You can name them as you want. We loved these crispy crunchy crackers. It took me just 30 minutes to make it and surprisingly everyone at home loved it.
I usually bake late in the night, after closing my kitchen for the day, less people, less chaos. The aroma of the dried fenugreek from the mathri's dragged my elder fella to the kitchen. He tasted these crackers straight out of the oven. My younger one who usually prefers sweet bakes, took these crackers for his school snack box. That's a win!!
My mom is in her 80's and she prefers light snacks. These whole wheat and amaranth crackers use very less oil and comes together quickly. You can make as you are making your tea. She was happy to enjoy these for her afternoon snack.

Little About Amaranth Grain
Amaranth, also known as ramdana or rajgira in India. This is one of the most ancient grains, valued for its impressive nutrition and versatility. Naturally gluten-free and packed with protein, fiber, and essential minerals, this tiny seed is a true super grain.
Its mildly nutty flavor adds depth to both sweet and savory dishes.
We get this as both whole grain and ground flour in most of the supermarkets. You can easily incorporate this super grain in your daily diet. It is perfect for recipes like rajgira chikki , amaranth flour pancakes, or porridge. Including amaranth in your diet is a simple way to boost your protein intake and support better digestion.

Growing up in a south-indian house hold, greens is the only way we included amaranth. Keerai kootu , a luscious dal with fresh amaranth greens and lentils. It is interesting how our ancestors have included these so called super foods, without any fuss in daily cooking.
Ingredients to Make Baked Amaranth Biscuits
- Main Ingredients : These tempting crackers are made with a combination of Wheat flour and amaranth flour. For personal reasons i bake only with whole wheat flour. You can use All purpose flour instead of whole wheat flour.

- Spices : These crunchy biscuits are flavored with freshly pounded black pepper, cumin seeds along with salt.
- Fat : I have used ground nut oil while make these crackers.
- Add-ons : These rajgira crackers also contain sesame seeds and are mildly flavored with aromatic dried fenugreek.
Step by Step Instructions to Bake Amaranth Crackers
- Measure and keep all ingredients ready on the counter.
- In a wide bowl or a plate with raised edges, take all the dry ingredients.
- Mix it well with your hands. Now add the oil and rub it into the flour. The flour should resemble wet sand.
- Now slowly add water to this and make a soft dough.

- Divide the dough into 4 portions. Roll each portion into thin disc. Cut into desired shapes.
- I prefer to cut into squares/rectangle. Lay the cut pieces onto a parchment laid baking tray.
- Preheat the oven to 170C. Bake the biscuits for 16 minutes. For the last 2 minutes of the bake turn on top rod for the beautiful brown on top.
- Remove the baked biscuits from the oven on to a cooling rack. Let them cool well. Store it in a air-tight container, they remain good on the counter.

Equipment
- Weighing Scale for measuring ingredients
- Measuring cups and spoons
- Bowls for mixing the dough
Ingredients
- 150 grams whole wheat flour
- 150 grams Amaranth flour/Rajgira flour
- 1 tablespoon cumin seeds
- 1 tablespoon white sesame seeds
- 2 tablespoon dried fenugreek leaves
- 1 tablespoon freshly pounded black pepper
- 1 teaspoon salt
Wet Ingredients
- 65 grams oil
- ½ cup water you might need 2-3 tablespoon extra
Instructions
- Measure and keep all the mentioned ingredients ready.
- In a wide bowl, take all the dry ingredients mentioned above. Mix them well to form a uniform mixture
- To this dry ingredients, add oil and rub it well into the flour mix. It should resemble wet sand.
- Now add water little by little and make a soft pliable dough. Divide the dough into four halves. Roll out each portion into a thin circle of ¼ inch thickness.
- Cut the dough into desired shapes. I cut them as rectangles. You can also use a cookie cutter, cut out circles from the rolled out dough. Repeat the same with the remaining portions.
- Preheat the Oven to 170C. Line a baking tray with parchment , arrange the cut out crackers on the tray.
- Bake for 16 minutes, for the last 2 minutes, turn on the top rod for even browning on top.
- If you don't have that option in your oven, Bake the biscuits for 10 minutes, flip and bake them for another 6-8 minutes.
- Once done, remove the biscuits from the oven to a cooling rack. Let them cool completely.
- Store them in an air-tight container on the kitchen counter. Mine stayed good for more than a week.
- Enjoy these savory crackers with your evening coffee or tea. They make a great snack for road trips and wonderful gift to your friends and family this festive season.
