Instant Rasmalai

Traditional rasmalai means making chenna or paneer from scratch, shaping it into discs, and boiling those in sugar syrup before finally soaking them in reduced milk. It's a labor of love, but not something I can pull off when i m already overwhelmed with festive preparations.

Bread rasmalai solves that problem. Soft milk bread, cut into rounds, substitutes the chenna. Once it soaks up saffron scented reduced milk for a few minutes, the texture is soft enough that most people cannot tell the difference. It comes together in about half an hour, most of which is just the milk simmering on its own.

  • Simple Ingredients, milk, bread and sugar common pantry ingredients. saffron and nuts comes as part of garnish. Without saffron it would look pristine white, that works too.
  • Easy to make , no making of paneer, just reduce milk to kheer consistency.
  • Make ahead dessert , the rasa or the sweet milk can be made ahead and refrigerated.
  • Perfect festive dessert , makes a stunning dessert for holi, Diwali parties and family gatherings.

Tips for making bread rasmalai

  • Use full fat milk, When reduced it gives richer texture.
  • Keep the sweet milk chilled, bread rasmalai tastes much better when served cold. So, prepare the kheer ahead and refrigerate before assembling.
  • Cut the bread just before serving, freshly cut bread holds shape better when soaked in milk
  • Dont oversoak the bread , five minutes is enough for the bread to absorb the saffron milk, while still holding the shape.
  • I prefer milk bread, it has a soft texture and mild sweetness
  • Make it rich and royal, use brilliant garnishes like rose petals, chopped pistachios, crunchy nuts and make it rich treat.
  • Make it fun for kids, give them some fancy cookie cutters to shape the bread roundel on their own and drench it with rasa(sweet milk).

I always have a small gathering during festivities, especially during Diwali, Ganapati and Navaratri. Truly speaking it is those times i get to see many of my friends whom otherwise i message once a while.

Here is how i would go about planning a festive menu when i have my friends home.
Karamani vadai and Baris both make easy pick up snacks while people settle in. Serve them with some welcome drink like green grapes chia seeds drink or this cantaloupe drink. Keeps it fresh and light.

For something heartier, aloo palak and cauliflower tikka masala, fits right in on a festive table along with butter rotis. Mixed Vegetable Pulao or a simple green peas pulao along with some raita makes a lovely combo without needing much else on the side.

How to make bread rasmalai

Once the mains wind down, bring in the bread rasmalai, next to no bake mango cheesecake or some gulab jamun cheesecake for the festive finale.

I love packing some return favors. My goto are these eggless Coconut macaroons, sesame nuts ladoo or mawa gulab ladoo. Keeps the festive mood, and also easy to make for a crowd.

Ingredients

  • 6 slices of milk bread cut into roundels, each bread is cut into 2 roundels
  • 3.5 cups of full fat milk
  • cup sugar or 90 grams condensed milk
  • 2 generous pinch of saffron
  • 3 tablespoon of roughly chopped almonds
  • 3 tablespoon of roughly chopped cashewnuts
  • few pistachios sliced for garnishing

Instructions

  • Take milk in a heavy bottom pan, when it starts boiling, reduce the flame to simmer, add saffron to it. Keep stirring on and off. Let the milk boil and reduce to ¾ of its quantity.
  • Stir often and scratch the sides of the vessel and add the malai back to the milk. Keep the Flame Low, to avoid burning of milk.
  • Add Sugar/condensed milk, Stir well. After 10 minutes, add chopped nuts and stir. Let it sit on the stove for another 10 minutes. Take it off the stove. Refrigerate until serve time.
  • While Serving, Cut bread to desired shape using a Cookie Cutter. Place the slice in a bowl, Add the chilled milk on top. Let the bread slice soak in the milk for 5 minutes, Serve Chilled.

    I've not tried bread rasmalai but your recipe is tempting me to give it a try. It is such an easy recipe and good for parties. Can make the malai a day or two ahead.
