About Eggless French Toast

I was always intrigued with this name, what is this French toast? But when i read about it, it isn't even French!

The earliest known reference to French toast is in the Apicius, a collection of Latin recipes dating to the 1st century CE, where it is described as simply aliter dulcia 'another sweet dish. In France it’s called pain perdu or lost bread, its use of stale or otherwise "lost" bread.

So, how the name French Toast? According to legend, it was a man named Joseph French. He created the dish in 1724, and advertised it as “French Toast” because he was grammatically inept and forgot the apostrophe. Power of Punctuation, people.

So, grammatically correct or wrong, but these toasts are delish and such a great recipe to whip up in a hurry. Ingredients to Make Eggless French Toast

  • Main Ingredients : Corn flour, Milk, 2-3 days old bread , I have used corn flour to replace the eggs in this Eggless French toast. You can go with custard powder for that beautiful richness. Since i didn't have custard handy, i went with corn flour.
  • Bread : To get a nice golden, crisp French toast, you need to use thick slices of bread or stale bread. So it can hold all that liquid and not fall apart. Fresh bread, will turn into a mush.
  • Flavorings : I have used cinnamon powder and dry ginger powder in the toast recipe. You can also use Vanilla extract instead.
  • Sweetener : I have used sugar in this gorgeous French Toast.
  • Garnishes : Fresh berries, I have used blue berries and sweet strawberries. We don't prefer syrup on toast, you can go ahead and use maple syrup or agave nectar or good old honey on top.

How to Make Eggless French Toast

Please check recipe card below for exact measurements of each ingredient used and also for the detailed instructions

  • In a wide bowl, take corn flour, add milk and whisk well for the flour to dissolve well.
  • To this corn flour mixed milk, add sugar, cinnamon powder and ginger powder. Mix well.
  • Heat a pan, make sure it is not scorching hot. I used my flat iron pan for the toast.
  • Keep the milk mix bowl near, take a slice of bread, dip it in the milk, turn and dip the other side also. Just 10 seconds of dip, Remove the bread, let the excess liquid drip off the bread.
Cinnamon Toast for breakfast
  • Place a blob of butter on the hot tava, and put the bread on the tava. Let it get nicely brown on one side. Do not be in a hurry and flip it immediately. Once it is golden brown on one side, flip and toast the other side too.
  • Repeat for all the slices, kept aside for the toast. Serve it warm, with garnish of fresh berries. I didn't add any syrup here, as we don't prefer it too sweet.

Equipment

  • A good tava/gridle for toasting
  • Whisk
  • Bowls for mixing

Ingredients

  • 10 slices Bread I have used 3 days old white bread
  • 2 tablespoon corn flour or custard powder i used corn flour
  • 2 tablespoon sugar
  • 1 cup full fat milk
  • 1 teaspoon cinnamon powder
  • ½ teaspoon ginger powder
  • Butter for toasting

Instructions

  • In a wide bowl, take corn flour, add milk. Mix well using whisk for the flour to dissolve well.
  • To this now add sugar, cinnamon and ginger powder and whisk well.
  • Heat a pan. I used my flat Iron pan for toasting the bread. Keep the flame medium. Too hot pan, would burn the toast. Been there, done that. Keep the flame medium.
  • To know whether the pan is at correct heat, sprinkle water, it should sizzle and not smoke. If smoke, take it off heat, let it cool down a bit and heat again.
  • Now when the pan is ready, Take a slice of bread, dip in the milk mix, Dip, flip the other side and dip again. Take the bread out, let it drip all the excess milk.
  • Add little butter to the hot pan, put the soaked bread on the pan. Let it sit on one side for good 15-20 seconds and brown beautifully. Then slowly flip to the other side, add butter if needed and toast to golden brown.
  • Be patient while toasting, keep the flame medium, let the toast turn golden brown on one side, then flip to the other.
  • Remove the golden toast from the hot pan. Serve it warm with a side of fresh fruits.

Notes

  • I didn't have custard powder handy, so had to go with corn flour, if you have custard powder, go ahead and use it.
  • Thick slice of bread is preferred for the toast as it can hold the liquid well and not fall apart like fresh bread. I have used 3 days old bread and it was good, especially the last slices, perfect!
  • We don't prefer sweet syrup on the toast, the addition of sugar to the milk mix, gave it the necessary sweetness. If you like, then add a drizzle of maple syrup or honey on top.

    Using corn flour to make crispy French toast is a great idea. Like you said, this would be great for mornings with a cup of fruits.
