Easy oven roasted strawberries. These plump strawberries turn sweet, juicy and jammy in 30 minutes. Perfect over yogurt, pancakes, oatmeal, cheesecake or ice cream.

Roasting strawberries is one of the easiest ways I rescue berries that are slightly tart or losing freshness. The concentrated flavor and natural syrup make them perfect for quick breakfast bowls and simple desserts.

Roasted Strawberries

There is something magical about what the oven does to strawberries.

A tray of fresh berries turns soft, glossy and wonderfully jammy, with the most delish syrup in the pan. The aroma that fills the kitchen while they roast feels amazingly festive.

The first time I tried roasting strawberries, I was totally desperate! I had bought a big box that looked gorgeous and perfect, but one bite into it, they were so bland. I couldn't bring myself to waste them.

So I tossed them with a little sugar, vanilla and a squeeze of lemon and let the oven do the magic.

The strawberries became deeper in flavor and incredibly delicious. Ever since then, this has become one of my favorite quick fruit recipes to make during strawberry season.

How to use these syrupy Berries

I have been making roasted fruit for years, especially during berry season when we end up buying more fruit than we can finish quickly. I have a good collection of strawberry recipes here in this kitchen to prove that.

We love to drizzle the thick syrup on this delish apple pancake. French toast is something my boys love, a swirl of this juicy berry on them would make it heavenly.

If you are a chia pudding person, try to snuggle a spoonful of roasted berries in between the layers for a berrilicious treat.

How long do roasted strawberries last?

Roasted strawberries last 4-7 days in the refrigerator and can be frozen for up to 4 months.

Can you freeze roasted strawberries?

Yes, they freeze well, generally for up to 2-4 months. They can be stored in freezer bags or frozen in ice cube trays for easy portions

Can I make roasted strawberries without sugar?

Yes, you can roast strawberries without added sugar. The roasting process intensifies the fruit's natural sweetness. While using it in recipes, if you want, you can add maple syrup/honey/sugar.

Can I use frozen strawberries?

Yes, you can roast frozen strawberries. Though i haven't tried it personally. You don't thaw them. Just add an extra 5-10 minutes to the roasting time for the extra liquid they will release.

Ingredients

  • 500 grams fresh strawberries
  • ½ cup soft brown sugar
  • 1 teaspoon vanilla extract
  • juice of a lime optional
  • ¼ teaspoon red chili powder optional

Instructions

  • Wash and hull the strawberries and chop them into 3 slices each. Spread the sliced strawberries on a baking pan.
  • Add sugar, vanilla extract, ginger and chili powder. Use your hand and mix them well, so the strawberries are well coated with sugar and spice mix.
  • Preheat the oven to 180C and roast the strawberries for 30 minutes. Once done, remove them from the oven. let it cool. Transfer the contents to another air-tight jar and refrigerate it.
  • Enjoy these juicy and jammy berries on your toast ,on your morning cereal, pancakes, ice cream, yogurt bowl, the list is endless.

Notes

  • Adjust sugar depending on the sweetness of the berries.
  • Roasting time may vary depending on berry size.
  • The syrup thickens as it cools

    I've not tried roasted strawberries. Such a wonderful idea, to roast them especially when they are bland. Like this versatile condiment. Summer time strawberries are usually on offer. Can't wait to roast some.
