Our Love for Sandwiches

We love a good sandwich at home. Every weekend, my husband takes over the kitchen for breakfast. He is our sandwich master. Kids tell him what sandwich they want, sometimes he surprises them with his own.

Today's cheesy capsicum sandwich is his recipe. I rarely make sandwiches for the boys, but when I do, they love the banana honey walnut. This sweet, caramelized sandwich is my mother's favorite too. A fact made more interesting by her being an 83-year-old South Indian.

Since my elder fella started watching what is on his plate, he wants some protein in all of his meals. When it comes to sandwiches, they mostly become carb heavy. I try my best with good amount of cheese and veggies like this paneer burger, halloumi sandwich.

Today's Capsicum Cheese Sandwich

My husband's amazing cheese sandwich, a work in progress for like 3-4 years, is a total taste bomb! It has fresh bell peppers and almond crunch with a spice kick from black pepper and chili flakes.

He can make this sandwich even in his sleep. The boys have so much fun in the kitchen. They get excited when their dad announces "I m making sandwich for breakfast tomorrow". For me, a day off from the kitchen is music to my ears.

Expert Tips

  • I have used white bread for the sandwich. I would recommend using a multi-grain bread with seeded crust. The crusty bread makes this sandwich more hearty.
  • I have used only green bell pepper here. You can use colorful peppers and make it more attractive for the kids.
  • Almonds in the recipe is optional. You can make this cheesy sandwich nut-free too. If you prefer add some sunflower seeds or pumpkin seeds for extra crunch.
  • I have used processed cheese slice in this sandwich recipe. You can also use a mix of shredded mozzarella and cheddar for the cheese pull. Add some grated paneer or tofu for some extra protein.
  • If using shredded cheese, mix the chopped capsicum with cheese and the seasonings. Then continue with stuffing and toasting the sandwich.
  • For the spice i have used black pepper, chili flakes and salt. You can experiment with oregano, basil and mixed herbs. Or else add some garam masala and chat masala for a desi taste.

Ingredients to Make this Simple Bell Pepper Sandwich

  • Bread : I normally use White bread. You can go ahead and use bread of your choice.
  • Vegetable : The title is obvious, i have used green bell peppers to make this cheesy capsicum sandwich.
  • Cheese : We normally use Amul Processed cheese for all our sandwiches. You can use any cheese of your own.

  • Seasonings : This quick and easy bell pepper sandwich uses freshly crushed black pepper. Along with red chili flakes and a pinch of salt.
  • Fat : We love butter to toast our sandwiches. I sometimes use ghee too. If vegan, please use plant based butter.
  • Add-ons : My husband's signature add-on is thinly sliced almonds and few coriander leaves. Almond gives a nice crunch and coriander adds fresh flavor to the sandwich.

Instructions to Make Cheesy Bell Pepper Sandwich

  • Keep all necessary ingredients on the kitchen counter. Wash and chop the green bell pepper finely. Pound the black pepper. Slice the almonds thinly and keep it ready. Keep the cheese slices on the counter at least 15 minutes before making the sandwiches.
  • Heat a cast-iron pan in slow flame. Lets make an assembly line.

  • On a slice of bread, cheese slice first, then 2 tablespoon of finely chopped green pepper.
  • Now add the seasonings. It is usually a generous pinch of pounded black pepper, a pinch of chilli flakes, a sprinkle of salt.
  • Finally add few sliced almonds and few coriander leaves. Close it with another slice.
  • Toast it with butter golden on both sides. Serve it hot.

Can I pack this Sandwich for School box?

Yes you can pack this cheesy sandwich for school box. I have done it many times. Just cut the sandwich diagonally and pack it in an air-tight lunch box. I pack in Vaya Lunch box, which keeps the food warm for longer times.

How to Store Leftover Sandwich?

We always make 2-3 extra sandwiches. Let the sandwich cool down well. Store in an air-tight container. It can be left on the kitchen counter for 4-5 hours. If storing for more time, i would recommend refrigerating it.

How to serve cold sandwiches from refrigerator?

If storing the sandwiches in the refrigerator, then remove the required amount of sandwich and reheat it in the microwave for 20 seconds. Serve it warm.

What to serve with this Sandwich

You can make a breakfast spread with this sandwich as the main dish and some fresh juice on the side. Add some interesting spreads or sauces along to enjoy with the sandwich.

Serving Suggestions

This simple and easy capsicum sandwich can be made as part of a brunch party. Add another burger like this cauliflower paneer burger or make this aloo methi cutlet to the menu. Along with the cutlets, add some lettuce, boiled chickpeas, sweet corn etc. So the guests can make their own salad bowl.

Add some spreads like Beets labneh, roasted veggies salsa, bell pepper & walnut hummus. And a coriander chutney for the desi kick. Give them an choice to assemble their own sandwich or wraps with some bread or tortilla.

Add a juice table with some fresh juices, like strawberry aguafresca, cucumber mint cooler or this refreshing limonana. Even some lassi like Celery mint lassi, mango lassi or beets lassi would add some color the table.

Equipment

  • Large tava for toasting the sandwich

Ingredients

  • 1 large green capsicum chopped fine
  • 10 slices white bread
  • 5 slices Amul Cheese
  • 2 tablespoon black peppercorns pounded
  • 1 teaspoon red chili flakes
  • 3 tablespoon almond flakes
  • 50 grams butter
  • 2 teaspoon salt
  • few coriander leaves

Instructions

  • Keep all the ingredients ready on the counter. Wash and chop the capsicum finely. Pound the black pepper, slice the almonds and keep it ready. Heat a iron tava on a slow flame, for toasting the sandwiches.
  • On a slice of bread, place a slice of cheese, 1-2 tablespoon of finely chopped capsicum.
  • Next comes the seasonings, a generous pinch of black pepper powder, a dash of chili flakes and salt.
  • Sprinkle sliced almonds and few leaves of fresh coriander on top. Close the sandwich with another slice of bread. Continue this for the rest of the slice.
  • Toast the sandwiches with butter on both sides until golden brown. Be watchful of the flame. Keep it at medium and toast. Flip and cook on both sides.
  • Serve it hot straight from the hot tava. We enjoy it as such as the sandwich has got all the necessary flavors.
  • If necessary serve with some tomato ketchup on the side.
