Cauliflower paneer burger, a super tasty and delicious vegetarian burger made with a spicy paneer tikki sandwiched with greens, cheese and sauces. A hearty & complete meal to enjoy anytime.

Paneer : Vegetarian Protein Source

As a vegetarian, paneer is one of our protein choice. We love paneer, especially my boys. They can have paneer everyday. In fact my husband makes a sad face if he doesn't eat paneer everyday. Paneer poha is our regular breakfast, and easy one to make too. And with hearty paneer, it keeps you full for more time.

Apart from adding it to poha, this cauliflower paneer and peas rice is often made as weekend lunch. Mainly it makes my job easy, quick to make and also a hearty meal.

Not only in rice and kheer, we can use paneer in variety of dishes to up the protein content. Like this creamy paneer kheer, hearty stromboli loaded with veggies and paneer or this paneer kulcha or fabulous pizza with paneer .

Burger Story

As a south-indian we are used to idly/dosa for breakfast. McDonalds is how we got introduced to burgers. That aloo tikki burger, which was the only vegetarian option we used to get here surely make us crave and it used to be a regular meal when we go out.

But suddenly both my kids didn't want to eat out, specifically burgers and pizzas. They once saw the same cutlery and surface being used to handle both vegetarian and non-vegetarian food, they hated it. It is fascinating how when we have no other options, we explore and find ways to satiate our cravings, especially with food.

Burgers with paneer

Though they didn't want to eat out, but they still missed the burgers and pizzas, so i started making them at home. This capsicum and paneer burgers are a great hit with the boys. It was a curry masala sandwiched with toasted paneer between buns. 3-lentil tikki burger, sweet potato tikki burger are vegan tikki's paired with some delish sauce.

You just need to know your way in the kitchen, rest your imagination will take care to mix and match ingredients to create delightful food experience. Would you believe these poha patty burgers are made of upma and ragi flour, sandwiched with some carrot chutney and cheese to a hearty meal.

Today's Cauliflower Tikki Burgers

Coming to today's paneer burgers, these too are part of my search to make satiating vegetarian burgers.

  • The hearty paneer patties are loaded with vegetables and paneer. I have used only cauliflower and peas, you can add any veggies of your choice.
  • They are quick and easy to make. You can shape the patties ahead, as part of your weekly meal plan and fry and make burger whenever needed. Saves money and time.
  • If you want to make this vegan, then use well pressed, firm tofu instead of paneer. You can always use a creamy sauce with sesame or this red pepper & walnut hummus and omit the cheese slices.
  • Easy vegetarian protein and quick snack idea. These can be easily made for a crowd and you have a choice of sauces and toppings to assemble their own burgers.

Ingredients for Paneer Burgers

  • Vegetables : Cauliflower and frozen peas are the main vegetables used in the making of cauliflower paneer cutlets. You can also add carrots or add few broccoli too.
  • I have used frozen paneer, store bought in making these paneer patties. If you are vegan, use shredded tofu. Use well pressed firm tofu.
  • Spices : I have used green chilies, ginger along with red chili powder, coriander and cumin seeds.
Ingredients for making paneer cutlets
  • Flour : Helps in binding the vegetables together to form patties. I have used besan/gram flour and rice flour.
  • Greens : I have used fresh curry leaves, mint and coriander leaves in the cutlets.
  • In the Burger : I have used fresh cucumber slices, jalapenos, lettuce greens, cheese slices, tomato ketchup and vegan sriracha sauce and butter to toast.

How to make Cauliflower Paneer Burgers

Please check recipe card below for exact measurements of each ingredient used and also for the detailed instructions

  • Measure all ingredients and keep them on the counter at room temperature.
  • In a food processor jar, add cleaned cauliflower florets, frozen paneer, frozen peas, chilies, ginger, curry leaves and coriander leaves. Pulse it together to form a ground mix.
How to make cauliflower paneer burgers
  • To this now add besan, chili powder, salt and pounded coriander and cumin seeds to this and pulse again.
  • Remove this ground mix to a flat plate. Add rice flour and mix it well. Shape them into patties. Let it refrigerate for 15 minutes.
  • To air fry the cutlets, preheat the air fryer for 5 minutes at 200C. Arrange 6-8 cutlets in the air fryer bin, brush oil, cook at 200C for 12 minutes. Pause and open the tray, flip and brush oil the other side and continue cooking. Once done, they should be beautifully brown on both side. Remove and keep aside.
  • To pan fry, heat cast iron pan, add oil, pan fry 4 patties at a time. Flip and cook both sides until golden brown. Keep the flame medium cook.
How to make paneer burgers
  • To make the Burgers, Toast the burger buns, add a blob of ketchup, place a caulilflower paneer patty, add lettuce greens, cucumber slices, jalapenos, cheese slice and vegan sriracha sauce. Close the burger bun with other slice.
  • Toast the burger bun with butter on a cast iron pan. Keep the flame low and toast carefully.
  • Serve it warm and enjoy a hearty meal.

Ingredients

For Cauliflower paneer Cutlets (Makes 14)

  • 500 grams cauliflower florets
  • 120 grams paneer
  • ½ cup frozen green peas
  • 2 green chilies
  • ⅓ cup besan/chickpea flour/gram flour
  • 3 tablespoon rice flour/arisi maavu
  • 2 teaspoon red chili powder make it 3 teaspoon if you prefer more spice
  • 1 tablespoon coriander seeds/dhaniya
  • 1 teaspoon cumin seeds/jeera
  • few curry leaves
  • handful of fresh coriander leaves
  • handful of fresh mint leaves
  • 1-2 teaspoon salt or to taste

To Make Cauliflower Paneer Burger

  • Burger buns as needed
  • Lettuce greens
  • few jalapenos
  • Vegan sriracha sauce
  • Tomato ketchup
  • Butter for toasting the Burger
  • Cheese slices 1 for each burger

Instructions

  • Measure all ingredients and keep it ready on the kitchen counter. I have used store-bought frozen paneer. It has to be kept outside for 30 minutes at least to come to room temperature and thaw.
  • Clean the cauliflower florets and keep it ready. We are not blanching the florets, so pick and clean the florets for any worms.
  • I have used my food processor to mix the ingredients together. You can also use your normal mixie. But make sure you use the pulse mode.

Let's make Cauliflower Paneer Cutlet Mix

  • Into the food processor bowl, add the cauliflower florets, frozen peas, chilies ginger, all the greens. Pulse it together to form a uniform mix.
  • Once the veggies are all formed into a ground mix, add besan, red chili powder, pounded coriander and cumin seeds, turmeric powder and salt. Again pulse it together to form a mix.
  • Remove the ground mix onto a flat plate. Add rice flour to it and mix together
  • Shape the mix into roundels, i got around 14 patties. The number of patties depends on the size of the patty made .
  • Let the shaped patties sit in the refrigerator atleast for 15 minutes. At this stage, the patties can be frozen and left in the freezer for later use. Though i haven't personally tried .
  • While the patties are resting, clear the kitchen counter and then keep things needed to make the burgers ready.

Let's Air-fry the paneer patties

  • If you are planning to air fry the patties, then preheat the air fryer for 5 minutes. Grease the basket with oil or you can also use a liner. Then arrange around 6-8 patties in the air fryer basket, do not over crowd.
  • Use a pastry brush and brush oil on top the patties. Cook at 200C for 12 minutes. Stop and flip the patties around 6 minutes and brush the other side with oil and continue to cook the remaining time.
  • Once done, they should nicely browned on top. Remove and set aside to make burger. kids and husband preferred the air fried patties than the pan fried ones.

To Pan fry the cauliflower paneer patties

  • Heat a cast iron pan, add 1-2 tablespoon oil to the pan. Arrange 3-4 patties on the pan. Keep the heat to medium and cook them nicely on both sides until golden brown. Add oil when necessary.

Lets Make Cauliflower paneer burger

  • Toast the burger buns on the hot pan. Add a blob of ketchup spread, Place a caulifower paneer patty, top it with lettuce green, jalapenos, cucumber slices, cheese slice, add a blob of vegan sriracha sauce.
  • Close the burger bun. Toast it on the hot cast iron pan with butter on both side, for 1-2 minutes until the cheese melts. Serve the burgers warm and enjoy a hearty meal.

Store & Serving

  • The cooked cutlets can be refrigerated in an air-tight container for a day. I haven't tried more than this. Cooked cutlets can also be frozen for a month.
  • To warm the frozen cutlets, toast them in a hot cast iron pan straight from the freezer, flip and cook both sides until it becomes soft ,sizzling and serve hot.
  • Make the burgers fresh, if serving cutlets from the refrigerator, reheat it for 10-20 seconds in the microwave and serve it warm.

    Cauliflower paneer tikki for burgers is quite innovative. With shredded cauliflower, no could tell it had cauliflower in the tikki. I am going to be making these tikkis more often.

    Aww that is such a sad story when the boys saw the the cutlery and surface usage. This a fact that many non-veg places do not understand and hence we avoid it. But then it is nice to see you make these burgers at home. I have not made some since the girls are out but looking at these cutlets I made some for our dinner and we loved them.

    Wow Priya, I am in love with these cauliflower paneer burgers...making these in air fryer is an excellent idea..I am yet to try my hand at air fryer, though this came out good shallow frying too...enjoyed the recipe!

    Priya when my kids were young I would mince cauliflower, mix it with paneer for parathas. That way they had no idea they were eating cauliflower. Love this healthy, homemade burger idea. Something different from the usual potato,peas and carrot ones. Will have to try out these cauliflower paneer burgers.
