Chia Puddings for Breakfast
Chia seeds have quietly become a staple in my pantry. While most people enjoy them in sweet puddings or smoothies, I love experimenting with savory versions for breakfast.
Like many others, i too started with sweet versions of chia bowls. Orange & vanilla chia pudding, Strawberry chia pudding were my first trials. This Musk melon and mango chia pudding was my little fellas favorite.
All the above were delish. Everyone at home enjoyed them. However, I do not prefer sweet things for my breakfast. Blame my Indian genes, i need spicy, tangy deliciousness for breakfast.
This simple chia pudding with cucumber and carrots is light, refreshing and surprisingly filling. Instead of milk, this recipe uses mildly tangy buttermilk which pairs beautifully with the nutty chia seeds.
The chutney makes it more interesting, change your chutney and you will have a different flavor everytime. I have even had it with some chana masala, paneer masala, anything spicy works like magic.

Ingredients to Make Savory Chia for Breakfast
- Chia Seeds
- I have used buttermilk here, which is readily available in supermarkets here. You can blend greek yogurt and water to make a drinkable greek yogurt, for added protein.
- Veggies : I have used cucumbers and carrots. You can add your choice of veggies, some shredded beets, thrown in fresh pomegranate arils.
- Flavors : I have used green chutney and some salt here. You can add salt and simply do a tempering with mustard seeds, cumin and chilies for a kick.

I love a good breakfast who doesn't? Especially if you are someone who has an early dinner, you wake up hungry.
When both the boys were small, they loved a variety for breakfast. Most of the recipes in the blog is because of them, i cooked a storm. They used to enjoy potato latkes and quesadilla for their school box. On a lazy weekend something delish like this one pot lasagna ,
Now both are adults, Elder one is going to be 20 this June. Now they want to enjoy protein rich, fiber rich breakfast. I m happy that they watch what they eat, but also miss that small child!
If you have teens watching what they eat, try this avocado toast, rice & bean burrito. Elder fella enjoys overnight oats, this white chocolate raspberry overnight oats is his new favorite.
My mom who is 80 years old, loves her steamed breakfast. This Aval or Rice flakes steamed balls is a light breakfast. She also enjoys this soft poha dosa.
If you love like our savory chia pudding, you can try these chutneys to make them more interesting. Coconut & Carrot Chutney a gorgeous and colorful chuntey. Green mango chutney has that lip smacking tanginess and beautiful color. Orange peel chutney i would name this an exotic chutney.
How to make Chia Savory Pudding
- I usually soak the chia seeds overnight for my breakfast. Chia seeds needs to be soaked a minimum of 30 minutes.
- I prefer soaking it ovenight, helps to get my breakfast ready when i m hungry in the moring.
- For savory chia pudding, i soak the chia seeds in buttermilk. I haven't tried any vegan option for this savory pudding, will update once i try it.

- Once the chia is ready, all swelled, add green chutney to it, mix well.
- Top it with chopped veggies, i have used only carrots and cucumbers. Enjoy.
- If you dont have any chutney. Add salt and a tempering with a teaspoon of oil. Add ½ teaspoon of mustard seeds, cumin seeds and some chili for heat.
Enjoy this spicy and tangy savory chia pudding for a scrumptious and healthy breakfast. You can keep changing the chutney added the pudding to get a different flavor everytime.

Savory Chia Pudding | Indian Style with Buttermilk & Veggies
Ingredients
- 3 tablespoon chia seeds
- 1 cup buttermilk use ½ cup curd and ½ cup water
- ½ no carrot, thinly sliced into roundels or shredded
- ½ no cucumber, thinly sliced into roundels or as per choice
- 2 tablespoon mint chutney check recipe here
- salt to taste i never add
Instructions
- Soak chia seeds in buttermilk atleast 30 minutes ahead. I usually soak 4 hours minimum. I soak it around 7 in the morning and have it for breakfst around 10:30 or 11 am.
- Once the chia is ready, there is nothing more to do. Add mint chutney to the bowl, mix it well, add chopped cucumber and carrots to it. Mix well and enjoy.
