wants cashew cookies and his favorite Mexican wedding cakes. My mother wants simple almond cookies, to enjoy with her afternoon coffee.

All the cookies mentioned are old recipes in the blog, glad i will be baking them in the coming weeks and the blog will get some fresh updated pictures.

The Cardamom Cookie Story

Today's recipe of cardamom cookies are almost 12 years old. I tried a small batch, as sample for the holiday gifts. To my surprise , the boys loved it. My younger fella a serious critic, wants to take it for his school snack. So Oh boy, my lucky bake!!

These whole wheat cookies has a good hint of cardamom and made with butter. Yes, they are little high on calories, so be mindful when you enjoy them.

Why you should try this Cookie

  • First of all it is cookies, you definitely need them with your evening coffee or tea. That too perfectly baked, crispy on the outside, soft and fudgy in the middle.
  • Simple and clean ingredients. All are regular pantry ingredients, nothing fancy.
  • They are very easy to make. Takes less ingredients and less time.
  • They make a great edible gift the the festive season. Come December you have Christmas, New year celebrations till march, so make a bigggg batch and share the joy with your friends and family.
  • Kids love it, my younger fella (teen now) loves it, my elder (in college) loves anything i bake, but the younger fella is like Michelin judge, It is younger fella approved, so definitely your kid will also like it, so go ahead and bake it.

Ingredients for Whole Wheat Cardamom Cookies

  • Flour : I have used whole wheat flour to make these aromatic cardamom cookies. You can also use ¾th flour and ¼th almond powder for a nutty cookie.
  • Salt & Sugar : I have used jaggery powder to sweeten these buttery cookies. You can use brown sugar or white sugar instead of jaggery. I have also added a pinch of salt to the cookies.
Ingredients for making whole wheat cookies with cardamom
  • Fat : Butter, just butter, no doubts on that. If vegan, pls substitute accordingly.
  • Leavening agent : I have used baking powder to bake these delish whole wheat cookies.
  • Spices : Name says it all, i have used a good amount of cardamom in this eggless cookie. You can go ahead add a dash of cinnamon and a pinch of ginger and nutmeg and make it a spiced cookies, ohh love that idea, i might bake them.
  • Liquid : I have used full fat milk to bring the dough together. I think even water or plant based milk can also be used to make the dough, since the liquid is just 2 tbsp.
  • Toppings : I have not used any toppings, you can go ahead and use any nuts to make it a crunchy crispy cookie.

Instructions to Make Eggless Cardamom Cookies

Please check recipe card below for exact measurements of each ingredient used and also for the detailed instructions

  • Preheat the Oven, to 170C, Line a baking tray with parchment and keep ready.
  • Take jaggery powder along with cardamom powder, baking soda, salt in a mixer jar. Grind it to a fine powder.
  • In a large bowl, take flour, ground jaggery mix and whisk it together.
  • To this add butter and mix it into the dough. To this add milk slowly and make a soft dough.
How to make whole wheat cardamom cookies
  • Make log of the dough and refrigerate for 15 minutes.
  • Take the dough out, cut into thick disc, place it on the parchment with enough gap between cookies.
  • Bake it in the preheated oven for 14 minutes. Oven timings vary with models. So be watchful after 12 minutes.
  • Remove the cookies from the oven, transfer it to a wire rack. Let it cook completely.
  • Store it in an air-tight container.

Equipment

  • Measuring cups and spoons
  • Convection oven
  • Bowl for baking the cookie dough
  • Whisk and spatula

Ingredients

  • 1 cup whole wheat flour I used Al baker chakki fresh aata
  • ½ teaspoon baking soda
  • 2 teaspoons ground cardamom
  • ½ cup jaggery powder You can use brown sugar or normal white sugar
  • ¼ teaspoon salt
  • 2-3 tablespoon milk
  • 100 grams unsalted butter

Instructions

  • Preheat the oven to 170C, Line a baking tray with parchment paper. All ingredients should be at room temperature.
  • In a mixer jar, take jaggery or brown sugar or white sugar along with cardamom powder, baking powder and salt. Grind it to a fine powder. The jaggery powder i used had few lumps, so i ground it to fine powder.
  • In a large bowl, take flour and add the ground sugar and spice mixture to it. Mix it well with your hands or use a whisk to mix.
  • Add butter to this dry flour mix and start mixing it with your hands. Slowly add 1 tablespoon of milk at a time and make a soft dough.
  • The dough comes together quickly. Roll the dough in to 2 logs and refrigerate it for 15 minutes. This helps the butter to solidify and the dough a bit stiff.
  • After 15 minutes, remove the dough and slice it into discs and place it on the parchment laid baking tray.
  • I tried my best to cut it into proper discs, but clumsy me, couldn't so i again reshaped the cut discs between palms into proper round shape.
  • The cookies spread while baking, so make sure you leave enough space between cookies.
  • Bake the cookies in the preheated oven for 14 minutes. Oven baking time might vary from model to model, so keep an eye on the cookies from 12th minute.
  • Remove the cookies after the said time. While removing they will still be soft in the middle. Let it be in the tray for another minute or two.
  • Then remove them with a spatula onto a wire rack, let the cool down completely.
  • Store the cookies in an air-tight container. They have the perfect texture with crisp edges and a soft center. Pairs well with a cup of hot tea or coffee.
  • These cardamom cookies make a great edible gift for the upcoming holiday season.

    They look absolutely delicious. With crisco shortening the cookies must be melting the moment you pop in your mouth. Hah, the fat is the only -ve with otherwise therapeutic baking.

    Priya, I enjoy a cookie with my tea on a daily basis. Love this cardamom cookies recipe as you have used wheat flour and jaggery. Addition of cardamom makes them all that more flavourful. Bookmarked, baking them over the weekend.
